2 cups ketchup
1 medium onion, chopped
1/4 cup cider vinegar
1/4 cup molasses
2 tablespoons Worcestershire sauce
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/2 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon crushed red pepper flakes
1 boneless beef chuck roast (3 pounds)
14 sesame seed hamburger buns, split

Steps:

  • In a large bowl, combine the first 11 ingredients. Cut roast in half; place in a 5-qt. slow cooker. Pour ketchup mixture over roast. Cover and cook on low for 8-10 hours or until meat is tender., Remove meat and shred with two forks. Skim fat from cooking juices. Return meat to slow cooker; heat through. Using a slotted spoon, serve beef on buns.

1/4 cup lemon juice

Steps:

  • Place meat in slow cooker sprayed with cooking spray, cutting into 2 pieces if necessary to fit; top with yellow onions and barbecue sauce. Cover with lid. Cook on LOW 10 to 12 hours (or on HIGH 5 to 6 hours).

3 lbs boneless beef chuck roast
1 cup barbecue sauce
1/2 cup apricot preserves (or any other fruit preserves to your liking)
1/3 cup chopped red bell peppers or 1/3 cup chopped green bell pepper
1 tablespoon Dijon mustard (Or what ever kind you have around)
2 teaspoons packed brown sugar
1 small onion, sliced
12 kaiser rolls or 12 hamburger buns, split

Steps:

  • Trim excess fat from beef.
  • Cut beef into 4 pieces.
  • Place beef in 4-5 quart crock pot slow cooker.
  • Mix remaining ingredients except buns, pour over beef.
  • Cover and cook on low heat setting 7-8 hours or until beef is tender.
  • Remove beef from slow cooker.
  • Cut beef into thin slices.
  • Stir back into sauce.
  • Cover and cook on low heat setting 20-30 minutes longer or until beef is hot.
  • Fill buns with beef mixture.
  • The leftover beef can be frozen with the sauce if you do not need 12 at one sitting.

1 beef roast (O-bone or chuck is good, serves 3-5)
6 ounces of your favourite barbecue sauce (We like Chris & Pitt's - just make sure it has a lot of bite!)
1 cup water
1 (8 -16 ounce) can heinz French onion soup (depending how much broth you want with the beef)
1 tablespoon dry mustard
2 tablespoons Worcestershire sauce
1 tablespoon horseradish sauce
2 -3 tablespoons brown sugar
salt and pepper

Steps:

  • Place all ingredients in a slow cooker.
  • Cook on high for approximately 5 hours (longer is okay).
  • Add more bbq sauce (to taste) and salt and pepper and make sure the meat has come off the bone and is stringy.

Kosher salt and lots of coarse black pepper
2 tablespoons EVOO, plus some for drizzling
4 cloves garlic, thinly sliced
2 onions, thinly sliced
1 cup ketchup
1 cup cloudy apple cider
1 cup beef stock
About 1/3 cup Worcestershire sauce
About 1/3 cup dark brown sugar, lightly packed
About 1/2 cup grainy Dijon mustard
One (28-ounce) can stewed tomatoes
Crumbled super sharp white Cheddar or Stilton blue cheese
Celery Slaw, recipe follows
12 hamburger or sandwich rolls of choice
1/2 cup fresh parsley tops, coarsely chopped
8 ribs celery with leafy tops, very thinly sliced on an angle
1 large portabella mushroom, halved and gilled, very thinly sliced1 lemon, juiced
Celery salt
EVOO
Freshly ground black pepper

Steps:

  • Bring the meat to room temperature, pat dry and sprinkle liberally with salt and pepper.
  • Heat a large Dutch oven over medium heat with EVOO. Add the garlic and onions, season with salt and pepper and cook to soften, 5 to 7 minutes. Add the ketchup, cider, beef stock, Worcestershire, brown sugar, Dijon and tomatoes. Simmer to begin to thicken and combine, 10 to 12 minutes more. Slide in the beef and cover with sauce. Cover the pot and simmer over low heat (or in a 300 degree F oven) about 3 hours, stirring occasionally on the stovetop.
  • Remove the meat and cut into small pieces or shred. Stir, and allow the sauce to thicken up over medium to medium-high heat. Add the beef back into the sauce and combine.
  • Serve with the cheese crumbles and Celery Slaw on rolls or cool and store for make-ahead meal.
  • Combine the parsley, celery and mushrooms; dress with lemon juice and just enough EVOO to coat, season with celery salt and pepper.

