One 4-pound brisket
1 tablespoon plus 1 teaspoon kosher salt
1 packed tablespoon light brown sugar
1 tablespoon dried shallots
2 teaspoons garlic powder
2 teaspoons smoked sweet paprika
1 teaspoon cayenne pepper
Buttered toasted buns or Buttermilk Cheddar Corn Cakes (recipe follows)
Crunchy Ranch Slaw (recipe follows), for serving
1/2 cup all-purpose flour
1/2 cup yellow cornmeal
1 tablespoon granulated sugar
1 tablespoon baking powder
1 teaspoon kosher salt
2 tablespoons unsalted butter, plus extra for cooking corn cakes
1 large egg
1 cup low-fat buttermilk
1/2 cup shredded sharp Cheddar
1/3 cup canned corn, rinsed and drained, optional
1 tablespoon dried chives
Serving suggestions: butter and maple syrup
1/2 cup mayo
1/4 cup chopped fresh dill
1 tablespoon granulated sugar
1 tablespoon white vinegar
1 teaspoon yellow mustard
1/2 teaspoon garlic powder
1/2 teaspoon freshly ground black pepper
1/4 teaspoon kosher salt
1 small crown broccoli
1/4 green cabbage, thinly sliced (about 4 cups)
1 bulb fennel, fronds reserved and bulb thinly sliced (about 4 cups)

Steps:

  • Allow the brisket to come to room temperature for 30 minutes.
  • Combine the salt, sugar, shallots, garlic powder, smoked paprika and cayenne in a small bowl to make a dry rub. Massage the rub into all sides of the meat, being sure to use it all. Lay the brisket on a sheet pan.
  • Light a grill on low heat on one side, keeping the other side turned off; you should maintain a temperature of 250 to 300 degrees F the whole time you are grilling. Place the hickory chips in a foil pan. Cover with foil and cut slits in the top to release the smoke. Place the foil pan on the lit side of the grill. Place the brisket fat-side up on the turned-off side of the grill and close the cover. Cook, flipping a few times, until very tender but not falling apart and the center reaches about 200 degrees F, 3 to 4 hours. Let rest 5 to 10 minutes, then slice the brisket into thin slices across the grain. Serve over buttered toasted buns or with Corn Cakes and Crunchy Slaw.
  • Whisk together the flour, cornmeal, granulated sugar, baking powder and salt in a mixing bowl.
  • Melt the butter in a large nonstick skillet over medium heat. Set aside to cool slightly while you prepare the wet ingredients.
  • Whisk together the egg and buttermilk in a large mixing bowl. While whisking, pour in the melted butter and stir until combined. Stir in the dry ingredients just until combined. (Be sure not to overwork the batter.) Fold in the Cheddar, corn, if using, and chives.
  • Place the skillet over medium heat and add enough butter to coat the bottom. Ladle about 1/2 cup batter into the pan, spreading gently to form a thick circle. Cook until bubbles appear on the surface, 1 to 2 minutes. Flip over and cook until golden brown, about 1 to 2 minutes more. Melt a small pat of butter in the skillet in between each batch (this will help the corn cakes rise). Serve immediately, with more butter and maple syrup, if desired.
  • Whisk together the mayo, dill, granulated sugar, vinegar, mustard, garlic powder, pepper and salt in a large bowl.
  • Remove the stem from the broccoli and slice thinly, then add to the bowl. Cut the crown of the broccoli into small florets and add to the bowl, along with the cabbage and fennel. Toss until the vegetables are evenly coated in the dressing. Garnish with the fennel fronds.
  • Serve immediately or store refrigerated in an airtight container. This recipe tastes even better the next day!

1 tablespoon kosher salt, plus additional for seasoning
1 tablespoon freshly ground black pepper, plus additional for seasoning

1 teaspoon cayenne pepper
1 (5 to 6-pound) piece beef brisket, preferably point cut, fat trimmed
6 cups wood chips, preferably hickory or mesquite
1 (28-ounce) can tomato puree
12 ounces lager or amber beer
2 ribs celery, minced
1 medium onion, minced
3/4 cup cider vinegar
1/2 cup brown sugar
1/4 cup yellow mustard
5 thick slices bacon, coarsely chopped (about 6 ounces)
10 cloves garlic, minced
4 canned chipotle chiles in adobo sauce, minced
3 ancho chiles, stemmed, seeded, and chopped
2 bay leaves
2 tablespoons chili powder
1 tablespoon kosher salt, plus additional for seasoning
Freshly ground black pepper
4 cups water

