2 1/2 cups diced diced and chilled cooked chicken meat
1 cup chopped celery
1 cup sliced seedless grapes
1/2 cup sliced almonds
2 tablespoons chopped fresh parsley
1 teaspoon salt
1 cup mayonnaise
1/4 cup heavy whipping cream

Steps:

  • In a medium bowl, whip cream to soft peaks.
  • Combine meat, celery, grapes, almonds, parsley, salt, and mayonnaise with whipped cream. Chill.

This basic chicken salad is a family favorite. I like to use baked thighs or breasts that have been sprinkled with basil or rosemary.

½ cup mayonnaise
1 tablespoon lemon juice
¼ teaspoon ground black pepper
2 cups chopped, cooked chicken meat
½ cup blanched slivered almonds
1 stalk celery, chopped

Steps:

  • Place almonds in a frying pan. Toast over medium-high heat, shaking frequently. Watch carefully, as they burn easily.
  • In a medium bowl, mix together mayonnaise, lemon juice, and pepper. Toss with chicken, almonds, and celery.

Barbecued Chicken Salad image

This speedy main-dish salad uses rotisserie chicken, zesty barbecue sauce and creamy mayonnaise.

4 slices thick-sliced bacon (about 5 oz), diced
1/2 cup mayonnaise or salad dressing
1/3 cup barbecue sauce
1/2 teaspoon salt
4 cups bite-size pieces deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
1/2 cup finely chopped red onion
1 jalapeño chile, seeded, finely chopped
4 large Bibb lettuce leaves
2 tablespoons chopped fresh parsley

Steps:

  • In 10-inch skillet, cook bacon over medium heat 7 to 9 minutes, stirring occasionally, until crisp. Drain bacon on paper towels.
  • In small bowl, beat mayonnaise, barbecue sauce and salt with wire whisk until blended.
  • In large bowl, stir chicken, bacon, onion, jalapeño chile and mayonnaise mixture until well mixed. Serve in lettuce leaves. Sprinkle with parsley.
