Yield Serves 6 as an appetizer; 4 as a main course

Number Of Ingredients 18

Romesco Sauce
3/4 cup cubed stale bread
1/3 cup Marcona or blanched almond almonds
2 cloves garlic, chopped
1 small tomato, seeded and roughly chopped
1 cup drained jarred roasted red bell peppers, roughly chopped
2 1/2 teaspoons sherry vinegar
3/4 teaspoon fine sea salt
1/4 teaspoon smoked paprika (pimentón)
2 tablespoons extra-virgin olive oil
Beef Skewers
1 tablespoon extra-virgin olive oil
1 clove garlic, minced
1 teaspoon sweet paprika
1 teaspoon ground cumin
1/2 teaspoon fine sea salt
cayenne pepper or hot paprika
1 1/4 pound beef sirloin, trimmed of fat and cut into 1-inch cubes

Steps:

  • For the sauce, combine bread and almonds in a food processor and process until finely ground.
  • Add garlic, tomato, peppers, vinegar, salt and smoked paprika; process until puréed, stopping to scrape down the sides of the bowl once or twice.
  • With the machine running, gradually add oil. Transfer to a bowl.
  • For the beef, soak 12 small (6-inch) bamboo skewers in cold water for at least 30 minutes before cooking.
  • In a large bowl, whisk together oil, garlic, sweet paprika, cumin, salt and cayenne.
  • Add beef cubes, toss to coat, and set aside for at least 10 minutes, or refrigerate up to 1 day.
  • Heat a grill pan over high heat or prepare an outdoor grill for medium-heat cooking.
  • Thread 3 to 4 beef cubes on each skewer, being sure that the tip is covered by beef.
  • Grill, turning occasionally, until beef is browned and cooked to your liking, 4 to 5 minutes on an outdoor grill and 6 to 7 minutes on a grill pan.
  • Serve the skewers hot with room temperature sauce.

Time 55m

Yield 4 servings

Number Of Ingredients 13

1/4 cup extra-virgin olive oil
1/2 cup sliced almonds
3 large cloves garlic, thinly sliced
1/2 teaspoon smoked paprika
One 16-ounce jar roasted red peppers, drained and patted dry
2 teaspoons sherry vinegar
Kosher salt
18 large shrimp, peeled and deveined
1 teaspoon finely grated lemon zest
1/2 teaspoon finely grated garlic
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1 bunch green onions, trimmed

Steps:

  • For the romesco sauce: Heat the olive oil in a medium skillet over medium heat. Add the almonds and cook, stirring often, until golden, about 3 minutes. Add the garlic and cook, stirring, until pale golden and fragrant, about 1 minute. Add the smoked paprika and stir for 30 seconds. Transfer to a blender. Add the red peppers, vinegar and 1/2 teaspoon salt and blend until almost smooth. Transfer to a bowl and cool to room temperature. The romesco sauce can be made up to 1 day ahead and kept refrigerated.
  • For the shrimp skewers: Toss the shrimp with the lemon zest, garlic, 1 tablespoon of the oil, 1/2 teaspoon salt and pepper to taste in a bowl. Thread 3 shrimp onto each skewer. Toss the green onions in a bowl with the remaining 1 tablespoon oil and a pinch of salt.
  • Heat a grill or grill pan over medium-high heat. Grill the green onions, turning occasionally, until wilted and charred, about 5 minutes. Transfer to a serving platter. Grill the shrimp skewers, turning once, until just cooked through, 2 to 3 minutes per side. Place the skewers on the platter with the onions and serve with the romesco sauce.

PANTRY PASTA WITH ROMESCO SAUCE

Pantry Pasta with Romesco Sauce image

Romesco is a Spanish sauce made with bread (as a thickener) and roasted peppers and nuts. This version twists those components into a kind of pesto that is wonderfully smoky and tangy. We've made it with roasted almonds and smoked paprika, but you can also try it with smoked almonds and regular Spanish paprika.

Time 30m

Yield 6 servings

Number Of Ingredients 10

Kosher salt
1 pound linguine
1 cup jarred roasted red peppers (2 to 3 peppers)
1/2 cup roasted whole almonds, plus 2 tablespoons chopped, for garnish
1/3 cup seasoned Italian breadcrumbs
2 tablespoons sherry vinegar
1 teaspoon granulated garlic
1/2 teaspoon smoked sweet paprika
5 tablespoons olive oil
Kosher salt and freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions, until al dente. Reserve 1 cup of pasta cooking water, then drain the pasta.
  • Meanwhile, combine the red peppers, whole almonds, breadcrumbs, vinegar, granulated garlic and paprika in a food processor and process until the texture is coarse but uniform. With the motor running, slowly pour in the oil and process until the sauce is thickened and emulsified. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  • Transfer the sauce to a large bowl. Add the pasta and enough of the reserved pasta water so that the sauce is loose enough to pour but smooth enough to stick to the pasta. Divide the pasta among individual bowls, and sprinkle with the chopped almonds.

Yield 30 servings

Number Of Ingredients 8

4 cloves garlic, peeled and minced
2-inch finger of fresh ginger, peeled and minced
1/2-cup rice wine vinegar
1/4-cup soy sauce
1/4-cup light miso
15 clean scallions cut into 2-inch lengths, using only the pale green and white sections of the onion

About a pound of sea or bay scallops

Steps:

  • In small bowl, mix first five ingredients to make sauce. Assemble skewers by placing one scallop (or two-three bay scallops) and one piece of scallion on each skewer. (These skewers can be prepped a day ahead and kept chilled in the fridge, then grilled a few hours before party time and kept warm until serving.)
  • Brush with ginger soy sauce and cook about two minutes per side or until just opaque. Be careful not to overcook scallops or they'll get a rubbery texture. Continue to brush with sauce throughout cooking.
