If your family likes gyros as much as mine, they'll love this easy version that's made with ground beef instead of lamb. I found the recipe in a newspaper and adapted it to fit our tastes. 1 cup plain yogurt
1/3 cup chopped seeded cucumber
2 tablespoons finely chopped onion
1 garlic clove, minced
1 teaspoon sugar
GYROS:
1-1/2 teaspoons dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt, optional
3/4 teaspoon pepper
1 pound ground beef
4 pita pocket halves
3 cups shredded lettuce
1 large tomato, chopped
1 small onion, sliced

Steps:

  • In a small bowl, combine the first 5 ingredients. Chill. In a large bowl, combine seasonings; crumble beef over mixture and mix lightly but thoroughly. Shape into 4 patties. , Grill, covered, over medium heat or broil 4 in. from the heat for 6-7 minutes on each side or until a thermometer reads 160°. Cut patties into thin slices; stuff into pita halves. Add lettuce, tomato and onion. Serve with the yogurt sauce.

1 cup ranch salad dressing
1/2 cup chopped seeded peeled cucumber
1 pound beef top sirloin steak, cut into thin strips
2 tablespoons olive oil
5 whole pita breads, warmed
1 medium tomato, chopped
1 can (2-1/4 ounces) sliced ripe olives, drained
1/2 small onion, thinly sliced
1 cup crumbled feta cheese
2-1/2 cups shredded lettuce

  • In a small bowl, combine salad dressing and cucumber; set aside. In a large skillet, cook beef in oil over medium heat until no longer pink. , Layer half of each pita with steak, tomato, olives, onion, cheese, lettuce and dressing mixture. Fold each pita over filling; secure with toothpicks.

1/3 cup chopped seeded cucumber (thinly slice remainder of cucumber)
2 tablespoons finely chopped onions

1 1/2 teaspoons dried oregano
1 teaspoon garlic powder
1 teaspoon onion powder

Steps:

  • In a bowl, combine first 5 ingredients.
  • Cover and refrigerate. (If possible overnight).

  • Mix well.
  • Shape into 4 patties.
  • Grill, covered, (you can also use a toaster oven or broil these) over medium to high heat for 10 to 12 minutes or until meat is no longer pink, turning once.
  • Cut patties into thin slices.

I wanted gyro meat that tasted like the kind in the Greek restaurants. I wound up combining ingredients from 3 different recipes and was amazed at the awesome result! It smelled so good even before it hit the grill.The "easy" part is that you can just throw this on the grill, broil, bake or pan fry it. It's also easy because I buy the Tzatziki sauce, Quinoa tabouli, spanikopita appetizers and hummus at Costco and I have a ready-made meal for my family or a larger crowd. I also serve with split Pita breads and we make our own gyros with sliced garden tomato and sweet onion.

1 lb ground beef
2 green onions, finely chopped

2 lb ground beef, *or for extra flavor sub 1 lb. with mild italian sausage!
3-4 clove garlic, minced
1 tsp salt
1 tsp dried oregeno
1/2 tsp pepper
TZATZIKI SAUCE:
1 c sour cream (i only use daisy brand)
1/3 c plain greek yogurt (can use all sour cream if desired)
2/3 c cucumber, chopped
1/3 c onion, finely chopped
1 Tbsp fresh parsley, finely chopped
1 tsp lemon juice (concentrate ok)
ADDITIONAL INGREDIENTS AND TOPPINGS:
8 pita bread rounds
sliced tomatoes
thinly sliced onions
shredded lettuce

minced fresh parsley or cilantro

1 small red onion, chopped
1 tsp greek seasoning
1/2 tsp pepper
1/2 tsp salt, divided
1 cucumber, peeled, seeded, and grated
8 oz container sour cream or plain greek yogurt
1 clove garlic, minced
1 Tbsp fresh dill, chopped
6 pita pockets
1 tomato, chopped
4 oz crumbled feta cheese
lettuce, shredded

  • 1. Cook ground beef, onion, greek seasoning, pepper, and 1/4 tsp. salt in a large skillet over medium-high heat, stirring often, 7 to 9 minutes or until beef crumbles and is no longer pink; drain well on paper towels.
  • 2. Stir together cucumber, sour cream, dill, garlic and remaining 1/4 tsp. salt. (I often make this ahead of time and keep it in the refrigerator, as it allows for the flavors to infuse together.)