1 beef brisket (3 lb.), trimmed
1 can (14.5 oz.) fat-free reduced-sodium beef broth
2 cloves garlic, minced

Steps:

  • Heat oven 350ºF.
  • Cut half the onion into thin slices; place in large bowl. Add cabbage; mix lightly. Mix dressing and 2 Tbsp. barbecue sauce until blended. Add to cabbage mixture; toss to coat. Refrigerate until ready to use.
  • Heat oil in large skillet on medium heat. Add meat; cook 5 min. or until evenly browned on both sides, turning after 3 min. Transfer to 13x9-inch baking dish sprayed with cooking spray. You can also cook a pork roast with this recipe for bbq pork sandwiches. You will just have to carefully pick the meat to remove all fat before adding the bbq sauce.We like our bbq beef on toasted buns with mustard and pickle or a spoonful of homemade coleslaw.

3 lbs top round roast
3 medium yellow onions, quartered and sliced
3 cups cattlemens smoky barbecue sauce, preferred (or other smoky sauce)
1 tablespoon minced garlic
1 (12 ounce) bottle beer
1 cup brown sugar
1 tablespoon oil
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder

Steps:

  • Season both sides of the roast with the salt, pepper, onion powder, garlic powder and minced garlic.
  • In a dutch oven on your stove top heat the oil on medium-high heat. Add the roast and lightly brown each side. This takes about one minute on each side.
  • Pour in half of the bottle of beer.Put the cap back on you will use the rest later. Top the roast with the brown sugar. Add the sliced onions.( These will cook down and the kids won't even see them.) Put the lid on and cook on medium for 1 1/2 hours.Make sure the juices are at a low simmer.
  • Take off the lid and pour in the other half of the beer, turn the roast over, mix everything around real good and put the lid back on. Cook on medium-low for another 1 1/2 hours.The juices should be at a lower simmer now.
  • When the time is up check tenderness. The meat should pull apart with a fork easily.
  • Remove the roast from the pan to a plate if it is done.
  • The onions should be cooked down to practically nothing and there should be no more than a cup of juices left in the pan. Add the bbq sauce to the onions and juice in the pan.
  • On the plate cut the roast across the grain at about every 3 inches. This will make the roast pull apart into smaller pieces. Pull the meat apart with a large fork into shreds.
  • Add the meat to the sauce mixture and mix very well. The meat will absorb all of the sauce quickly.Let it sit on very low heat for about 30 minutes before serving.

I love this simple dish. It's so easy and tastes great. I usually use a homemade barbecue sauce but a good hickory flavored sauce is good too. I like to freeze this in individual portions to make a quick dinner when I don't want to cook.

3 lb bonless beef chuck, cut into 4 pieces (or bottom round roast)
1 medium onion, chopped
3 clove garlic (or 1/2 teaspoon garlic powder)
1 tsp salt
1/2 tsp pepper
3/4 c water
2 c barbecue sauce (homemade or purchased)
8 hoagie buns, or hamburger buns, or kaiser rolls

Steps:

  • 1. Place the onion and garlic on the bottom of the crock pot.
  • 2. Top with the beef pieces and season with salt and pepper.
  • 3. Add the water and cover and cook on LOW for 9 hours or until the beef falls apart with a fork.
  • 4. Remove all of the liquid from the beef.
  • 5. Trim and discard the excess fat from the cooked beef.
  • 6. Shred the meat with two forks until no solid pieces remain.
  • 7. Add the BBQ sauce and mix thoroughly.
  • 8. Serve the beef on split buns or hoagies.
  • 9. This recipe makes approximately 7-8 cups of shredded beef. Can be covered and refrigerated for up to 4 days for later use.

