Food Network Kitchens nicknamed this the "broken enchilada" casserole because the soft layer of cooked tortilla chips on the bottom reminded us of enchiladas. But this dish is much easier to make!

2 tablespoons vegetable oil, plus more for greasing dish
1 1/2 pounds ground beef
3 tablespoons chili powder
1 1/2 teaspoons ground cumin
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper
1 medium onion, finely diced
4 cloves garlic, minced
One 15-ounce can pinto beans, strained and rinsed
2 cups jarred tomato salsa, plus more for serving
6 cups yellow corn tortilla chips (about 5 ounces), plus more for serving
3 cups shredded Cheddar and Monterey jack blend
3 cups shredded Cheddar and Monterey jack blend
1 cup sour cream, stirred well for easy dolloping
1 cup shredded iceberg lettuce
2 plum tomatoes, diced
1/2 avocado, diced
1/4 cup pickled jalapenos, chopped

Steps:

  • Preheat the oven to 375 degrees F. Lightly oil a 9-by-13-inch casserole dish.
  • Heat the oil in a large skillet over high heat. When the oil is shimmering, add the beef and sprinkle with the chili powder, cumin, oregano, 1 teaspoon salt and a few grinds of pepper. Cook, breaking up the meat into smaller pieces, until browned, about 5 minutes. Add the onions and garlic and cook until the onions are soft, about 5 minutes more. Add the beans, salsa and 1/2 cup water and bring to a simmer; cook until the sauce thickens and coats the meat, about 5 minutes. Add salt and pepper to taste. (This beef-and-bean mixture can be made up to a day ahead of time.)
  • Lay half the tortilla chips on the bottom of the oiled casserole dish. Spread half the meat mixture on top. Sprinkle half the cheese blend over the meat. Repeat with the remaining chips, meat and cheese. Bake uncovered until the cheese melts and the casserole is hot, about 20 minutes.
  • Top with sour cream, lettuce, tomato, avocado and pickled jalapenos if desired. Serve with more salsa and tortilla chips on the side.

2 cups tomato sauce, homemade or store-bought

1 cup self-rising cornmeal mix
1/2 cup self-rising flour
1 large egg
1 cup buttermilk

Steps:

  • Preheat the oven to 400 degrees F.
  • In a large ovenproof skillet or Dutch oven set over medium heat, cook the ground beef, breaking up the meat with a wooden spoon, until browned through, 3 to 5 minutes. Drain the fat from the meat. Add the onion, garlic, jalapeno, pinto beans, tomato sauce, and tomato and remove the pan from the heat. Top with the cheese.
  • In a medium bowl, combine the cornmeal, flour, egg, and buttermilk. Pour the mixture on top of the meat mixture.

Steps:

  • Grease a 13 x 9-inch baking dish.
  • In a skillet over medium heat brown the ground beef with garlic, onion, green bell pepper and jalapenos (if using) drain fat then add in taco seasoning, salt and black pepper to taste; heat stirring for 1-2 minutes; transfer the mixture into a large mixing bowl.
  • Add in black beans, corn, sour cream and salsa; mix until well combined.
  • Spoon 1/3 of the ground beef mixture or enough to cover the bottom of the dish.
  • Arrange HALF (3 cups) of the crushed tortillas on top of the ground beef mixture, then sprinkle about 1 cup shredded cheese.

10 flour tortillas
2 cups green chili sauce (canned green enchilada sauce works well if you don't wish to make green chili)
2 cups shredded cheese
2 cups shredded romaine lettuce
2 large tomatoes, diced

Steps:

  • Brown the ground beef with the salt and pepper to taste (if using shredded meat that has already been cooked, skip this step.
  • Mix the meat, beans and green chilies together.
  • Cut the tortillas in half; lay them in a 9 x 13 rectangular pan, placing the cut edges square to the side of the pan, over lapping as needed.

1 3/4 cups canned crushed tomatoes with added puree
1 cup lager beer
3 canned chipotle chiles in adobo sauce, finely chopped
1 tablespoon adobo sauce, from canned chipotle chiles
One 1-pound package frozen corn kernels, thawed
1 1/4 pounds shredded sharp Cheddar cheese
1 pound shredded Monterey Jack cheese

Tex-Mex Beef, Bean and Tortilla Casserole with Chipotles and Corn image

This hot and hearty party dish comes from somewhere deep in Texas, not far from the Rio Grande. There, authentic flavors from South of the border get employed North of the border in easy, crowd-pleasing American-style main dishes called - in fractured Spanish - "casserolas". Chipotle chiles - smoked red jalapenos canned in a tangy sauce called adobo - generate a sultry heat that enlivens the lasagna-like layers of meat, beans and tortillas. Garnish each portion with crisp shredded lettuce and a cooling dollop of sour cream and set out a tub of good beers on ice. For the best flavor, make the beef mixture at least one day ahead, but for best texture, assemble the casserole shortly before baking.

