ROAST BEEF SANDWICH SPREAD
Steps:
- Gather the ingredients.
- Place beef, onion, celery, and pickles through a meat grinder with the coarse plate. Alternatively, mince the ingredients or process in a food processor until evenly chopped.
- Transfer the minced beef and vegetables in a bowl and add 1/2 cup of mayonnaise, onion powder, if using, black pepper, and salt. Add more mayonnaise and some pickle juice to moisten as desired.
- Toast the bread, if desired, and then spread with a little butter or mayonnaise.
- Add lettuce leaves and then spread a layer of the beef spread over the lettuce. Top with sliced red onion.
- Place another slice of bread on top, and slice diagonally. Serve immediately or store in the fridge for up to 4 hours.
- Enjoy.

RANCH MUFFALETTA SANDWICH

- For the spicy olive spread: In a bowl, mix together the pimentos, olives, mayo, jalapenos, vinegar and green onions until combined. Season with salt and pepper; set aside.
- For the sandwich: Lightly dress the iceberg in the olive oil and vinegar.
- Split the ciabatta in half lengthwise. Smear half of the spicy olive spread onto the bottom half of the bread and the other half onto the top half of the bread. Spoon half of the ranch dressing on one side and spread, then repeat with the other side. On the bottom half, layer half the meat and cheese. Top with the iceberg, followed by the remaining meat and cheese. Finally, put the top half of the ciabatta on top. Wrap in plastic wrap and place on a baking sheet with a second baking sheet and a heavy iron skillet on top to weigh it down. Put in the fridge for at least 2 hours.
- To serve: Slice into 4 pieces.

I got this recipe from a friend who can't remember where she got it. It's different than the usual creamy spreads and is versatile and delicious.

- Combine the black olives, green olives, kalamata olives, and garlic in the container of a food processor. Pulse to chop, then add balsamic vinegar and olive oil. Process until smooth. Refrigerate for at least one hour, or overnight if possible, before serving.

An easy and great tasting appetizer. You can not just have one.... You will have garlic breathe when you are finished, but it's worth it.

- Put all ingredients, except olive oil in the food processor and pulse until chopped.
- Turn processor on low setting and gradually add olive oil until you get a grainy texture.
- I stop and start and scrape down the sides as I am going.
- I try to add as little oil as possible, but enough to hold the mixture together so it will spread nicely.
- Serve with slices of grainy baguette.
- This is wonderful and easy.

I love dried beef dip, and came up with this one after trying several different ones. I think I have come up with a list of ingredients that compliment each other, and don't overpower. I hope you enjoy.

- Soften the cream cheese in the microwave 1 minute at a time on low setting, until it can be stirred.
- Finely chop the beef.
- Finely chop the olives and onion. (I use a hand chopper).
- Mix all ingredients in a medium bowl.
- Cover and let stand a few hours or overnight.
- Serve chilled, or at room temperature, with your favorite dip crackers.
