These easy bbq chipped ham sandwiches are a classic Pittsburgh dish made by home cooks for picnics, everyday dinners, and group functions.

Steps:
- Make a bbq sauce by combining the brown sugar, ketchup, vinegar, Worchestershire sauce, salt, pepper, mustard, and onion powder together in a large bowl.
- Stir the chipped chopped ham in with the sauce.
- Heat the ham and barbecue sauce on the stove in a large skillet or pan at medium heat until warmed through about 15-20 minutes.
- Keep warm in a slow cooker until ready to serve.
- Serve on Kaiser rolls.

- In a large saucepan, combine the first 8 ingredients; if desired, stir in liquid smoke. Bring to a boil over medium-high heat. Reduce heat; simmer, uncovered, 5 minutes, stirring occasionally., Place ham in a 5- or 6-qt. slow cooker. Add sauce; stir gently to combine. Cook, covered, on low 2-3 hours or until heated through. Serve on rolls. Top with pepperoncini if desired.

- In a large saucepan, combine the ketchup, water, brown sugar, cider vinegar, sweet pickle relish and Worcestershire sauce. Season with cinnamon, black pepper, garlic salt and liquid smoke. Bring to a simmer over low heat and simmer for 20 minutes.
- Shred the ham and stir into the mixture. Simmer longer if desired, then serve hot on hamburger buns. The mixture can also be frozen.

CHIPPED HAM
Chipped Ham (aka Chip Chop Ham, Chipped Chopped Ham, Chip Chopped Ham) is deli chopped ham thinly shaved ("chipped") and combined with a tangy BBQ sauce and heated through in the slow cooker or on the stove top, then piled high onto fresh buns for a warm and satisfying sandwich like no other.

- If making your own BBQ sauce, prepare that first. In medium to large sauce pan on medium heat, melt 1 TBSP unsalted butter. Sprinkle on 1 TBSP all purpose flour and cook, stirring constantly, for one minute. Add 1/2 cup water, 1/4 cup white vinegar, 1 cup ketchup, 3 TBSP brown sugar, and 1 TBSP Worcestershire sauce to flour mixture and stir constantly on medium heat until mixture thickens. It should still be somewhat thin, but thicker than water. At this point, you can take off heat and store in refrigerator until ready to use it, add in the ham (if making this dish in a pan vs a slow cooker), or add it to the slow cooker.
- If preparing chipped ham in a pan, add the ham to the BBQ sauce and stir to combine. Continue to heat until heated through.
- If preparing chipped ham in a slow cooker, combine the homemade BBQ sauce or the jarred BBQ sauce with the ham. Heat on LOW for about 1 1/2 hours, or HIGH for about an hour, stirring occasionally until heated through. (May heat quicker depending on whether the BBQ sauce is hot or not when combining).
- Serve on warm, on buns.