8 Large Pita Bread
1 bunch Watercress (cleaned, pull the delicate stems and leaves from the roots)
1 bunch Mint (pull off leaves)
2 cups Cherry Tomatoes (cut in half)
1/2 cup Yogurt Marinade: Greek Yogurt
1/2 cup Olive Oil
1/2 cup Red Wine Vinegar
2 tablespoons Oregano Leaves (fresh, chopped)
5 Garlic Cloves (chopped)
2 teaspoons Kosher Salt
1 teaspoon Black Pepper
1 1/2 cup Tzatziki Sauce: Greek Yogurt
4 Garlic Cloves (minced fine)
1 Lemon (zest and juice)
2 tablespoons Olive Oil
1 tablespoon Prepared Horseradish
1 Cucumber (peeled and grated on large holes of a cheese grater)
1 Grilled Onions: Large Yellow Onion
1 Large Red Onion

Steps:

  • PREPARING THE MARINADE: Combine the yogurt, olive oil, red wine vinegar, chopped oregano, chopped garlic, kosher salt, and black pepper in a blender. Blend until smooth. This is your yogurt marinade. Put the Fullblood Wagyu underblade roast in a Ziploc bag, and pour the yogurt marinade over the roast. Seal the bag, and place it in the refrigerator for 12 to 24 hours
  • PREPARING THE FULLBLOOD WAGYU UNDERBLADE ROAST: Pull the marinated Fullblood Wagyu roast from the refrigerator, and allow it to sit at room temperature for 1 hour before cooking. Preheat the oven to 450°F. Remove the roast from the marinade, and let the marinade drain off (do not rinse the marinade off). Place the roast on a roasting rack. Cook at 450°F for 20 minutes. Reduce the temperature to 325°F, and roast for 50 minutes (for a rare finish) or 75 minutes (for a well done finish). While the roast is in the oven, make the tzatziki sauce. Check the roast with a probe thermometer for a temperature of 120°F to 125°F (for a medium-rare finish).
  • PREPARING THE TZATZIKI SAUCE: Mix all of the sauce ingredients (Greek yogurt, minced garlic, lemon zest and juice, olive oil, horseradish, and grated cucumber) in a medium bowl. Place the bowl of sauce in the refrigerator until ready to use.
  • PREPARING THE GRILLED ONIONS AND PITA BREAD: Cut off both ends of the onions, and remove the peel. Cut the onions into half-inch rings. Heat a BBQ or gas grill on medium-high heat. Grill the onions until they have wilted and have grill marks on them. Set aside. Grill the pita bread on the hot grill for 1 minute per side (just to get the grill marks on the bread). Don't leave them on the grill too long, or they will be tough.
  • FINAL STEPS: Remove the Fullblood Wagyu underblade roast from the oven, and let it rest for 10 to 15 minutes. Slice the roast against the grain into thin, 1-inch strips. Serve warm on the grilled pita bread with the tzatziki sauce, grilled onions, watercress, mint leaves, and cherry tomatoes. Enjoy!

2 cloves garlic, minced
1 teaspoon dried oregano
3 teaspoons olive oil
crumbled feta cheese

very thinly sliced red onion
1/2 cup prepared cucumber ranch dressing

Steps:

  • Stack beef steaks; cut lengthwise in half, then crosswise into 1-inch wide strips.
  • Toss with garlic and oregano.
  • Heat 2 teaspoons oil in large nonstick skillet over medium-high heat until hot.
  • Add 1/2 of beef; stir-fry 1 minute or until outside surface of beef is no longer pink.