Steps:

  • For the rub: Mix the paprika, 1 tablespoon each of salt and black pepper, the brown sugar, and the cayenne. Rub spice mixture all over brisket, wrap tightly, and refrigerate overnight.
  • Soak the wood chips in water for at least 30 minutes before grilling. Prepare an outdoor grill with a medium to medium-low fire for indirect grilling.
  • For the sauce: Mix the tomato puree, beer, celery, onion, 1/2 cup of the vinegar, the brown sugar, mustard, bacon, garlic, chiles, bay leaves, chili powder, 1 tablespoon salt, and black pepper to taste in a large disposable aluminum pan. Put brisket in the sauce.
  • Throw a handful of drained wood chips on the hot coals, put the pan over the cooler side of the grill, and cover so the vent holes are directly over the brisket. Baste meat every 30 minutes, turning occasionally and adding water to the pan as necessary to keep meat partially submerged, until the meat is tender and an instant-read thermometer inserted in the thickest part registers 200 degrees F, about 3 3/4 hours. Replenish the charcoal as needed to maintain a medium to medium-low fire.
  • Transfer the brisket to a cutting board, tent with foil, and let rest for 20 minutes. Skim the fat from the braising sauce and stir in the remaining 1/4 cup cider vinegar and salt to taste. Reheat if necessary. Thinly slice brisket across the grain and arrange on a serving platter. Spoon some sauce over the meat and pass the rest at the table.

  • Mix rub the ingredients together in a mortar and pestle grinding till nicely combined but leaving some nice pieces of pepper and salt.
  • Lightly oil the meat with vegetable oil.
  • Spread the rub generously on beef brisket. Let it marinate on the meet overnight. Bring brisket to room temperature for 30 minutes before putting in the smoker.
  • Beer Mop Sauce:.
  • Mix ingredients in a pot and simmer for 20 minutes.
  • Fire up the smoker:.
  • Start up the smoker with your favorite wood.
  • Add water in the bottom which helps keep meat moist.
  • Place brisket in a 225 degree prepared smoker fat side down. Mop a nice amount of the mop sauce on and smoke for 1 hour.
  • Flip the brisket carefully not piercing the meat. Mop with more sauce.
  • After that, turn the brisket about every two hours and mop it every time you turn it." Keeping it moist.
  • It`ll be done when you give it a taste test. The outside of the meat will look charred. Don't worry. It's supposed to look that way.
  • There should be a pretty smoke ring. This could take anywhere from 6-12 hours. Repeat the mopping and flipping until the brisket reaches 180 degrees for slicing or 195 degrees for pulling and remove from smoker.
  • It which point you can let rest before cooking or wrap it tightly in a foil pan with the heat off for 3-4 hours as it father tenderizes.

1 cup yellow mustard
1/4 teaspoon ground black pepper
1/4 teaspoon sea salt
1/2 teaspoon hot sauce
3/4 cup cider vinegar
12 ounces beer
1/4 cup water
1/4 cup vegetable oil
1 tablespoon BBQ dry rub
2 tablespoons Worcestershire sauce
1 teaspoon coarsely ground black pepper
1/2 cup finely chopped onions
2 tablespoons butter
1 cup tomato sauce
1 cup ketchup
1/3 cup chili sauce
3/4 cup dark brown sugar
1/2 cup honey

  • Preheat charcoal smoker for half an hour. Soak the hickory chips for half an hour in water. Drain.

  • Remove brisket from foil and let stand 15 minutes. Slice brisket against the grain into 1/4-inch thickness. Top with Brisket BBQ Sauce.

  • Pat the brisket dry with a towel to remove any moisture. Generously rub the brisket with 1 cup of the BBQ Beef Coffee Cure , massaging all the spice into the meat; repeat with the remaining cure. The cure will soak up the liquid from the beef and form a crust. Place the meat on a large plate, cover with plastic wrap, and marinate in the refrigerator for at least 2 hours.
  • Prepare a smoker for hot smoking. The standard cooking time for brisket is 1 hour per pound, smoked fat side up, under dry, indirect heat at a steady temperature of 225°F. Place the brisket on the center rack of the smoker and smoke for 12 hours. This is slow cooking at its easiest-there's no need to check the meat at intervals.
  • After 12 hours, use a meat thermometer to check for an internal temperature of 185°F in the thickest side of the brisket. Once that temperature is reached, open the door of the smoker and let the meat rest for 30 minutes. This resting period allows the juices to settle. The internal temperature will continue to rise to 190°F.
  • While the meat rests, make the tomato and molasses barbecue sauce: Combine the ketchup, tomatoes, tomato paste, vinegar, mustard, granulated garlic, salt, pepper, and brown sugar with 1 1/3 cups water in a large stockpot over medium heat. Simmer for 20 minutes, stirring, until the sauce thickens slightly. Whisk in the molasses last (it will burn if added too early) and blend with an immersion blender until smooth. Season to taste.
  • Transfer the rested brisket to a cutting board, slice, and chop. The fully rested meat will have a distinct crust and will be tender and juicy inside. There should be a pink smoke ring beneath the crust.

