I'm using this for Sunday meals - Great way to go through beans, and sausage is an inexpensive meat. I can put everything in, and return after Church and laundry, and find wonderful meal waiting.

1 1/4 cups dried black beans, soaked overnight
1 tablespoon sunflower oil
1 large red onion, peeled and chopped
2 -4 garlic cloves, peeled and minced
2 celery ribs, trimmed and chopped
1 teaspoon minced dried chili
1 teaspoon ground cumin or 1 teaspoon dried mustard
1 yellow bell peppers or 1 red pepper, seeded and chopped
8 spicy pork sausage links or 8 beef sausages
14 1/2 ounces chopped tomatoes
1 tablespoon maple syrup
1 1/4 cups beef broth or 1 1/4 cups chicken broth
2 fresh bay leaves
salt & freshly ground black pepper
1 tablespoon chopped fresh thyme

Steps:

  • Soak the black beans overnight in a generous amount of water.
  • Preheat the crock pot on high while prepping.
  • Drain beans, rinse, and place in a large pan, cover with cold water, and bring to a boil, boil for 10 minutes, then drain and put them in crock pot.
  • Heat oil in a large skillet and saute the onion, garlic, celery with the chiles, cumin, and mustard powder for 3 minutes Add the bell pepper, stir, and put contents of skillet in the crock pot. Stir.
  • Add sausages to skillet, and cook until browned, (but don't overcook) then empty into crock pot.
  • Blend tomatoes, maple syrup, and broth. Cover and cook on high for 6 to 8 hours.
  • Season with salt and pepper, to taste, garnish with the chopped thyme.

1 (13 ounce) package cajun style andouille sausages, diced
2 (15 ounce) cans kidney beans, drained
1 (14 1/2 ounce) can diced tomatoes (with onions and green peppers)
1/2 cup chopped green pepper
3/4 cup converted rice
2 cups vegetable stock
1 tablespoon cajun seasoning
salt and pepper

Steps:

  • In a 4-quart slow cooaker, combine sausage, beans, tomatoes, and green peppers.
  • In a medium bowl, stir together rice, vegetable stock, and Cajun seasoning. Pour into slow cooker and stir thoroughly.
  • Cover and cook on HIGH setting for 3 to 4 hours. Season with salt and pepper to taste.

This recipe can be cooked on the stovetop and the liquid can be cut back to make it thicker and less soupy. I dreamed this up one cool day when I was hankering for some good beans and sausage.

1/2 small onion, chopped
2 lbs smoked sausage, beef (or turkey, pork, etc)
2 (15 ounce) cans pinto beans
1 (15 ounce) can great northern beans
8 ounces vegetable broth
2 teaspoons garlic powder
1 teaspoon liquid smoke
1 teaspoon louisiana hot sauce (or tobasco)
pepper

Steps:

  • Place all in crockpot and mix to combine.
  • Cook on low 8 hours or on high 4-5 hours, till hot and flavors meld.
  • Serve with corn bread and hot sauce.
  • Note: Beans are added without draining. Omit broth or some of the liquid from beans to make thicker and less soup-like.

2 bunches greens (collards, kale, mustard or turnip)
1 large onion, chopped
1 tablespoon olive oil
4 -5 garlic cloves, minced
2 jalapeno peppers, seeded, minced
1/4-1/2 teaspoon crushed red pepper flakes
1 lb smoked sausage, sliced in 1 inch pieces
1 (16 ounce) can white beans, rinsed and drained
2 -3 cups water
salt and pepper
balsamic vinegar
1 cup polenta
3/4 cup cold water
2 1/2 cups boiling water

Steps:

  • Tear the greens into large pieces, wash under running water to clean well, drain.
  • Preheat a heavy skillet with olive oil, add onion and garlic; cook stirring frequently until onions begin to lightly brown, add minced jalapeno peppers.
  • Place the cooked onions in the bottom of the crock-pot, add the drained greens, crushed red pepper and water.
  • In the same skillet used for the onion, lightly brown the sliced sausage and place on top of the greens.
  • Cook on low for 3 hours. Stir in drained beans and continue to cook for addition 1 to 2 hours or until greens are tender.
  • In 2-quart saucepan, combine the polenta and cold water with wire whisk. Stir in boiling water and salt. Cook over medium-high heat, stirring constantly, until mixture thickens and boils; reduce heat. Cover; simmer 10 minutes, stirring occasionally.
  • Divide the polenta between serving bowls, spoon the cooked greens and sausage over and drizzle with balsamic vinegar if desired.

I found this in a crock pot cookbook, and although it was similar to some recipes already on here, I wanted to post it so I would remember to try it. The recipe says you can substitute any type of canned beans, just use two types. Suggestions for white are great northern, butter beans, or cannellini. For red, you could try small red or kidney beans. Fresh or fully cooked sausage can be used.

1 lb sausage
1/4 cup water (if using fresh sausage)
2 tablespoons olive oil
2 small bell peppers, any color, seeded and cut into strips
1 medium yellow onion, chopped
1 garlic clove, minced
1 (15 ounce) can white beans, rinsed and drained
1 (15 ounce) can red beans, rinsed and drained
1 (14 1/2 ounce) can diced tomatoes, with their juice
1/4 cup dry red wine
salt and pepper

Steps:

  • In an ungreased skillet over medium heat, brown the sausage. If using fully cooked or smoked sausage, slice and set aside. If using fresh sausage, add the water, cover and cook 8 to 10 minutes until completely cooked through. Uncover and cook a few minutes more. Cool and slice.
  • In a clean skillet, heat the oil over medium. Add the peppers, onion and garlic, stirring just until tender.
  • Transfer to the slow cooker and add the sausage, beans, tomatoes and their juice, and wine. Cover and cook on HIGH for 3 to 4 hours, or LOW for 6 to 8 hours. Near the end of the cooking time, check the consistency and cook with the lid off to thicken if desired.
  • Season with salt and pepper and serve.

Andouille sausage and beans is an easy crock pot recipe for Cajun comfort food served over rice you will make over and over again.

1 1 pound package Cajun style andouille smoked sausage or regular smoked sausage
1 green pepper (chopped)
1 medium onion (chopped)
1/2 cup chopped celery (optional)
1/4 cup water
2 tablespoons butter or cooking oil or bacon drippings
1 15.5 ounce can red kidney beans, drained and rinsed
1 15 ounce can green lima beans, drained and rinsed
1 14.5 ounce can diced tomatoes, undrained
1 8 ounce can tomato sauce
1 teaspoon minced garlic
1/2 teaspoon Cajun seasoning
salt and pepper to taste

Steps:

  • In a skillet on top of the stove brown green pepper, onion, celery and sausage in butter or oil. (I use bacon drippings for this). Once browned add to a 3 quart crock pot or slow cooker along with water, kidney beans, lima beans, diced tomatoes, tomato sauce, garlic, Cajun seasoning, salt and pepper.
  • Cook on low for 4 to 6 hours or high for 2 to 3 hours. Makes 6 to 8 servings.
