This dish could either be served as an appetiser (finger food) or as a main meal. It requests for shoyu (Japanese soy sauce) but you can use any soy sauce. I also used rice wine vinegar instead of sake as the kids were going to eat some as well. Preparation time includes one hour marinating. The recipe comes from a Reader's Digest - Summer BBQ Cookbook 2006

500 g skinless chicken breasts, cut into 2 cm cubes
1 large green capsicum, seeded and cut into 30 small cubes
4 large spring onions, cut across into 30 pieces
3 tablespoons shoyu (Japanese Soy Sauce) or 3 tablespoons soy sauce
3 tablespoons sake or 3 tablespoons dry sherry
1 tablespoon sesame oil
1 garlic clove, crushed
1 tablespoon fresh ginger, finely chopped
2 teaspoons clear honey

Steps:

  • Place the shoyu/soy, sake or sherry, sesame oil, garlic, ginger and honey in a shallow dish and stir together to mix. Add the chicken pieces and spoon the marinade over them. Cover and chill for at least 1 hour or overnight.
  • Preheat the barbecue flat plate. Soak 30 small bamboo skewers in cold water for 30 mins, to provent them from burning on the barbecue.
  • Thread about 2 pieces of chicken onto the skewers, alternating with one piece of capsicum and one of spring onions, threaded widthways.
  • Cook the kebabs for about 10-15 minutes, or until cooked through, turning from time to time and brushing with the marinade.

Number Of Ingredients 10

90 ml water
45 ml soy sauce
45 ml lemon juice
1 1/2 tablespoons honey
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
6 boneless skinless chicken breast halves, cut into 4 cm pcs.
1 1/2 green bell peppers, seeded and cut into 4 cm pcs.
1 1/2 medium onions, peeled,washed and quartered
12 large mushroom caps

Steps:

  • In a glass baking dish, combine the first 6 ingredients together.
  • Add the chicken pcs.
  • Mix well to coat the chicken with the remaining ingredients.
  • Cover.
  • Marinate for 2 hours atleast in the refrigerator.
  • Prepare your grill in the meantime.
  • Remove the chicken pcs.
  • from the marinade.
  • Boil the marinade in a saucepan for 10 minutes.
  • Alternate the chicken pcs.
  • and the vegetables on skewers.
  • Grill 15 cm from medium-hot coals for 15-20 minutes, or until done, turning and basting every few minutes with the marinade.
  • Serve hot.
  • Enjoy!

Tangy and flavorful. You may also do these skewers in the oven 325 F apprx 20 min. check to see that no pink remains when cut through. If you do not like yogurt use sour cream or whipped cottage cheese with a couple of tbsp of low fat cream cheese added. A short cut to the final BBQ time is to partially cook the chicken in the marinade in a skillet until the chicken is just beginning to brown, then thread it onto the skewers and keep in fridge until you are ready to BBQ - only takes 10 minutes on a pre heated grill. Do not miss squeezing the fresh lime juice on as you are BBQing them - it gives a lovely zing.

4 boneless skinless chicken breasts, cut into 1 1/2 " cubes
1/2 cup nonfat yogurt
2 garlic cloves, minced
1 tablespoon grated fresh ginger (or 1 tsp ground ginger)
2 teaspoons curry powder
1 teaspoon granulated sugar
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 tablespoons fresh lime juice, divided
4 lime wedges (for garnish)

Steps:

  • In a large"Ziplock" bag or a shallow glass dish mix yogurt, garlic, ginger, curry powder, sugar, salt and cayenne pepper.
  • Mix well.
  • Add chicken to marinade, turn to coat and refrigerate for 15 minutes.
  • Thread chicken on skewers, discard marinade.
  • BBQ over medium heat 4" from heat.
  • Baste with half of the lime juice.
  • Turn once while cooking, basting with the remaining lime juice (about 6 minutes each side or until there is no pink inside).
  • Place skewers on serving plate garnish with lime wedges.
