This cheesy Doritos Casserole is made with ground beef, tomatoes, chiles, sour cream and much more! It's an easy taco casserole recipe that's full of savory goodness.

2 tablespoons olive oil
1 cup diced yellow onion, about 1 medium onion
2 cloves garlic, minced
1 pound lean ground beef
1 package low- sodium taco seasoning
1 (10- ounce) can Ro-tel tomatoes and chiles
1/2 cup salsa
1 cup sour cream
1 1/2 cups grated cheddar cheese
1 (9.75- ounce) bag Doritos, very coarsely crushed
Optional garnish - diced tomatoes, cilantro, jalapeños, avocado

Steps:

  • Preheat the oven to 350°F.
  • In a large skillet, heat oil over medium heat. Add in the onions and cook for 5 minutes. Add in the garlic and the ground beef and cook until the meat is no longer pink, breaking up the clumps with a wooden spoon.
  • Add in the taco seasoning, Ro-tel, and salsa. Cook for 5 minutes, stirring occasionally.
  • Stir in the sour cream evenly and then remove the mixture from the heat.
  • Pour half of the meat mixture into the bottom of a 9×13 pan. Top with 1/2- cup of the cheese and half of the Doritos. Repeat the process with the remaining ingredients, topping with the remaining 1/2- cup of the cheese.
  • Cover the pan with foil and bake for 20 minutes.
  • Remove the foil and bake for 10 more minutes.
  • Garnish as desired and serve warm.

14 ounce "party size" bag of Nacho Cheese Doritos
1½-2 pounds ground beef
1 10¾ ounce can of cheddar cheese soup
1 10¾ ounce can of cream of chicken soup
1 12 ounce can of evaporated milk
1 4 ounce small can of diced green chilies
2-3 cups shredded Mexican cheese
1 packet Taco seasoning (optional)
Sour cream
Diced green onion
Sliced cherry tomatoes
Sliced Avocado or guacamole
Salsa

Steps:

  • Pre-heat oven to 350°
  • In a large pan, brown the ground beef and then drain the fat. If you plan to season the meat with taco seasoning, now's the time to do it:)
  • Add the 2 soups, evaporated milk, and diced green chilies to the ground beef
  • Cook while stirring over medium heat until it is bubbly
  • Prepare a baking dish with non-stick spray
  • Add 1/2 the bag of chips to the bottom of the baking dish. Crumble them a little bit as pictured (not too much!)
  • Scoop 1/2 of the meat mixture over the chips
  • Add a layer of 1 cup of shredded cheese on top. Add additional cheese if needed or desired.
  • Repeat the layers of chips, meat, and cheese with the remaining ingredients
  • Bake for about 20 minutes or until the cheese is melted and everything is heated through

1 Large bag nacho flavored Doritos
1 1/2 pound lean ground beef
1/4 cup onion
1 packet taco seasoning
1 cup water
1 cup salsa verde
1 can cream of chicken soup
1 cup sour cream
1 cup shredded cheddar
1 cup colby jack cheese

Steps:

  • Preheat oven to 350 degrees.
  • In a large skillet brown ground beef and onions until cooked through. Drain off fat.
  • Put back into skillet and sprinkle in packet of taco seasoning and coat ground beef. Add in water and stir until combined. Cook until sauce has thickened. About 3 minutes. Turn off heat.
  • Add in salsa, soup, and sour cream and mix until combined.
  • Pour in cheddar cheese and stir until melted into beef mixture.
  • In a casserole dish lightly crush up 1/3 bag of Doritos. Pour 1/2 of beef mixture on top. Repeat.
  • Top with remaining 1/3 of Doritos and colby jack cheese.
  • Cover with foil sprayed with cooking spray (this keeps the cheese from sticking). Bake for 25 minutes covered. Remove foil and bake for 20 additional minutes.

Doritos Chips are crushed and combined with a delicious ground beef mixture into a casserole that is baked to perfection. Doritos Casserole is a taco casserole that can be topped with taco toppings and is sure to be a family favorite.

2 pounds ground beef ({preferably 93% lean or leaner})
1 packet taco seasoning
1-15 ounce can black beans ({drained})
½ cup corn ({frozen or canned})
1 ½ cups salsa
2 cups cheddar cheese ({shredded})
9 ½ ounce bag Doritos Cheese Chips ({crushed})

Steps:

  • Preheat oven to 375°. Prepare a 9x13 pan by spraying it with nonstick cooking spray. Set it aside.
  • Brown ground beef in a large skillet over medium-high heat until no longer pink. Drain fat {if any}. Add taco seasoning, black beans, corn and salsa to browned ground beef. Stir to combine, simmer for a couple of minutes and remove from heat.
  • Add ⅓ of the crushed Doritos chips to the bottom of the prepared 9x13 dish. Top the crushed chips with half of the meat mixture and ⅓ of the shredded cheese. Continue by adding ⅓ of the crushed Doritos chips to the top of the shredded cheese, followed by the remaining ground beef mixture and ⅓ of the shredded cheese. Top with the remaining Doritos chips and remaining shredded cheese.
  • Cover the top of the casserole with foil and bake for 20 minutes. After 20 minutes, remove the foil and continue to bake for an additional 10-15 minutes or until the cheese is totally melted and everything is heated through.
  • Remove from the oven and serve with your favorite toppings. Refrigerate leftovers for up to 3 days.