1 green pepper, chopped
1 Tbsp cilantro

2-3 c reserved gravy/au jus from crock pot
2-3 Tbsp your fave BBQ sauce (I used Famous Dave's Sweet and Spicy)
4 slice lightly toasted rye bread with seeds (or not)
4 slice Swiss or sharp white chedder cheese to cover
fresh cilantro or parsley, for garnish
BEEF AND AU JUS - IF STARTING FROM SCRATCH
3 lb beef brisket or eye round
1 can(s) low sodium beef broth
1 can(s) water
1 pkg dry Italian salad dressing seasoning

  • 1. IF STARTING FROM SCRATCH, HERE'S HOW TO COOK THE CROCK POT BEEF: Place 3 lbs of beef into crock pot with beef broth, water and Italian seasoning. Cook for 10 hours on low. This beef and it's au jus can be used for a number of recipes, including chimichanga filling, tacos, shredded beef nachos, etc.
  • 2. With 1-1 1/2 lbs of shredded tender beef remaining in crock pot, remove enough liquid to keep it totally drenched but not too soupy. Put that liquid aside for another use.   • Place an oven rack in the center of the oven. Preheat the oven to 325 degrees F.

  • Brush 1/3 cup of the sauce over the surface of the brisket.

2 teaspoons celery salt
2 teaspoons ground black pepper
1 ½ teaspoons salt
1 teaspoon garlic salt
1 teaspoon onion salt
2 teaspoons Worcestershire sauce
3 pounds beef brisket
1 cup Russian dressing
1 cup hickory-flavored barbeque sauce

Steps:

  • Mix celery salt, black pepper, salt, garlic salt, and onion salt in a small bowl; add Worcestershire sauce. Spread mixture over beef brisket; transfer to a slow cooker.
  • Cook on Low until beef is tender, about 8 hours.
  • Transfer beef to a cutting board; shred into small pieces using 2 forks.
  • Measure 1/2 cup cooking liquid from the slow cooker into a saucepan. Mix in Russian dressing and barbeque sauce; bring to a boil.
  • Combine shredded beef and sauce mixture in the slow cooker. Cook on Low until flavors combine, about 1 hour.

4 lbs beef brisket, trimmed
2 tablespoons brown sugar
2 tablespoons kosher salt
4 tablespoons paprika
2 teaspoons granulated garlic
2 teaspoons onion powder
2 teaspoons black pepper
2 teaspoons cayenne pepper
2 teaspoons cumin
1 tablespoon mesquite wood chips
1 tablespoon apple wood chips

Steps:

  • Mix all ingredients and rub onto brisket. Place on a large sheet of plastic wrap, and wrap tightly. Place on a baking sheet and chill for 6 -8 hours.
  • Remove meat from refrigerator and bring to room temperature.
  • Prepare the smoker with the mesquite and apple wood chips. Line drip tray with foil, and place the meat on the rack.
  • Preheat the stovetop. Place smoker on stove top and smoke for 1 ½ hours at a medium to low heat setting.
  • Preheat oven to 275 degrees.
  • Remove meat from smoker and place in a covered roasting pan or wrap in heavy foil.
  • Bake for 3 hours. Remove meat from the oven and carve against the grain.
  • Serve with BBQ Sauce on the side for dipping.
  • Barbecue Sauce:.
  • ½ Tbsp vegetable oil.
  • ½ cup chopped yellow onion.
  • 1 tsp chopped garlic.
  • 1 cup ketchup.
  • 2 Tbsp dark brown sugar.
  • 1 ½ tsp molasses.
  • 2 Tbsp apple cider vinegar.
  • 1 Tbsp each lemon juice, orange juice, dry mustard, Worcestershire sauce, hot red sauce.
  • In a large saucepan, heat oil over a medium high heat, add onions, cook till soft, stirring - 4 minutes. Add garlic and cook for 1 minute. Add the rest of the ingredients and bring to boil - lower the heat to simmer and cook - stirring occasionally until sauce thickens - 15 - 20 minutes. Cool slightly before serving. Enjoy!

