2 tablespoons olive oil
2 pounds ground beef, ((you can also use ground turkey))
Salt and freshly ground black pepper, (to taste)
1 yellow onion, (finely diced)
1 green bell pepper, (diced)
4 cloves garlic, (minced)
2 tablespoons chili powder
2 teaspoons ground cumin
2 teaspoons dried oregano
1 teaspoon smoked paprika
1 can (6 ounces) tomato paste
1 can (28 ounces) diced fire roasted tomatoes, (undrained)
2 cups low sodium beef broth, ((you can also use 1 cup beer + 1 cup beef broth))
1 bay leaf
Shredded cheddar cheese
Seeded and thinly sliced jalapenos
Sour cream
Chopped cilantro

Steps:

  • Heat oil in a Dutch oven set over medium-high heat.
  • Add the ground beef to the hot oil; season with salt and pepper, and cook until browned, breaking it up with a wooden spoon while it cooks.
  • Once browned, stir in the onions, bell pepper, and garlic.
  • Continue to cook for 4 minutes, or until veggies are softened.
  • Stir in chili powder, cumin, dried oregano, and paprika.
  • Add tomato paste; stir to combine and cook for 3 minutes.
  • Stir in the tomatoes.
  • Stir in the broth, scraping up any browned bits from the bottom of the pot.
  • Add bay leaf and bring chili to a steady simmer; reduce heat and continue to simmer for 25 to 30 minutes, stirring occasionally. Please note that, at this point, you can let the chili cook for 3 to 4 hours, as long as there is enough liquid. If you would like to cook it for longer, make sure to add more liquid to the pot, 1 cup at a time, stirring occasionally. Water is OK to use for the extra liquid.
  • Remove from heat.
  • Remove bay leaf and taste for salt and pepper; adjust accordingly.
  • Ladle into bowls; garnish with cheese, jalapenos, sour cream, and cilantro.
  • Serve.

2 cups diced onion
4 cloves garlic, minced
2 pounds ground beef

Steps:

  • Heat a large, deep pot over medium-high heat. Add coconut oil. When oil is shimmering, add onions. Cook and stir with a wooden spoon until slightly browned, about 5 minutes. Add garlic; cook until fragrant, about 30 seconds.
  • Crumble ground beef into the pot. Stir to combine and cook until beef is no longer pink, 5 to 7 minutes. Add chili powder, cumin, cocoa powder, oregano, allspice, ancho chili powder, and salt; stir until well combined. Mix in tomato paste and simmer for 1 to 2 minutes.
  • Add beef broth, diced tomatoes with juice, and water. Stir well and bring to a boil. Reduce heat to low and simmer for 2 hours.

1-1/2 pounds lean ground beef (90% lean)
1 can (14-1/2 ounces) stewed tomatoes, undrained
1 can (8 ounces) tomato sauce
1 small onion, chopped
1 small green pepper, chopped
1 can (4 ounces) chopped green chilies
1/2 cup minced fresh parsley
1 tablespoon chili powder
1 garlic clove, minced
1-1/4 teaspoons salt
1/2 teaspoon paprika

Hot cooked rice or pasta

My husband won't eat beans but LOVES chili, so I had to come up with this variation on an old favorite. Instead, it contains lots of canned tomatoes and onion. This is great served over rice with some shredded cheese and a dollop of sour cream. Ground turkey may be substituted for ground beef.

2 tablespoons canola oil
1 (3 pound) beef chuck roast, cut into 1/2-inch cubes
Kosher salt and freshly ground black pepper
2 medium onions, chopped
1 small jalapeno, chopped
1 tablespoon plus 1 teaspoon chile powder, divided
1/4 teaspoon ground cinnamon
1/4 teaspoon crushed red pepper flakes
1 tablespoon chopped garlic
1 (28-ounce) can chopped tomatoes, strained, juice reserved
1/2 cup sour cream
1 teaspoon lime juice
1 teaspoon hot sauce
Special equipment: slow cooker

Steps:

  • Put a large heavy-bottomed skillet over medium-high heat and add the oil. Working in batches, add the beef to the skillet, season with salt and pepper, and cook until it is well browned, 10 to 15 minutes.
  • To the slow cooker sleeve, add the onions, jalapenos, 1 tablespoon chile powder, cinnamon, red pepper flakes, garlic, and strained tomatoes (reserve the juice). Add the seared beef to the slow cooker. Pour the reserved tomato juice into the skillet, scrape up any browned bits, and pour into the slow cooker. Cover the slow cooker and cook on low for 4 to 6 hours.
  • In a small bowl, combine the sour cream, remaining 1 teaspoon chile powder, lime juice, and hot sauce and mix until well blended. Keep covered in the refrigerator until the chili is done and ready to serve.

2 pounds chorizo sausage

Steps:

  • Pour tomatoes into a large stockpot over medium heat.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer beef to the stockpot.
  • Cook and stir chorizo in the same hot skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer chorizo to the stockpot.
  • Heat oil in the same skillet over medium-high heat. Saute onions and garlic until very well cooked and translucent, 7 to 10 minutes. Add cumin and chili powder and cook for about 3 minutes more. This family recipe has been passed down for generations. My dad used this recipe for an annual chili cookoff in our home town and it drew huge crowds. No tomatoes or beans in this true Texas chili. Important Note! This recipe called for Morton's Chili Blend. It is nearly impossible to find so I use William's Chili Mix in addition to the following ingredients. The real secret to this chili is the cooking method.

3 cups water
william's chili seasoning mix
1/2 teaspoon pepper
1/2 teaspoon Accent seasoning
2 tablespoons chili powder
2 teaspoons garlic powder
2 teaspoons cumin
2 teaspoons onion powder
salt

Steps:

  • In the 3 cups of water, simmer the meat for 30 minutes(do not brown the meat before boiling it). Crumble the meat up as you add it to the water. There should not be any large pieces. After 30 minutes add the remaining ingredients.
  • Simmer for 2 hours, stirring occasionally.
  • Serve this up with some cheese and extra onions if you want.

14 ounces beef broth

5 celery ribs, Sliced

Steps:

  • Cut Beef into small cubes.
  • Sear the outside of the beef in Pot.
  • Add Beef Broth, Chili Powder, Paprika and Garlic Powder and bring to a boil. Simmer for 30 minutes stir as needed.
  • Add Green Chilies, Onion and Celery.
  • Simmer another 30 minutes. Stir as needed.
  • Add Sofrito, Stewed Tomatoes and Tomato Paste.
  • Slow cook for 2-4 hours.
