1 cup halved fresh mushrooms
2 celery ribs, thinly sliced
1 medium sweet yellow pepper, cut into 1-inch pieces
1 medium onion, chopped
1 tablespoon olive oil
2 cans (14-1/2 ounces each) fire-roasted diced tomatoes, undrained
2 cups cubed cooked beef brisket
1 cup beef broth
3/4 cup uncooked orzo pasta
1/2 cup barbecue sauce
1 teaspoon dried oregano

Steps:

  • Saute the mushrooms, celery, pepper and onion in oil in a Dutch oven until tender. Stir in the remaining ingredients. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until pasta is tender.

1 package (16 ounces) orzo pasta
1 medium onion, finely chopped
2 tablespoons olive oil
4 garlic cloves, minced
2 cups (8 ounces) crumbled feta cheese, divided
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 jar (7-1/2 ounces) roasted sweet red peppers, drained and chopped
1 small yellow summer squash, finely chopped
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In a large saucepan, bring broth to a boil. Stir in orzo; cook over medium heat for 6-8 minutes or until tender. Remove from the heat., In a small skillet, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir into orzo mixture. Stir in 1 cup cheese, spinach, red peppers, squash, salt and pepper., Transfer to a greased 13-in. x 9-in. baking dish; sprinkle with remaining cheese. Bake, uncovered, at 350° for 20-25 minutes or until heated through.

½ pint cherry tomatoes, halved
½ cup diced red onion
1 cup diced cucumber
1 cup pitted Mediterranean olives, cut in half
1 cup finely diced Asiago cheese

½ cup extra-virgin olive oil
½ cup red wine vinegar
½ lemon, juiced
1 teaspoon salt
½ teaspoon ground black pepper
¼ cup chopped fresh basil
2 tablespoons chopped fresh parsley

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until tender yet firm to the bite, about 9 minutes. Drain well. Rinse with cold water and drain well again.

1 medium celery stalk, sliced (1/2 cup)
1/2 cup uncooked orzo or rosamarina pasta

1/4 teaspoon ground red pepper (cayenne)
1/2 cup plain low-fat yogurt

Steps:

  • Cook beef in 10-inch skillet over medium-high about 6 minutes, stirring frequently, until brown; drain.

1/2 teaspoon salt
1 lb lean ground beef
1 onion, finely chopped
2 -4 garlic cloves, minced
1 (14 1/2 ounce) can tomatoes
1 1/2 cups beef broth
1 teaspoon minced fresh oregano or 1/2 teaspoon crumbled dried oregano
1/4 teaspoon pepper
8 ounces dried orzo pasta (1 cup)
1 (10 ounce) package frozen chopped spinach, thawed
1/2-3/4 cup grated parmesan cheese

Steps:

  • Sprinkle salt into a 10 to 12 inch frying pan over medium-high heat. Crumble beef into pan and cook, stirring often, until meat begins to brown, 3 to 5 minutes. Reduce heat to medium, stir in onion, and continue to cook, stirring, until onion is soft but not brown, about 5 minutes. Spoon off and discard excess fat.
  • Add garlic, tomatoes (break them up with a spoon) and their liquid, broth, oregano, and pepper. Bring mixture to a boil then stir in pasta. Reduce heat, cover and simmer gently until pasta is tender to bite, 10 to 12 minutes.
  • Meanwhile, squeeze as much liquid as possible from spinach. Stir spinach into pasta mixture just until heated through. Serve with cheese to add to taste.
