Zucchini Tomato Casserole with Ground Beef is a simple summer garden vegetable bake that is light and fresh without a heavy sauce to weigh you down. Our version features zucchini, onion, corn and tomatoes, but yours can be individualized to your own personal taste.

1/2 pound ground beef
salt and pepper, to taste
1 zucchini, sliced thin
2 Tablespoons onion, chopped
1/4 cup frozen corn
1-2 tomatoes, sliced thin
1 teaspoon sugar
1 Tablespoon dried oregano
1 cup shredded mozzarella cheese
1 Tablespoon bread crumbs

Steps:

  • Brown and drain ground beef. Season to taste with salt and pepper. Set aside.
  • In a 13 x 9 inch baking dish that has been sprayed with nonstick cooking spray layer sliced zucchini so that they are overlapping and covering the entire bottom of the pan.
  • Sprinkle with chopped onion and frozen corn. Arrange tomato slices over the casserole.
  • Sprinkle with sugar, salt, pepper and dried oregano.
  • Add the cooked and drained ground beef over the casserole. Top with shredded cheese and bread crumbs.
  • Bake in a preheated 400 degree F oven for 20- 25 minutes. The casserole is done with the zucchini is fork tender and the cheese is melted.

1 medium onion, chopped
1 small green pepper, chopped
2 teaspoons chili powder
3/4 teaspoon salt
1/4 teaspoon pepper
3 medium zucchini, cut into 3/4-inch cubes
2 large tomatoes, chopped
1/4 cup water
1 cup uncooked instant rice
1 cup shredded cheddar cheese

Steps:

  • In a large skillet, crumble beef and cook with onion and pepper over medium-high heat until no longer pink, 5-7 minutes; drain., Stir in seasonings, vegetables, water and rice; bring to a boil. Reduce heat; simmer, covered, until rice is tender, 10-15 minutes. Sprinkle with cheese. Remove from heat; let stand until cheese is melted.

1 pound lean ground beef
1 medium sweet onion, finely diced
1 (8 ounce) package sliced white mushrooms
1 (6.5 ounce) can tomato sauce
1 (6 ounce) can sliced black olives
2 cloves garlic, minced
1 (14.5 ounce) can Italian-style stewed tomatoes
salt and ground white pepper to taste
4 medium zucchini
1 (8 ounce) package shredded sharp Cheddar cheese

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Stir mushrooms, tomato sauce, olives, and garlic into the skillet. Crush stewed tomatoes into smaller pieces and add to the mixture. Season with salt and white pepper. Let simmer, uncovered, until liquid reduces, 20 to 30 minutes.

8 ounces extra-lean ground beef
4 ounces whole onion or 3 ounces chopped, ready-cut onion (3/4 cup)
1 pound ripe tomatoes
12 ounces new potatoes
1 pound zucchini
1 tablespoon no-salt-added tomato paste
1/4 teaspoon salt
Freshly ground black pepper to taste
Few sprigs fresh basil to yield 3 tablespoons chopped

Steps:

  • Heat nonstick skillet until it is hot; add beef, and saute over medium-high heat until beef browns, stirring to separate.
  • Chop whole onion, and when beef is cooked, push it to the side of the pan and saute the onion over medium heat until it softens, just a couple of minutes.
  • Wash, trim and coarsely chop tomatoes, and add to the pan.
  • Scrub potatoes, cut into 1/4-inch dice and add to pan. Cover, and cook over medium-low heat.
  • Meanwhile scrub, trim and cut zucchini into 1/4-inch rounds, and add to pan along with the tomato paste with salt and pepper.
  • Wash and chop basil. A couple of minutes before vegetables are tender but still firm, stir in basil and finish cooking.

The recipe originally called for cucumbers instead of zucchini; somehow I bought the zucchinis instead (I know, I know...) and I loved the end result, so here it is! The directions are a little vague, but I am a beginner cook and managed just fine. Enjoy over rice, with Sriracha.

4 zucchini, thinly sliced
1/3 lb lean beef (julienned or thinly sliced)
1 teaspoon salt
1 tablespoon sesame oil or 1 tablespoon other oil
1/4 teaspoon crushed garlic
salt and pepper, to taste
1 tablespoon finely chopped green onion
1 tablespoon toasted sesame seeds
1 teaspoon sesame oil
1/2 teaspoon soy sauce
1/2 teaspoon ground red chili pepper
1/4 teaspoon salt
shredded chili pepper, to garnish

Steps:

  • Heat oil. Quickly stir-fry beef over high, and season with garlic, salt and pepper. Remove from pan/wok with a slotted spoon and set aside.
  • Add zucchini and stir-fry briefly. Season with green onion, sesame seeds and oil, soy sauce, chili pepper, and salt.
  • Return beef to pan, stir once to combine, and transfer to serving plate. Garnish with shredded chili.