3 lbs cheap steak (I usually use London Broil, or whatever is on sale)
1/2 cup hoisin sauce
1/3 cup seasoned rice vinegar
1/4 cup light soy sauce
1 teaspoon ground ginger
1 tablespoon Worcestershire sauce

Steps:

  • Cut steak into 1" strips, while trimming off excess fat.
  • In a medium mixing bowl, stir together Hoisin sauce, soy sauce, rice vinegar, Worcestershire wauce, and ginger.
  • Dip the meat into the sauce to lightly coat it.
  • Place meat into crock pot and dump remaining sauce over it.

Reduce heat; cover tightly & simmer 2 to 2 1/2 hours or until beef is fork-tender. 3. Remove pot roast; cool slightly. Skim fat; reserve cooking liquid. Shred pot roast with 2 forks. 4. Combine beef & BBQ sauce in saucepan. Cook & stir over medium heat 8-10 minutes, adding cooking liquid as needed to keep beef moist. Serve in rolls.

2 1/2 lbs chuck roast, extra lean and boneless
1/4 cup tomato ketchup
1 tablespoon dijon-style mustard
2 tablespoons brown sugar
1 garlic clove, crushed
1 tablespoon Worcestershire sauce
2 tablespoons red wine vinegar
1/4 teaspoon salt
1/8 teaspoon pepper
12 French rolls (can use low calorie, high fiber rolls) or 12 sandwich buns (can use low calorie, high fiber rolls)

Steps:

  • Place beef in slow cooker. Combine remaining ingredients, except rolls. Pour over meat. Cover and cook on Low 8 hours or overnight.
  • Shred beef by pulling it apart with 2 forks and add one cup sauce.
  • Reheat mixture in microwave or on stovetop and spoon BBQ beef onto warm, open-face rolls or buns. Top with additional warm sauce if desired.

1 Tbsp. chili powder
1-1/2 tsp. black pepper, divided
1 tsp. garlic powder
1 beef sirloin tip roast (3 lb.)
3/4 cup KRAFT Original Barbecue Sauce, divided
6 cups coleslaw blend (cabbage slaw mix)
1 cup MIRACLE WHIP Dressing
12 submarine or French bread rolls, split

Steps:

  • Preheat grill for indirect heat by heating one side of the grill to medium heat and leaving the burners on the other side of grill turned off. Mix chili powder, 1 tsp. of the pepper and the garlic powder; rub evenly onto all sides of meat. Place on cool side of grill; cover with lid.
  • Grill meat, without turning, 1 hour. When internal temperature of meat reaches 140ºF, brush meat with 1/4 cup of the barbecue sauce. Continue grilling, covered, 10 min. or until internal temperature of meat reaches 150ºF. Transfer meat to carving board. Tent with foil. Let stand 10 min. or until internal temperature reaches 160ºF. Meanwhile, toss coleslaw blend with dressing and remaining 1/2 tsp. pepper.
  • Cut meat across the grain into thin slices. Add to remaining 1/2 cup barbecue sauce in large bowl; toss to coat. Spoon into rolls. Serve with the coleslaw.

2 lbs. boneless beef round steak
1/2 tsp. salt
1/4 tsp. pepper
3 cups purchased coleslaw mix, divided
3/4 cup barbecue sauce

Steps:

  • Trim beef and cut into 1" pieces; sprinkle with salt and pepper. In medium bowl, combine half of the coleslaw mix and barbecue sauce and mix to combine. Layer beef and coleslaw mixture in crockpot. Cover crockpot and cook on low for 7-9 hours until beef is tender. Stir well with fork so beef falls apart. Serve the cooked mixture in crusty sandwich buns, topped with the uncooked coleslaw mix.
