2 small acorn squash, halved and seeded
1/2 cup water
1/2 pound ground beef
2 tablespoons chopped onion
2 tablespoons chopped celery
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/2 teaspoon rubbed sage
3/4 cup milk
1/2 cup cooked rice
1/4 cup shredded cheddar cheese

Steps:

  • Preheat oven to 375°. Invert squash in an 11 x 7-in. baking dish. Add water and cover with foil. Bake until tender, 50-60 minutes. , Meanwhile, cook beef, onion and celery over medium heat until no longer pink; drain. Stir in the flour, salt and sage until blended. Add milk. Bring to a boil. Cook and stir for 2 minutes or until thickened and bubbly. Stir in rice. , Transfer squash to a baking sheet. Fill cavity with meat mixture. Bake at 350° for 30 minutes. Remove from oven; sprinkle with cheese and bake 3-5 minutes longer or until cheese is melted.

2 large acorn squash, halved and seeded
1 cup water
3/4 pound ground beef
1 celery rib, chopped
1 small onion, chopped
1 medium tart apple, chopped
1 cup cooked rice
1/4 cup sunflower kernels
1 teaspoon curry powder
1 egg, beaten
5 teaspoons brown sugar, divided
1-1/4 teaspoons salt, divided
4 teaspoons butter

Steps:

  • Invert squash in two ungreased 13-in. x 9-in. baking dishes. Add water and cover with foil. Bake at 375° for 40-45 minutes or until tender. , Meanwhile, cook the beef, celery and onion over medium heat until meat is no longer pink and vegetables are tender; drain. Add the apple, rice, sunflower kernels and curry. Cook and stir until apple is tender. Remove from the heat. Stir in the egg, 1 teaspoon brown sugar and 3/4 teaspoon salt. , Place squash cut side up on a baking sheet. Place 1 teaspoon remaining brown sugar and 1 teaspoon butter in each half. Sprinkle with remaining salt. Fill with meat mixture. , Bake, uncovered, at 375° for 15-20 minutes or until heated through.

Delicious stuffed butternut squash dish that's full of flavor!

1 (2 pound) butternut squash
1 teaspoon olive oil
1 tablespoon olive oil
1 pound ground beef
1 onion, diced
1 apple - peeled, cored, and diced
3 cloves garlic, diced
2 tablespoons salted butter
2 tablespoons brown sugar
¼ cup crumbled goat cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Cut the butternut squash in half, lengthwise. Scoop out and throw away seeds. Brush the cut side of squash with 1 teaspoon oil. Place cut-side down onto a baking sheet and cover with aluminum foil.
  • Bake in the preheated oven until tender, about 30 minutes. Remove and let cool, 5 to 10 minutes. Leave the oven on.
  • Heat 1 tablespoon oil in a large saute pan or skillet over medium-high heat. Cook and stir ground beef in the hot oil until browned and crumbly, about 10 minutes. Add onion, apple, and garlic. Continue to cook, while stirring around, until vegetables are slightly soft, 5 to 10 minutes more.
  • Turn squash over and place cut-side up onto the baking pan. Fill the centers of the squash with beef mixture. Dot each with 1 tablespoon butter and sprinkle with 1 tablespoon brown sugar.
  • Bake, uncovered, in the preheated oven until brown sugar is golden brown, 15 to 25 minutes. Take out of the oven and sprinkle each half with goat cheese. Serve.

1 acorn squash
1/2 lb ground beef
2 tablespoons onions, chopped
2 tablespoons celery, chopped
2 tablespoons flour
1/4 teaspoon salt
1/2 teaspoon sage (to taste) or 1/2 teaspoon poultry seasoning (to taste)
3/4 cup milk
1/2 cup rice, cooked
2 tablespoons almonds, slivered (optional)
2 tablespoons green olives, sliced (optional)
1/4 cup cheddar cheese or 1/4 cup cheese, of choice

Steps:

  • Cut squash in half.
  • Discard seeds and sprinkle squash with a little salt.
  • Bake, cut side down in baking dish, at 350 degrees till tender, 45-50 minutes.
  • Cook beef, onion, and celery till meat is brown.
  • Drain off fat.
  • Stir in flour, salt and sage.
  • Add milk.
  • Cook and stir until thickened and bubbly.
  • Stir in rice, olives and almonds.
  • Turn squash cut side up in dish; fill.

