Give slow cooker BBQ chicken a long, slow simmer with ginger and pineapple juice until it's perfectly juicy and tender. Then you add the stir-fry veggies and BBQ sauce, and you've got Slow-Cooker BBQ Chicken Stir-Fry.

1 can (20 oz.) pineapple chunks in juice, undrained
1/2 cup reduced-sodium soy sauce
1 tsp. ground ginger
2 cloves garlic, minced
3/4 cup KRAFT Original Barbecue Sauce, divided
4 lb. mixed bone-in chicken pieces
2 Tbsp. cornstarch
1/4 cup water
1 pkg. (16 oz.) frozen Asian-style stir-fry vegetables
4 cups hot cooked long-grain white rice

Steps:

  • Drain pineapple, reserving juice. Mix reserved juice with soy sauce, ginger, garlic and 1/2 cup barbecue sauce in slow cooker.
  • Top with chicken; cover with lid.
  • Cook on LOW 6 to 8 hours (or on HIGH 5 hours). About 35 min. before serving, mix cornstarch and water. Add to slow cooker with vegetables, pineapple chunks and remaining barbecue sauce; stir. Cook 30 min. or until heated through.
  • Serve with rice.

1 Tbsp. oil
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1/2 cup KRAFT Original Barbecue Sauce
2 Tbsp. lite soy sauce
1/2 tsp. garlic powder
1 pkg. (16 oz.) frozen mixed vegetables (broccoli, carrots, cauliflower), thawed, drained
2 cups hot cooked long-grain brown rice

Steps:

  • Heat oil in large skillet on medium-high heat. Add chicken; cook and stir 8 to 10 min. or until chicken is done.
  • Stir in barbecue sauce, soy sauce and garlic powder. Add vegetables; cook 3 to 4 min. or until heated through, stirring occasionally.
  • Serve over rice.

I was given the Food Trk Berry Good BBQ sauce and was looking for a way to use it. This stir-fry turned out great. My husband and son loved it. I was also given some of their other sauces so will be making some more new recipes with those soon.

2 - boneless, skinless chicken breasts
1/4 cup(s) food trk berry good bbq sauce
1/2 cup(s) broccoli florets, cut into biteesized oieces
1/2 cup(s) julienned carrots
1/4 cup(s) water chestnuts
1/4 cup(s) red bell pepper, diced
1/2 cup(s) sugar snap peas
1/4 cup(s) sliced celery
1/2 cup(s) pineapple chunks
1/2 teaspoon(s) ground ginger
1/8 teaspoon(s) garlic powder

Steps:

  • Cut chicken into bite sized pieces.
  • Peel and julienne the carrots. Destring and slice celery. Dice the bell pepper. Cut broccoli florets into small pieces. Cut pineapple into chunks.
  • Heat wok over medium heat.
  • Add BBQ sauce. Heat until sauce is hot.
  • Add the chicken and stir to coat. Cook Chicken until done through, about 10 minutes.
  • Add vegetables and stir to coat.
  • Sprinkle evenly with ginger and garlic. Stir to mix well.
  • Cook stirring often until vegetables are tender crisp about 15 minutes.
  • Serve with brown rice.
