1 pound lean ground beef (90% lean)
1 small onion, chopped
1/2 cup chopped green pepper
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed cream of mushroom soup, undiluted
1/4 cup grated Parmesan cheese
1 can (4 ounces) mushroom stems and pieces, drained
1 jar (2 ounces) diced pimientos, drained
1 tablespoon butter, melted
1 teaspoon dried thyme
1/4 teaspoon salt

Steps:

  • Cook noodles according to package directions; drain. Meanwhile, in a nonstick skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. , In a large bowl, combine the soup, cheese, mushrooms, pimientos, butter, thyme and salt. Stir in the noodles and beef mixture., Transfer to a 2-qt. baking dish coated with cooking spray. Cover and bake at 350° for 25-30 minutes or until heated through.

It's a ground beef casserole that combines egg noodles, some sherry, and cheese in a tomato sauce base. To reduce the fat content, you may use reduced fat cheese, cut green beans, and 93% lean meat. Also, you may adjust the amount of sherry to taste.

6 ounces egg noodles
1 pound ground beef
2 (10.75 ounce) cans condensed tomato soup
2 tablespoons Worcestershire sauce
2 cloves garlic, minced
½ pound shredded Cheddar cheese
¼ cup dry sherry
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Cook the noodles according to package directions.
  • Brown the ground beef in a large skillet over medium high heat. Stir in the tomato soup, Worcestershire sauce and garlic, bring to a boil, reduce heat to low and let simmer.
  • When noodles are done, stir them and the cheese into the simmering sauce until cheese is melted. Stir the sherry into the sauce and stir for 1 minute, then place in a 2 quart casserole dish and sprinkle with the Parmesan cheese to taste.
  • Bake in preheated oven for 30 minutes.

8 oz uncooked farfalle pasta (about 2 1/2 cups)
1 lb ground beef
1 can (15 oz) Muir Glen™ organic tomato sauce
1/2 teaspoon garlic salt
1/4 teaspoon black pepper
1 cup sour cream
1 cup cottage cheese
1/2 cup shredded Parmesan cheese
3/4 cup sliced green onions
1 1/2 cups shredded Cheddar cheese (12 oz)

Steps:

  • Heat oven to 350°F. Spray 13x9-inch baking dish or 2 1/2 to 3-quart casserole with cooking spray. Cook pasta until al dente, about 11 minutes; drain, and set aside.
  • Meanwhile, in 10-inch nonstick skillet, cook beef over medium-high heat 5 to 7 minutes, stirring frequently, until no longer pink; drain. Stir in tomato sauce, garlic salt and pepper; cover and simmer 2 to 3 minutes or until slightly thickened.
  • In large bowl, mix sour cream, cottage cheese, Parmesan cheese and 1/2 cup of the green onions; stir in cooked pasta.
  • Spoon half of the pasta mixture into baking dish. Top with half of the beef mixture and 3/4 cup of the Cheddar cheese. Repeat with pasta mixture, beef mixture and remaining 3/4 cup Cheddar cheese. Bake uncovered 25 to 30 minutes or until mixture is thoroughly heated and cheese is melted. Top with remaining 1/4 cup green onions, and serve.

1 6-ounce cans tomato paste
1 small jar pizza sauce, about 14 oz.
1 Tbsp. minced fresh basil, or 1 tsp. dried

Steps:

  • In a small mixing bowl, combine the sour cream, cottage cheese, onion, and parsley; set aside. In a large saucepan, cook the noodles according to the package directions. Drain and set aside. Heat the oil in a large saute pan, over medium heat, and add the ground beef, stirring now and then until the meat is no longer pink. Drain off all liquid and discard. We like extreme heat so I most always add in two large chopped jalapeno peppers in with the ground beef mixture. You can use grated mozzeralla cheese in place of Monterey Jack for the top or you omit the cheese completely and just top with Parmesan. Make certain to hand-squeeze out any excess moisture from the spinach, or the sour cream will become to runny.

1 lb lean ground beef
2 tablespoons italian seasoning
16 ounces diced tomatoes, drained
12 ounces wide egg noodles
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
8 ounces cream cheese, cubed
4 ounces cottage cheese
8 ounces sour cream
8 ounces cheddar cheese, shredded

Steps:

  • In a large skillet sauté ground beef with Italian seasoning. Drain, add the chopped tomatoes and set aside.
  • Begin cooking the egg noodles. While egg noodles are cooking, place in a large bowl the butter, salt, pepper, cream cheese, cottage cheese, and sour cream. Set aside.
  • As soon as the noodles are cooked, drain in colander, shake water out, and immediately pour into the bowl with cheese mixture. Mix to coat noodles and melt cheese.
  • Grease or spray a 9x13 deep dish lasagne pan. place half of noodle mixture into pan. Place 2/3 of the beef mixture on top. Sprinkle half the cheddar on top.
  • Add remaining noodle mixture. Finally, add remaining beef mixture and sprinkle with remaining cheddar. Bake in 350°F oven for 45 minutes.