1/2 cup cooked rice
2 tablespoons chopped fresh parsley
1 tablespoon orange juice concentrate
1 teaspoon brown sugar
1 teaspoon curry powder
1/2 teaspoon ground ginger
1/4 teaspoon salt

Steps:

  • Invert squash in a greased 15x10x1-in. baking pan. Bake, uncovered, at 350° for 35-45 minutes or until almost tender., Meanwhile, in a skillet, cook beef, onion and garlic over medium heat until meat is no longer pink and onion is tender; drain., Dissolve bouillon in water; add to skillet. 3 small acorn squash, halved and seeded
1/2 cup water
FILLING:
1 pound lean ground beef
1 large egg, beaten
1/2 cup Russian salad dressing
3/4 cup bread crumbs
1 medium onion, minced
1 tablespoon brown sugar
1 teaspoon lemon juice
3/4 teaspoon salt
GLAZE:
1/4 cup Russian salad dressing
1-1/2 teaspoons lemon juice
1-1/2 teaspoons brown sugar

Steps:

  • Place squash cut-side down in a roasting pan and pour water in pan. Bake at 350° for 30 minutes. , Meanwhile, in a medium bowl, combine filling ingredients. Remove squash from oven. 3 acorn squash, medium sized
1 lb ground beef
1 large sweet onion, minced
1 tablespoon garlic
1 teaspoon oregano
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
salt and pepper

Steps:

  • Cut your squash in half and take out the seeds. Then place on a roasting pan and bake at 375 degrees for 30 minutes. While the squash is baking - saute the onions and ground beef on medium heat with the other dry ingredients until browned. Once the squash is ready, stuff the squash with the beef filling and bake for another 15 minutes. Serve and enjoy!

Found this recipe in a very old cookbook. Somewhat tweaked this recipe, and have tried it. Worth trying.

3 small acorn squash, halved and seeded
1 egg, lightly beaten
1/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon beef bouillon granules
2 tablespoons boiling water
1/8 cup chopped onion
1/8 cup ground beef
2 tablespoons butter
1 cup sage seasoned stuffing mix

Steps:

  • Invert squash in a greased 15x10x1 baking pan.
  • Fill pan with hot water to a depth of 1/4 inch.
  • Bake uncovered at 400 degrees for 30 minutes, or until tender.
  • Cool, and when cool enough, to handle scoop out pulp, leaving a 1/4 inch shell. ( There should be about 3 cups).
  • Place shells cut side up in a greased 15x10x1 baking pan, and set aside.
  • In a large bowl, combine the pulp, egg, salt, and pepper.
  • Dissolve bouillon in the 2 tablespoons water, and add to squash mixture.
  • In a small saucepan, saute onion and beef in butter until tender, then stir in the stuffing mix.
  • Set aside 1/4 cup of this for topping, and add remaining stuffing mixture to the squash mixture.
  • Bake at uncovered at 400 degrees for 20 minutes, or until heated through.

1/4 cup celery, Chopped

3/4 cup rice, Cooked
1/4 cup colby or 1/4 cup cheddar cheese, Shredded

Steps:

  • Cut each squash in half; discard seeds.
  • Place cut side down in a 3 quart rectangular baking pan.
  • Bake in preheated 350 F oven 50-55 minutes or until tender.
  • Saute beef, onion and celery in a large frypan until meat is browned; drain off any fat. Blend in flour, salt and sage. Stir in milk.
  • Cook over medium heat, stirring constantly, until mixture just comes to a boil and thickens.
  • Stir in cooked rice. Turn squash cut side up in pan; fill squash cavities with equal amounts of meat mixture. Return to oven and bake an additional 30 minutes.
  • Top with cheese; bake 3 minutes longer.
