An easy way to make a nice brisket. The beans in this recipe are wonderful - sometimes I just make a big pot of the beans alone. Even though I love the convenience of my crock pot, I feel that cooking in the crock pot generally overcooks any meat. However, in this case, with brisket, it is pretty darn good, especially with the delicious beans on the side! I sometimes find that the liquid gets a little low, when it is cooking. If this occurs, you can do any of the following, as needed: double the sauce recipe to add later, add some bottled barbecue sauce, or add a can of beer. Enjoy!

16 ounces dried pinto beans, rinsed, drained, and picked through
3 lbs boneless beef brisket
1 large onion, chopped finely
1/2 teaspoon seasoning salt
1 teaspoon hickory-flavored liquid smoke
1 1/2 cups ketchup
3 tablespoons Worcestershire sauce
1 tablespoon prepared yellow mustard
1/4 cup red wine vinegar
1/4 cup brown sugar
2 cups hot water

Steps:

  • Combine water, onion, and pinto beans in crock pot.
  • Mix together ketchup, Worcestershire Sauce, vinegar, mustard, seasoned salt, Liquid Smoke, and brown sugar in separate bowl.
  • Stir half of this mixture into beans in crock pot.
  • Place brisket on top of beans (cut into two pieces, if needed).
  • Spread the remaining mixture over brisket.
  • Cook on low for 8-10 hours, stirring twice, if possible.
  • Slice meat across the grain and serve with sauce and with beans on the side.

3 tablespoons packed light brown sugar
1 1/2 tablespoons chipotle chile powder
2 teaspoons ground cumin
1 teaspoon celery salt
1 clove garlic, minced
Kosher salt and freshly ground pepper
4 1/2 to 5 pounds point-cut beef brisket, trimmed (fat cap intact)
1 1/4 cups ketchup
1/4 cup apple cider vinegar
1 tablespoon Worcestershire sauce
Potato salad and cornbread, for serving (optional)

Steps:

  • Combine the brown sugar, chile powder, cumin, celery salt, garlic, and salt and pepper to taste in a small bowl. Rub all over the brisket, then transfer to a 5-to-6-quart slow cooker. Combine 3/4 cup ketchup, the vinegar and Worcestershire sauce in another small bowl. Pour over the brisket along with 3/4 cup water. Cover and cook on low, 8 hours.
  • Remove the brisket to a cutting board and let rest 10 minutes. Meanwhile, skim off the excess fat from the sauce; stir in the remaining 1/2 cup ketchup. Reserve one-third of the brisket (about 12 ounces) and 1 cup of the brisket sauce for Southwestern Brisket Hash. Slice the remaining brisket and divide among plates. Top with some of the sauce and serve with potato salad and cornbread.

4 onions, sliced
5 lbs beef brisket, trimmed of fat
1 1/4 cups barbecue sauce
2 (15 ounce) cans cannellini beans, drained and rinsed
2 tablespoons fresh rosemary, chopped (or 2 teaspoons dried rosemary)

Steps:

  • Put 3 of the onions in a slow cooker and then top with the brisket and then the remaining one onion.
  • Mix barbecue saude and 1 cup of water and then pour over all. Cover and cook on low for 6-8 hours or until brisket is fork tender. Let stand for 15 minutes before slicing Skim fat and reserve for the onion sauce.
  • Combine beans, rosemary and 1 1/2 cups of the sauce (in crockpot) in a saucepan and heat through.
  • Slice brisket and top with sauce and serve with the beans.

3 cups low-sodium chicken broth
1/3 cup tomato paste
1/3 cup packed light brown sugar
3 tablespoons molasses
3 tablespoons honey mustard
2 tablespoons barbecue seasoning blend
4 cloves garlic, chopped
1 pound dry navy beans, rinsed and picked over
2 cloves
1 small onion, halved
1 1/2 pounds chicken-apple sausages, each halved lengthwise
2 tablespoons cider vinegar
1 tablespoon Worcestershire sauce
Pickled peppers, sliced scallions and/or sour cream, for garnish (optional)

Steps:

  • Whisk the broth, 3 cups water, tomato paste, brown sugar, molasses, mustard, barbecue seasoning and garlic in a slow cooker. Add the beans. Push a clove into each onion half; tuck the onions and sausages into the beans in the slow cooker. Cover and cook on high until the beans are tender, about 6 hours.

3 tablespoons packed brown sugar
1 tablespoon plus 1 1/2 teaspoons chipotle chili powder
2 teaspoons ground cumin
1 teaspoon celery salt
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon pepper
4 to 5 lb fresh beef brisket (not corned beef)
1 1/2 cups ketchup
1/4 cup apple cider vinegar
1/4 cup finely chopped yellow onion
1 tablespoon Worcestershire sauce
3/4 cup low-sodium beef, chicken or vegetable broth or water

Steps:

  • In small bowl, mix brown sugar, chipotle chili powder, cumin, celery salt, garlic powder, salt and pepper.
  • Spray inside of 6-quart slow cooker with cooking spray. Place brisket in slow cooker; rub mixture all over brisket.
  • In another small bowl, mix 3/4 cup of the ketchup, the apple cider vinegar, onion and Worcestershire sauce. Pour over brisket along with broth.
