For a meal for the whole family, try this beef macaroni recipe! The sour cream and cheese elevate this dish by adding a creaminess and tart flavor to it.

1 lb ground beef
3 cups cooked & cooled macaroni pasta
3 oz diced yellow onions
15 oz tomato sauce
2 tsp minced garlic
½ tsp ground black pepper
1 cup or cottage cheese cream cheese
1 cup grated cheddar cheese
1 cup grated monterey jack cheese
1 cup grated mozzarella cheese
1 cup sour cream
½ cup grated or powdered parmesan cheese
chopped parsley

Steps:

  • Preheat the oven to 350 degrees F & grease a baking casserole of your choice.
  • In a wide skillet over medium heat, saute the ground beef until caramelized, roughly 5 to 8 minutes. Drain any excess oils.
  • Add the onions & garlic. Saute until translucent.
  • Add tomato sauce & pepper. Stir to combine & bring mixture to a brief simmer for another 5 minutes. Set aside.
  • In a large mixing bowl, combine sour cream, parmesan cheese, & cottage or cream cheese. Whisk until evenly incorporated.
  • Fold the pasta into your cheese mixture until evenly incorporated.
  • Place half of the pasta mixture into your greased baking dish, then layer with half of the beef mixture.
  • Sprinkle with half each of cheddar, mozzarella, & Monterey Jack cheeses. Repeat until you have 2 layers of pasta, beef, & ending with cheeses.
  • Bake for roughly 30 minutes or until cheese has melted & turned golden brown.
  • Once baked, cool the casserole briefly onto cooling racks. Portion accordingly, garnish with roughly 1 tsp parsley for the entire casserole, & serve.

Recipe slightly adapted from the Better Homes & Gardens Casserole Cookbook published by Meredith in 1968. Double it to feed a crowd. This casserole also freezes very well.

Number Of Ingredients 10

1 pound ground beef (80/20 is perfect for this)
1-2 Tablespoons olive oil if necessary, (depends on how fatty your meat is)
1 small-to-medium onion,diced (about 3/4 cup)
3 cloves minced garlic
kosher salt and freshly ground black pepper, to taste
3/4 teaspoon Italian seasoning blend of your choice
1 28 oz can whole tomatoes and their juice
3 oz softened cream cheese, (eyeballing it is fine)
1/2-3/4 cup sour cream, (ditto--a huge serving spoonful will do nicely)
1 pound pasta short pasta of your choice, cooked to al dente (elbows, shells, penne, fusilli, rigatoni, wagon wheels, radiatore, cavatappi, etc)

Steps:

  • Place the ground beef in a heavy skillet to brown, breaking it up with a spatula. If the meat is on the lean side, add a tablespoon or two of olive oil to the pan.
  • Once the meat is about halfway done (some will be browned and some still pink or red), add the onion and garlic.
  • Season liberally with salt and pepper.
  • Cook until onions and garlic are softened and meat is completely cooked.
  • Add the tomatoes and softened cream cheese
  • Stir around so the cream cheese melts evenly into the tomatoes.
  • Let simmer for about ten minutes or so.
  • With the heat on low, stir in the sour cream.
  • Taste and adjust the seasonings.
  • Fold the sauce into your freshly drained pasta.
  • Serve as-is or spoon into individual ramekins or a big old casserole.
  • Bake at 350F until the pasta on top has a bit of crunch to it and the casserole is bubbling all around the sides.
  • Let sit for ten minutes before serving.
  • Enjoy!

This Cheesy Beef & Macaroni Casserole is an easy to put together and it boasts big flavor! We've made this recipe countless times and everyone in my family raves about it!

1 pound dry macaroni noodles (or similar)
1 pound lean ground beef
2 cloves garlic (minced)
1 cup diced onion
1 cup diced green pepper
1 can crushed tomatoes (28 oz)
½ cup tomato sauce
3-4 tablespoons tomato paste
½ teaspoon dry basil
salt & pepper to taste
3 cups shredded cheddar cheese (divided)
¼ cup freshly shredded parmesan cheese
3 tablespoons chopped fresh parsley (divided)

Steps:

  • Preheat oven to 375°F.
  • Cook noodles for ¾ of time according to package. (My noodles said 9 minutes so I cooked them for 6). Drain and rinse under cold water.
  • Meanwhile, brown beef, garlic & onion in a frying pan. Drain.
  • Combine green peppers, beef, noodles, tomatoes, tomato sauce & paste, basil, salt & pepper, 1 cup of cheddar cheese, 2 tablespoons fresh parsley. Pour into a 9×13 casserole dish.
  • Combine remaining cheeses & 1 tablespoon of parsley. Sprinkle on top of casserole. Bake uncovered for 35-40 minutes or until bubbly and cheese is browned!

As the title suggests, this was my Grandmother's recipe. I've tweaked the amount of cheese and sour cream depending on what I've got in the fridge and it always turns out great! My mother has suggested this was made up as a way to use up ingredients in the fridge.

1 pound ground beef
1 teaspoon white sugar
1 teaspoon salt
1 teaspoon garlic salt
2 (15 ounce) cans tomato sauce
1 (8 ounce) package egg noodles
1 cup sour cream
1 (3 ounce) package cream cheese
1 large white onion, diced
½ cup shredded sharp Cheddar cheese, or more to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix sugar, salt, garlic salt and tomato sauce into ground beef; simmer until flavors blend, about 20 minutes. Remove from heat, cover skillet, and cool to room temperature.
  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain and cool slightly.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
  • Mix sour cream, cream cheese, and onion in a bowl.
  • Scoop half the noodles into the prepared casserole dish; top with half the sour cream mixture. Spoon half the ground beef mixture atop sour cream layer. Repeat layering with remaining ingredients. Top casserole with Cheddar cheese.

2 cups (8 ounces) uncooked elbow macaroni
2 pounds ground beef
1 large onion, chopped

1 can (16 ounces) kidney beans, rinsed and drained
1 can (6 ounces) tomato paste
1 can (4 ounces) chopped green chiles, drained