1/4 cup whole wheat flour
2 tsp. LEA & PERRINS Reduced Sodium Worcestershire Sauce
1/4 tsp. crushed red pepper
1-1/2 lb. small Yukon gold potatoes (about 8)
3 carrots, peeled, cut lengthwise, then crosswise in half
1 onion, cut lengthwise in half, then sliced crosswise
1 beef brisket (3 lb.)

Steps:

  • Whisk first 4 ingredients until blended.
  • Place vegetables in slow cooker; top with 1/2 cup barbecue sauce mixture and meat. Cover with lid. Cook on LOW 8 to 9 hours. Meanwhile, refrigerate remaining barbecue sauce mixture until ready to use.
  • Remove meat from slow cooker; place on cutting board. Cover; let stand 10 min. Meanwhile, use slotted spoon to transfer vegetables to platter. Whisk remaining barbecue sauce mixture into juices in slow cooker. Cook, covered, on HIGH 10 min. or until thickened.

1 red onion, divided
2 cups each shredded green and red cabbage
1/4 cup MIRACLE WHIP Dressing
1 bottle (19.5 oz.) HEINZ BBQ Sauce Texas Bold & Spicy, divided
1 Tbsp. oil
1 beef brisket (3 lb.), trimmed
1 can (14.5 oz.) fat-free reduced-sodium beef broth
2 cloves garlic, minced
12 kaiser rolls, partially split

Steps:

  • Heat oven 350ºF.
  • Cut half the onion into thin slices; place in large bowl. Add cabbage; mix lightly. Mix dressing and 2 Tbsp. barbecue sauce until blended. Add to cabbage mixture; toss to coat. Refrigerate until ready to use.
  • Heat oil in large skillet on medium heat. Add meat; cook 5 min. or until evenly browned on both sides, turning after 3 min. Transfer to 13x9-inch baking dish sprayed with cooking spray. Chop remaining onion piece; sprinkle over meat. Mix broth, 1/2 cup of the remaining barbecue sauce and garlic; pour over meat. Cover.
  • Bake 2-1/2 to 3 hours or until meat is done (160ºF). Remove from heat. Let stand 10 min. Shred meat; place in large bowl. Add remaining barbecue sauce; toss to coat.
  • Fill each roll with 1/2 cup meat mixture and 1/3 cup coleslaw just before serving.

6 cups hickory chips
8 to 9 pounds beef brisket, choice grade
Trim Tabb's Pig Powder, or your favorite BBQ dry rub
Wood Chick's Mustard Sauce, (Bottled Super Smokers)
Wood Chick's Beer Based Mop Sauce, recipe follows
Wood Chick's Brisket BBQ Sauce, recipe follows

Steps:

  • 1. Preheat charcoal smoker for half an hour. 2. Sprinkle brisket generously with the dry rub. Wrap in plastic and refrigerate overnight. 3. Remove the brisket from refrigerator 1 hour prior to cooking and let stand at room temperature. Mop the entire brisket with Mustard Sauce. Place brisket fat side up in a smoker at a preheated temperature of 200 to 225 degrees F. Add 3 handfuls of pre-soaked hickory chips to preheated charcoal (should be at the gray stage). After 3 hours, add another 3 handfuls of chips and mop with Beer Based Mop Sauce. 4. After 2 more hours, place brisket on 2 pieces of heavy-duty foil and pour 1/4 cup Beer Based Mop Sauce on top of brisket and seal tightly. Continue to cook another 2 to 4 hours, or until internal temperature reaches 185 degrees F. 5. Remove from foil and let stand 15 minutes. Slice brisket against the grain into 1/4-inch thickness. Top with Brisket BBQ Sauce. Mix all ingredients in a medium saucepan. Reduce heat to low and simmer for 10 minutes. Wood Chick's Beer Based Mop Sauce: 3/4 cup cider vinegar 12 ounces beer 1/4 cup water 1/4 cup vegetable oil 1 tbl BBQ dry rub 2 tbl Worcestershire sauce 1 tsp coarsely ground black pepper Mix all ingredients in a medium saucepan. Reduce heat to low and simmer for 10 minutes. Wood Chick's Brisket BBQ Sauce: 1/2 cup finely chopped onions 2 tabl butter 1 cup tomato sauce 1 cup ketchup 1/3 cup chili sauce 3/4 cup dark brown sugar 1/2 cup honey 1 cup white vinegar 1 tsp allspice 1 tbl dry mustard 2 tsp ground black pepper 2 tsp chili powder 3 tbl Worcestershire sauce 1 tsp garlic powder 1 tbl paprika 3 tbl lemon juice 3 tbl maple syrup In a medium to large saucepan, saute the onions in the butter over medium heat until soft. Add remaining ingredients. Bring mixture to a boil over medium high heat. Reduce heat to low and simmer for 20 minutes.