1 1/4 teaspoons dry mustard
1 teaspoon black pepper
1 (12 ounce) bag medium egg noodles
7 teaspoons vegetable oil, in all
1 1/2 lbs ground sirloin
4 ounces cream cheese
1/2 cup sour cream
1 tablespoon fresh lime juice
1 cup chopped green onion (tops and bottoms)
1/4 cup chopped fresh parsley
1 1/2 cups chopped onions
1 cup chopped celery
1 teaspoon minced fresh garlic
2 1/2 cups beef stock, in all
4 tablespoons unsalted butter
1 (8 ounce) can tomato sauce
1 cup grated monterey jack cheese
1 cup grated sharp cheddar cheese

Steps:

  • Preheat oven to 350°.
  • Combine the seasoning mix ingredients thoroughly in a small bowl.
  • Makes 1/4 cup plus 1-1/4 teaspoon.
  • Cook the noodles al dente according to package directions.
  • Rinse under hot water, then cold water, and drain.
  • Pour 1 teaspoon of the oil into your hands and rub into the noodles.
  • Sprinkle 2 teaspoons of the seasoning mix over the noodles and blend well with your hands.
  • Place the ground sirloin in a bowl, add 1 tablespoon plus 1 teaspoon of the seasoning mix, and blend it in well with your hands.
  • Combine the cream cheese, sour cream, line juice, green onions and parsley in a bowl and mix thoroughly with a spoon until completely blended.
  • Heat the remaining 2 tablespoons oil in a 10-inch skillet over high heat until very hot, about 4 minutes.
  • Add the onions, celery, garlic and the remaining seasoning mix and cook, stirring occasionally, until vegetables are golden brown and sticking to the bottom of the skillet, about 7 to 8 minutes.
  • Add 1/2 of the cup of beef stock, scrape the crust from the bottom of the skillet, and cook until another crust forms on the skillet bottom, about 3 minutes.
  • Add another 1/2 cup stock, scrape up the crust on the skillet bottom, and cook 2 minutes.
  • Add the seasoned meat, breaking it up with a spoon and cook, scraping occasionally, until most of the liquid has evaporated, about 7 to 9 minutes.
  • (Be careful not to let the meat get too dry.) Add the butter and cook 3 to 5 minutes, without stirring, to allow another crust to form.
  • Stir in the tomato sauce, scrape the bottom of the skillet, and cook 3 to 4 minutes.
  • Add the remaining 1-1/2 cups stock and bring to a boil.
  • Remove from the heat and stir in the sour cream mixture until completely blended.
  • Spread half the seasoned noodles in the bottom of a deep 10-inch square casserole.
  • Pour about 3 cups of the meat mixture over the noodles and sprinkle with the Monterey Jack cheese.
  • Add the remaining noodles, cover with the remaining meat mixture, and sprinkle the Cheddar cheese, evenly over the top.
  • Bake, uncovered, 25 to 30 minutes, or until brown and bubbly.
  • Spoon up and serve with a crisp salad.

1 large onion, chopped

Steps:

2 1/2-3 cups diced corned beef, about 12 ounces

3 tablespoons all-purpose flour
1 cup chicken broth
1 cup milk (low fat is fine)
1/8 teaspoon black pepper
1/4 teaspoon dried leaf thyme
2 cups shredded sharp cheddar cheese
1/2 teaspoon salt (to taste)
1/2-1 cup French fried onion rings (optional) or 1/2-1 cup buttered bread crumb (optional)

Steps:

  • Using a large saucepan or stock pot, cook noodles following package directions; drain well. Put noodles back in the pot and set aside.
  • In a medium saucepan, melt 2 tablespoons of butter over medium-low heat; cook onion for 2 minutes. Add corned beef and cook until lightly browned. With a slotted spoon, transfer beef mixture to the pot with noodles. Add the squeezed spinach to the pot and set aside.
  • In the same medium saucepan, melt remaining 2 tablespoons butter over medium-low heat; stir in flour until well blended and bubbly. Stir in chicken broth and milk. 1 lb ground beef
1 onion, chopped
1 garlic clove, minced
1 cup sliced mushrooms
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon italian seasoning
1 (14 ounce) can tomato sauce
1 (14 ounce) can tomatoes
1 (4 ounce) package cream cheese, softened
1 cup sour cream
1/4 cup green onion, chopped
8 ounces medium noodles, uncooked
1 tablespoon butter
2 cups mozzarella cheese, shredded
1/4 cup cheddar cheese, shredded
1/4 cup parmesan cheese, grated

Steps:

  • Brown ground beef with onion and garlic. Drain excess fat.
  • Stir in mushrooms, seasonings, tomato sauce and tomatoes. Cover and simmer about 20 minutes. Taste and adjust seasoning.
  • Beat together cream cheese, sour cream and green onions.
  • Cook noodles in boiling salted water until almost tender. Drain and toss with butter. In a buttered 9 x 13 baking dish, spread about half the noodles. Top with half of the meat sauce, then half of the cream cheese mixture.
  • Repeat layers.
  • Sprinkle cheese over top.
  • Bake at 350° for 45 minutes or until bubbling hot.
