1 French bread baguette (12 oz.), cut lengthwise in half, then crosswise into quarters
1/4 cup MIRACLE WHIP Dressing
1/4 cup KRAFT Original Barbecue Sauce
1/2 recipe Easy Grilled BBQ Chicken (4 breasts)
1/2 cup thinly sliced red onions
4 KRAFT Big Slice Pepper Jack Cheese Slices, cut diagonally in half

Steps:

  • Heat broiler.
  • Place bread, cut-sides up, in single layer on baking sheet.
  • Top with remaining ingredients.
  • Broil 2 to 3 min. or until cheese is melted.

Steps:

  • Wrap the bacon around the chicken breast and put on a tray in the oven (190 degrees) until chicken is cooked. (Around 20-30 mins)
  • When cooked transfer into a small, deep dish - a bowl will do. Squirt the BBQ sauce all over the chicken then top with loads of grated cheese!!
  • Put back into the oven for 5 mins or untill cheese is melted and the bbq sauce is hot!
  • Eat and enjoy, goes well with potatoe wedges and brocolli!!

Chicken and Mushroom Open Face Melt With BBQ Mayo image

I went to Makros (similar to Costco) today and got a huge box of chicken breasts. I was putting them into freezer bag by pairs for future meals (there are only two of us) and I had one 'odd' breast left over. So, I made these open face sandwiches for lunch. It could serve one person for lunch or two for a snack.

1 boneless skinless chicken breast
2 mushrooms, sliced
2 slices bread
2 tablespoons light mayonnaise
1 tablespoon barbecue sauce
2 ounces mozzarella cheese, shredded

Steps:

  • Slice the chicken breast into chunky slices.
  • Lightly fry the chicken and mushrooms until the chicken is browned and cooked through. (You could make it healthier by doing the chicken on a Foreman grill). Set aside for a moment.
  • In a small bowl mix together the mayonnaise and the BBQ sauce until they are well blended.
  • Put the bread on a baking tray and spread each slice liberally with the BBQ mayo.
  • Arrange the chunky chicken slices on the bread so that they cover as much of the surface area as possible.
  • Scatter the mushrooms over the top of the chicken.
  • Sprinkle both slices of bread with cheese and put under the grill or broiler until the cheese is melted.