  • Unroll the brisket. Begin by dry rubbing the brisket with the spices. Do this the night before if you have time or at least two hours beforehand.
  • Place the (unrolled) brisket on a bed of chopped onions and pour in a small cup of water. Cover with a lid or foil and place in the oven.
  • SLOW cook the brisket for around 3.5 hours at 140ºC. Remove lid/foil and turn the oven up to around 180ºC.
  • You could add potatoes at this stage.
  • Cook the meat for a further half and hour then remove from the oven. Let it rest while the potatoes continue to cook until nice and crisp. Serve with sweetcorn and salad or beans and coleslaw.

I had a 5 pound Brisket in the freezer. I thawed it slowly in the Fridge for 2 days then took it out & marinated it in a 12 spice blend that I put together, & let it sit...

12 SPICE BLEND FOR BRISKET
3 Tbsp steak seasoning (similiar to montreal steak seasoning
1 1/2 Tbsp sumac or fresh grated lemon zest
11/2 Tbsp each -dried thyme, dry mustard powder,coarse grated black pepper
2 1/2 Tbsp cumin powder
1 Tbsp each rosemary & crushed red pepper flakes
3 Tbsp each mesquite flavor, granulated garlic, chili powder
3 Tbsp brown sugar firmly packed
MUSTARD BASE
1/2 c dijon mustard
1/2 c yellow mustard
8 clove garlic, minced
3 Tbsp chopped chive
1 Tbsp sweet basil
3 bay leaves crushed
IRISH BEER MOPPING MARINATE & BEEF BRISKET
5 lb beef brisket with fat on one side
3-4 sprigs fresh thyme, or 1 tsp. dried
1 Tbsp fresh chopped chive
2 Tbsp melted butter or canola oil
1/2 c apple cider vinegar
1 1/2 Tbsp 12 spice blend mixture
1 can(s) guiness draught beer 14.9 oz.
11/2 Tbsp liquid smoke
2 Tbsp dijon mustard
3 Tbsp brown sugar
1/2 c catsup

Steps:

  • 1. The longer you cook this brisket the more tender it becomes. The larger the brisket the longer the time needed to smoke. SOAK WOOD CHIPS OVERNIGHT.
  • 2. Combine all spices together in a large zip lock bag, then shake to blend througly together.
  • 3. Sprinkle liberally on all sides of brisket, DON'T BE AFRAID TO USE THE SPICE BLEND. Cover brisket with saran wrap and refrigerate for at least 8 to 10 hours, but preferably over night.
  • 4. REMOVE FROM FRIDGE, & ALLOW TO COME TO ROOM TEMPERATURE. This will ensure even cooking temperature and time. It took about 1 1/2 hours.
  • 5. Combine all of the ingredients for the mustard base in a medium size bowl, then blend together, and brush both sides of brisket with the mustard base.
  • 6. Prepare smoker according to Manufactures directions. My husband used APPLE WOOD CHIPS AND SOAKED THEM OVER NIGHT. When charcoal became white, he then added the wood chips which produced an abundance of smoke for the brisket. When grill reaches 225 degrees F. Then you add the Beef Brisket FAT SIDE UP. SMOKE FOR 3 HOURS.
  • 7. WHILE BRISKET IS SMOKING PREPARE THE BEER MARINADE MOPPING SAUCE. I got about a quart & put it in a quart jar. You can pour it from the jar into a small bowl, and when you are finished, you can refrigerate what is left and save for another time.
  • 8. AFTER THE FIRST 3 HOURS,PLACE THE BRISKET IN AN ALUMINUM PAN, THEN YOU BEGIN TO MOP OR BRUSH THE BRISKET WITH THE MARINATE ALL OVER. We did it about every 1/2 hour to 45 minutes or so. Cover the pan tightly with a lid or aluminum foil. Allow it to continue to cook until the internal temperature reaches 185 degrees F. about 1 1/2 to 2 additional hours. Longer if your brisket is 7 or 8 pounds.
  • 9. In lieu of making my own BBQ Sauce, I chose to use SWEET BABY RAYS HONEY BBQ SAUCE. But you can make your own if you so desire. After the brisket has reached 185 degrees F. you can baste the brisket with BBQ sauce if desired, and cook UNCOVERED for an additional 30 minutes or so. Allow brisket to rest at least 20 to 30 minutes before you slice and serve.
  • 10. My husband could not resist the temptation of tasting some before I had time to slice it all down, so he took some from the back end while I was waiting for it to cool down.
  • 11. The drippings that accumulated after brushing the Brisket, created a very flavorful sauce, you can pour it over the brisket after slicing if desired.

