WHITE BEAN, CHEDDAR AND BACON DIP



White Bean, Cheddar and Bacon Dip image

Number Of Ingredients 12

6 slices bacon
1 cup minced onion
1 tablespoon minced garlic
1 1/2 teaspoons ground toasted cumin, or to taste
1 teaspoon chili powder
1(19-ounce) can white beans, such as cannellini, rinsed and drained
1 cup grated sharp white cheddar cheese
1/4 to 1/3 cup sour cream or yogurt, or to taste
2 tablespoons fresh lemon juice
Salt and cayenne, to taste
Assorted raw vegetables, such as carrot sticks, broccoli florets,
Bell pepper strips, etc. and/or tortilla chips as accompaniments

Steps:

  • In a skillet cook the bacon over moderate heat, until crisp. Transfer bacon to a plate lined with paper towel and pour off all but 2 tablespoons fat. Add onion and garlic to skillet and cook, stirring occasionally, for 5 minutes. Add cumin and chili powder and cook, stirring, 1 minute. Add beans and cook, stirring occasionally, 5 minutes.
  • Transfer the mixture to a food processor and puree until smooth. Add the cheddar, sour cream, lemon juice, salt and cayenne and puree until combined well.
  • Transfer dip to a serving bowl and garnish with the bacon, crumbled.
  • Serve with crudites and/or tortilla chips.

Nutty Greens with Bacon and Blue Cheese image

Kosher salt
1 pound haricots verts, trimmed
3 slices bacon
4 ounces blue cheese, cut into small chunks (recommended: Shropshire)
1 1/2 cups toasted whole pecans, coarsely chopped
1/4 teaspoon freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the haricots verts and cook for about 2 minutes. Remove the beans from the water and immediately place in a bowl of ice water. Remove the haricots verts from the ice water and set aside in a medium bowl.
  • In a large saute pan, over medium heat, cook the bacon until crisp. Remove the bacon and place on paper towels. Add the beans to the bacon drippings and cook over medium heat for 2 to 3 minutes. Add the blue cheese and toss just until it starts to melt. Break the cooked bacon into bite-size pieces and add to pan. Finish by stirring in the toasted chopped pecans. Season with the freshly ground black pepper and just a tiny pinch of kosher salt. Serve immediately.

7 slices bacon
2 cloves garlic, peeled and minced
1 (8 ounce) package cream cheese, softened
¼ cup half-and-half
4 ounces blue cheese, crumbled
2 tablespoons chopped fresh chives

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from skillet, drain on paper towels and crumble.
  • Place garlic in hot bacon grease. Cook and stir until soft, about 1 minute. Remove from heat.
  • Preheat oven to 350 degrees F (175 degrees C). Place cream cheese and half-and-half in a medium bowl. Beat with an electric mixer until blended. Stir in bacon, garlic, blue cheese and chives. Transfer mixture to a medium baking dish.
  • Bake covered in the preheated oven 30 minutes, or until lightly browned.

7 slices bacon, diced
2 garlic cloves, minced
8 ounces cream cheese, room temperature
1/4 cup half-and-half
4 ounces blue cheese, crumbled
2 tablespoons chopped fresh chives
3 tablespoons chopped smoked almonds (about 1 oz.)

Steps:

  • Cook bacon in heavy large skillet over medium-high heat until almost crisp, about 7 minutes;drain excess fat from skillet.
  • Add garlic and cook until bacon is crisp, about 3 minutes.
  • Preheat oven to 350 degrees.
  • Using electric mixer, beat cream cheese until smooth; add half and half and beat until combined.
  • Stir in bacon mixture, blue cheese and chives.
  • Transfer to 2-cup ovenproof baking dish; cover with foil.
  • (Can be prepared 1 day ahead. Bring to room temperature before continuing.).
  • Bake until heated through, about 30 minutes.
  • Sprinkle with chopped almonds and serve.

Drain, reserving 2 tablespoons drippings. , In the drippings, cook and stir the beans for 8-10 minutes or until crisp-tender. Add the blue cheese, pecans, pepper and bacon. Cook for 2 minutes or until heated through.