3 tablespoons olive oil
3 cups chopped yellow onion
3 red bell peppers, finely chopped
8 garlic cloves, finely chopped
3 pounds very lean ground beef
2 teaspoons salt
6 tablespoons medium-hot chili powder, such as Gebhardt
1 1/2 teaspoons ground cumin
1 1/2 teaspoons dried oregano, crumbled
1/2 teaspoon freshly ground black pepper
One 14-ounce can beef broth
1 3/4 cups canned crushed tomatoes with added puree
1 cup lager beer
3 canned chipotle chiles in adobo sauce, finely chopped
1 tablespoon adobo sauce, from canned chipotle chiles
One 1-pound package frozen corn kernels, thawed
1 1/4 pounds shredded sharp Cheddar cheese
1 pound shredded Monterey Jack cheese
24 6-inch corn tortillas
One 29-ounce can refried beans
3/4 cup chopped white onion
6 cups (about) finely shredded romaine lettuce
2 cups sour cream, room temperature, whisked until smooth

Steps:

  • Heat oil in heavy large deep saute pan over medium heat. Add yellow onion, bell peppers and garlic. Saute until tender, about 10 minutes. Add ground beef. Sprinkle with salt. Saute until meat is no longer pink, breaking up meat with back of spoon, about 10 minutes. Add chili powder, cumin, oregano and black pepper; saute 3 minutes. Add broth, tomatoes, beer, chipotle chiles and adobo sauce. Simmer uncovered until liquid reduces slightly, stirring occasionally, about 40 minutes. Add corn and simmer until mixture thickens slightly, about 10 minutes. Remove from heat. Cool to room temperature. Cover chili and refrigerate at least 1 day.
  • DO-AHEAD TIP:
  • Chili can be made up to 2 days ahead. Keep refrigerated.
  • Position rack in upper third of oven and preheat to 375 degrees F.
  • Combine both cheeses. Spread 2 tablespoons beans over one side of 6 tortillas. Arrange tortillas bean side up and overlapping slightly in 14-by-11-by-3-inch baking dish. Spoon 1/3 of chili evenly over tortillas. Sprinkle 2 cups cheese mixture, then 1/4 cup onion over. Repeat layering 2 times. Spread remaining 6 tortillas with remaining beans, then arrange tortillas bean side down in casserole. Sprinkle with remaining cheese mixture.
  • Bake until casserole is heated through and bubbling, about 50 minutes. Let stand on cooling rack for 5 minutes. Cut casserole into generous squares. Sprinkle with shredded lettuce and top with dollop of sour cream, and serve.

I created this recipe for the Ready, Set, Cook! game (RSC) that we occasionally feature on another cooking site that I frequent. It goes together quickly, so it It makes a great mid-week casserole or hearty lunch dish. The Poblano pepper, black beans, and cumin give it a distinct south-of-the-border flair.

BEEF AND BEAN LAYER
1 Tbsp olive oil
1 lb ground sirloin (or ground beef)
1/2 medium red onion, chopped
2 to 3 clove garlic, minced
1 large poblano pepper, seeded and minced
8 oz button mushrooms, thinly sliced
15-oz can black beans, rinsed and drained
14oz can diced tomatoes (do not drain)
2 tsp ground cumin
1 tsp black pepper
1/2 tsp salt
1 cup monterey jack cheese, shredded
CORNBREAD LAYER
1 1/2 cups yellow cornmeal
1/4 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup milk
1 large egg, beaten
2 to 3 dash(es) hot sauce, or to suit (optional)
TO SERVE
1 large avocado, peeled and sliced

Steps:

  • 1. Preheat oven to 375°F. Lightly spray a 9x13-inch baking dish with nonstick cooking spray; set aside.
  • 2. In a large skillet, saute beef, onion, garlic and jalapeño in olive oil until onion is soft and no pink remains in the beef, about 6 to 7 minutes.
  • 3. Add mushrooms, drained black beans, tomatoes, cumin, pepper and salt, and cook about 5 minutes or until most of the liquid from the canned tomatoes is absorbed.
  • 4. Pour beef mixture into prepared baking dish. Use the back of a wooden spoon to smooth the top to make a level surface.
  • 5. Sprinkle the cheese over the top of the beef layer.
  • 6. Add cornmeal, flour, baking power, baking soda and salt to a medium mixing bowl, and stir until well blended. Add milk, beaten egg and hot sauce (if using). Stir until well blended.
  • 7. Pour the cornbread batter over the top of the cheese layer, making sure to completely cover the cheese and beef layers.
  • 8. Bake 25 to 30 minutes or until the cornbread layer is evenly browned. Turn baking dish halfway through baking for even browning. Remove from oven and serve immediately with avocado slices on the side.