For the coffee rub:
1⁄3 cup finely ground dark-roast coffee
1⁄3 cup dark chili powder
1⁄3 cup smoked paprika
½ cup kosher salt
2⁄3 cup packed dark brown sugar
3 tablespoons sugar
2 tablespoons garlic powder
1 tablespoon ground cumin
1 teaspoon cayenne pepper
For the brisket:
12-pound whole beef brisket
For the tomato-and-molasses barbecue sauce:
2 cups ketchup
2 cups diced tomatoes
1 tablespoon tomato paste
1 1⁄3 cups distilled white vinegar
5 tablespoons Dijon mustard
4 teaspoons granulated garlic
4 teaspoons kosher salt
2 teaspoons black peppercorns, crushed
½ pound brown sugar
2⁄3 cup molasses
Salt and black pepper

Steps:

  • . Make rub: Mix all ingredients in a bowl, using your hands to break up any clumps. 2. Pat brisket dry with a towel. Massage 2 cups rub into brisket. (The rub will soak up any remaining liquid from beef and form a crust.) Place brisket on a large plate, cover with plastic wrap and marinate in the refrigerator at least 2 hours. 3. Prepare a smoker for smoking according to manufacturer's instructions, maintaining a steady temperature of 225 degrees. Place brisket, fat-side up, on center rack of smoker and smoke 12 hours, or 1 hour per pound. Leave smoker closed throughout; there is no need to check meat as it smokes. 4. After 12 hours, insert a meat thermometer into the thickest part of brisket. Internal temperature should read 185 degrees. Once that temperature is reached, open door of smoker and let meat rest 30 minutes. 5. Meanwhile, make barbecue sauce: Combine all ingredients except molasses in a large stockpot set over medium heat. Cook, stirring, until sauce thickens slightly, about 20 minutes. Whisk in molasses, then carefully transfer to a blender or use an immersion blender to purée until smooth. Season with salt and pepper to taste. 6. Transfer smoked brisket to a cutting board and cut according to instructions above. Serve sliced brisket with sauce on the side, and serve chopped brisket topped with sauce and a sprinkling of additional coffee rub on a toasted bun. -Adapted from "Smoke: New Firewood Cooking"

I got this recipe from a coworker, Julie B, and served it for a big family dinner. It's great for a large crowd. I served it with dollar rolls so people could make sandwiches, and would allow 3-4 people per pound of meat. I actually like it better without the gingersnap cookies. You actually make this in the oven, and then use the crock pot for serving. It also frees up your oven for those tasty side dishes!

4 lbs beef brisket, trimmed (3-5 lb brisket can be used)
1 1/4 ounces Lipton Onion Soup Mix (1-2 packets)
18 ounces barbecue sauce (I use Kraft Original BBQ, use your favorite)
1 (15 ounce) can cranberry sauce, jellied
12 gingersnap cookies (optional)

Steps:

  • Preheat oven to 250°.
  • Line roasting pan with enough aluminum foil to fully cover brisket (make sure the ends also have enough foil to keep the juices in the foil).
  • Lay the brisket flat in the pan with the fat side up.
  • Cover with soup mix.
  • Combine cranberry sauce and bbq sauce until blended and pour over brisket.
  • If using gingerbread cookies, pulverize in a food processor and spread over brisket.
  • Seal brisket inside foil, tenting the top up slightly.
  • Cook for 6-8 hours (can be done overnight). When fork slides into meat easily it is done.
  • Pour sauce into a container and serve as gravy on the side. Let the brisket cool until warm.
  • Shred with fork and place meat in a crock pot. One hour before serving, add 2 cups water and 1 cup sauce and turn crock pot to low heat.
