Marinated Grilled BBQ Pork Skewers image

Juicy, marinated bbq pork grilled to perfection.

Number Of Ingredients 10

1 (2 pound) boneless pork shoulder roast (cut into bite-sized pieces)
1 teaspoon minced garlic
1/2 cup low sodium soy sauce
1/4 cup lime juice
1/2 cup ketchup
1/2 cup brown sugar
1 teaspoon salt
1 teaspoon pepper
1 cup ginger ale
bamboo skewers

Steps:

  • Place cut pork shoulder in a gallon sized resealable bag.
  • In a mixing bowl, whisk together minced garlic, soy sauce, lime juice, ketchup, brown sugar, salt, pepper and ginger ale.
  • Pour marinade in the bag over pork.
  • Seal bag and place in the refrigerator for 4-8 hours, or overnight.
  • Remove pork from bag and thread onto bamboo skewers that have soaked in water for 20 minutes (to prevent charring).
  • Heat grill to high heat and grill skewers for 8-10 minutes, rotating during cooking, until cooked through.

Just broil or throw these Filipino BBQ skewers on the grill for caramelized pork shoulder flavored with shallots, rice wine, and soy sauce.

1 shallot, chopped
2 cloves garlic, chopped
⅔ cup soy sauce
2 tablespoons rice wine
2 teaspoons white sugar
1 ½ pounds pork butt, cut into 3/4-inch cubes
2 tablespoons canola oil

Steps:

  • Combine shallot and garlic in a food processor and process until a paste forms. Place in a large bowl. Add soy sauce, rice wine, and sugar; stir to combine. Add pork, cover, and marinate in the refrigerator, 6 hours to overnight.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Take pork out of the marinade and place in a clean bowl. Reserve the marinade. Add oil to the pork, stir, and thread pork onto skewers, 5 to 6 pieces per skewer. Broil, basting with the marinade, until browned and sticky on the outside, about 5 minutes per side. An instant-read thermometer inserted into the pork should read at least 145 degrees F (63 degrees C).

GRILLED PORK SKEWERS WITH SMOKED RED CURRY BBQ SAUCE



Grilled Pork Skewers With Smoked Red Curry BBQ Sauce image

Based on a dish Dale Talde of Top Chef Season 4 prepared on the show for a giant party - so I have reduced the amounts. Cook time doesn't include time to soak skewers.

1 lb lean pork tenderloin, cubed
1 red onion, quartered
1 fresh pineapple, cored and cut in slices
salt and pepper, to taste
olive oil, to taste
6 tablespoons sugar
1 tablespoon red curry paste (two if you dare)
1/4 cup onion, finely diced
4 garlic cloves, chopped
3 tablespoons fish sauce
6 tablespoons fresh lime juice
1 1/2 tablespoons honey

Steps:

  • Soak wooden skewers 30-45 minutes.
  • Preheat ~ ignite ~ light -- fire up your GRILL!
  • In a medium-sized saucepan, combine all BBQ sauce ingredients. Cook over medium heat until it starts bubbling, then reduce to simmer. It will thicken into a barbecue sauce consistency - then you can turn off the heat.
  • Put pork and onion in a bowl; drizzle with olive oil and sprinkle with salt and pepper to season; stir until all is coated.
  • Assemble skewers: alternating pineapple, red onion then grilled pork. Each skewer will have approximately two large pieces of each.
  • Grill all until done, turning (carefully) several times to make sure everything gets browned. Before removing from the grill, cut open one of the larger pieces of pork to make sure there's no pink remaining inside.
  • Drizzle with sauce and serve!

1 lb. of pork sliced into slightly thin strips
1/2 cup vinegar
1/4 cup ketchup (used banana ketchup for this recipe)
1/4 cup soy sauce
1/2 cup brown sugar
1 tbsp hot sauce (can add more if you want it spicy)
1 can calamansi soda (sprite would do as a substitute)
1 head of garlic crushed
1 small onion minced
salt to taste
1 tbsp cooking oil
1 tbsp sesame oil
metal, or bamboo skewers (soaked)

Steps:

  • Combine the liquid ingredients, sugar, onions and garlic and touch of salt to make your marinade. Add in the strips of pork. Let this marinade for a minimum of 1 hour, preferably overnight in the fridge. Make sure you soaked your skewers to prevent them from burning when on the grill. Skewer the meat. Set aside to let the excess marinade drip. Boil the marinade until it's reduced by half. Transfer into a bowl and mix the oil. This would be a good glaze as we grill the bbq. Sesame oil makes the bbq aromatic as we grill. Grill the skewered meat over charcoal for a few minutes. Probably would take about 5 minutes on each side. Brush both sides with the glaze to give it some shine and color. My dipping sauce would just be some spiced vinegar. Crushed garlic, minced onions and chili in some cane vinegar with a few dash of fish sauce and about a tsp of sugar. Enjoy your Filipino BBQ.