1/2 cup chopped sweet onion (about 1/2 medium)
1 teaspoon chili powder
1/2 teaspoon ground cumin
One 15-ounce can pinto beans, drained and rinsed
One 4-ounce can diced green chiles
8 ounces sour cream (light is fine)
2 tablespoons Gold Medal® All-Purpose Flour
1/4 teaspoon garlic powder
Eight 6-inch corn tortillas
1 1/2 cups enchilada sauce (recommend homemade- but canned is fine)
1 1/2 to 2 cups mixed Cheddar- Jack cheese
Topping suggestions: sour cream, guacamole, chopped tomatoes

Steps:

  • 1. (if serving right away): Preheat the oven to 350 degrees F. Spray a 9x13-inch pan or 2-quart baking dish with nonstick spray. 2. In a large skillet, cook the ground beef and onion together over medium heat until the beef is browned and the onion is tender. Drain any fat, if needed. Stir in the chili powder, cumin, beans, and chiles; set aside. 3. In a medium bowl, whisk together the sour cream, flour and garlic powder. 4. Place half of the tortillas in the bottom of the prepared dish, tearing them apart as needed to cover the bottom (overlapping is fine). Top with half of the meat mixture, spoon half of the sour cream mixture on top of the meat, and drizzle 3/4 cup of the enchilada sauce on top of that. Repeat the layers one more time. At this point, you can cover the dish with plastic wrap and refrigerate up to 24 hours before baking. 5. To bake: Remove plastic wrap, cover with foil and bake for 40 minutes. Uncover, sprinkle with cheese and bake 5 minutes or so more, until the cheese is nice and bubbly. Serve immediately. Tips: *If you are preparing this recipe as gluten-free, be sure to use brands of pinto beans, enchilada sauce and corn tortillas that are known to be GF. Use an alternative thickener in place of the all-purpose flour- such as cornstarch or a GF flour blend. *Suggestions for additional layers: corn, olives, feta cheese *Change-it-Up: Sub canned chili beans for the pinto beans (undrained). 1 1/2 lbs lean ground beef or 1 1/2 lbs ground turkey
1 large onion, chopped
2 -3 teaspoons chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
2 1/2 cups salsa (I like mild Pace Picante)
6 -8 fajita-size flour tortillas
15 ounces red kidney beans, drained and rinsed
2 cups shredded Mexican blend cheese

Steps:

  • Preheat oven to 375.
  • Spray 13x9 pan with nonstick spray, set aside.
  • Brown beef or turkey in large skillet with onion until cooked through, drain if needed.
  • Add chili powder, cumin and salt, and 1 cup salsa, stir and heat through.
  • In a medium bowl, mash drained and rinsed kidney beans coarsely. Add 1 cup salsa and stir together.
  • In 9x13 pan, layer two tortillas on bottom and fill in sides with pieces of a third tortilla until the bottom of pan is completely covered.
  • Layer all of the bean/salsa mixture over tortillas and sprinkle with 2/3 cups cheese.
  • Repeat another layer of tortillas.
  • Spread ground beef or turkey mixture evenly over tortillas.
  • Sprinkle with 2/3 cup cheese.
  • Layer last of tortillas and spread with 1/2 cup salsa.
  • Sprinkle rest of cheese over.
  • Cover with foil and bake for 45 minutes.
  • Let sit for 10 minutes before cutting.
  • Serve with sour cream on top, if desired.

1 lb ground beef (or use Italian pork sausages, casings removed)
1 medium onion, chopped
1 -2 tablespoon fresh minced garlic (or to taste)
1 medium green bell pepper, seeded and chopped
1 -2 jalapeno pepper (seeded and finely chopped) (optional)
1 1/2 cups salsa
1 cup corn kernel
1 cup sour cream
2 tablespoons taco seasoning mix (I use 1/2 package)
salt and pepper (to taste)
1 (19 ounce) can black beans (rinsed and drained)
4 cups coarsly crushed tortilla chips (can use more)
3 cups shredded cheddar cheese, divided (or use Monterey Jack cheese)

Steps:

  • Grease a 13 x 9-inch casserole dish or a 3-quart oval baking dish.
  • In a large skillet cook the ground beef with onions, garlic, green bell pepper and jalapeno pepper until completely cooked; drain fat then add in taco seasoning mix (you may add in more than 2 tablespoons if desired) cook stirring for 2 minutes, then season with salt and pepper to taste, remove from heat then mix in salsa, corn and sour cream.
  • Place HALF each of the ground beef mixture, black beans, 2 cups tortilla chips then 1-1/2 cups shredded cheese (or to taste).
  • Repeat with remaining ground beef, beans and then 2 cups crushed tortilla chips, leave the remaining 1-1/2 cups cheese to sprinkle on top the last 5 minutes of cooking.
  • Bake at 425 degrees for about 20 minutes or until just heated through.
  • After cooking sprinkle the remaining shredded cheese on top, you can return to oven to melt if desired.
