Beans are perfect for a budget meal. This cool, tangy salad is a hit when our six children and nine grandchildren come to eat.-Veta Chapman, St. Clair, Michigan

1 pound dried great northern beans
4 green onions with tops, sliced
1/2 cup grated carrots
1/2 cup sliced radishes
DRESSING:
1/2 cup vegetable oil
1/4 cup cider or white wine vinegar
2 tablespoons mango chutney
1 teaspoon curry powder
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place beans in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil for 2 minutes. Remove from the heat; cover and let stand for 1 hour. Drain and discard liquid. Return beans to pan; add water to cover by 2 in. Bring to a boil; cover and simmer for 45 minutes or until beans are tender. Drain and discard liquid. Place beans in a large bowl; add onions, carrots and radishes. In another bowl, whisk dressing ingredients. Pour over bean mixture and toss gently. Cover and refrigerate for several hours or overnight.

Bean curd is a delicious, healthy alternative to meat. Mixed with crisp stir fried vegetables, it makes an ideal light meal or appetizer.

2 tablespoons vegetable oil
1 garlic clove, crushed
1 lb bean curd, cubed
1 onion, sliced
1 carrot, cut into julienne strips
1 celery, sliced
2 small red bell peppers, cored, seeded and sliced
9 ounces snow peas, trimmed and halved
4 1/2 ounces broccoli, trimmed and divided into florets
4 1/2 ounces thin green beans, halved
2 tablespoons oyster sauce
1 tablespoon tamarind paste
1 tablespoon fish sauce
1 tablespoon tomato sauce
1 tablespoon light soy sauce
1 tablespoon chili sauce
2 tablespoons sugar
1 tablespoon white vinegar
1 pinch ground star anise
1 teaspoon cornstarch
1 1/4 cups water

Steps:

  • Heat the vegetable oil in a large, heavy bottomed skillet or wok, until hot.
  • Add the crushed garlic to the skillet or wok and cook for a few seconds.
  • Add the bean curd in batches and stir-fry over gentle heat, until golden on all sides.
  • Remove with a slotted spoon and keep warm.
  • Add the onion, carrot, celery, red bell peppers, snow peas, broccoli, and green beans to the pan and stir fry for about 2-3 minutes, or until tender but crisp.
  • Add the oyster sauce, tamarind concentrate, fish sauce, tomato paste, soy sauce, chili sauce, sugar, vinegar, and star anise, mixing well to blend.
  • Stir-fry for another 2 minutes.
  • Mix the cornstarch with the water and add to the pan with the stir-fried bean curd.
  • Stir-fry gently, until the sauce boils and thickens slightly.
  • Transfer to warm plates and serve immediately.

1 (14.5 ounce) can wax beans, drained
1 (15.5 ounce) can garbanzo beans, drained
1 (14.5 ounce) can kidney beans, drained
1 (14.5 ounce) can black beans, drained
½ cup chopped green pepper
½ cup chopped onion
½ cup chopped celery
½ cup salad oil
½ cup vinegar
½ teaspoon salt
½ teaspoon ground black pepper
¾ cup white sugar

Steps:

  • Combine the green beans, wax beans, garbanzo beans, kidney beans, green pepper, onion, and celery in a large bowl; toss to mix.
  • Whisk together the oil, vinegar, salt, pepper, and sugar in a separate bowl until the sugar is dissolved; pour over the bean mixture. Refrigerate 8 hours or overnight before serving.
