MOM'S BARBEQUE STYLE TURKEY

This is a great way to use that leftover turkey after the holidays. It's even better the next day. My mother handed this down, and it has always been a family favorite. We usually have this barbeque on a roll.

¼ cup butter
½ cup chopped onion
1 cup chopped celery
½ cup chopped green bell pepper
1 cup ketchup
3 tablespoons brown sugar
1 ½ teaspoons chili powder
1 tablespoon Worcestershire sauce
salt to taste
4 cups chopped cooked turkey

Steps:

  • Melt the butter in a skillet over medium heat. Place onion, celery, and green pepper in the skillet, and cook 5 minutes. Mix in the ketchup, brown sugar, chili powder, and Worcestershire sauce. Season with salt. Cook over low heat until bubbly. Stir in the turkey, cover, and simmer 30 minutes.

Steps:

  • Cook 4 chopped slices turkey bacon, 1 chopped onion, 3 chopped garlic cloves and 2 teaspoons thyme in vegetable oil in a large skillet, stirring, 5 minutes. Add two 15-ounce cans great Northern beans (drained and rinsed), 1 1/2 cups water, 1/2 cup ketchup, 1/3 cup maple syrup, 2 tablespoons yellow mustard, 1 tablespoon apple cider vinegar and 1/2 teaspoon pepper. Simmer over medium-low heat until thickened, about 20 minutes.

After Thanksgiving a lot of us have leftover turkey and sometimes I get tired of the soup, meatpie, etc solutions to the leftovers. Here is a recipe I devised with a little help from Southern Foods on the internet. I used Sweet Baby Ray's BBQ sauce and turkey from the carcass, but any meat would go well. Pork, beef, sausage or chicken would do very well, too. This goes well with coleslaw and rolls.

8 ounces cooked turkey
1/2 cup barbecue sauce
1 cup onion, chopped
1 tablespoon canola oil
1/2 cup green bell pepper, chopped
2 (15 ounce) cans black-eyed peas
3 tablespoons molasses
2 tablespoons barbecue sauce
1 teaspoon garlic pepper seasoning
1/2 cup bacon bits
2 tablespoons Worcestershire sauce

Steps:

  • In an oven-safe dutch oven saute the onions and bell pepper in the oil until soft.
  • Add the black eyed peas ( or beans of your choice) after draining off the top liquid.
  • Add the molasses, 2 Tbsp BBQ sauce, garlic pepper, bacon bits and Worchestershire sauce and mix well.
  • Place the dish in the oven, pre-heated to 350 degrees. Bake for 30 minutes, uncovered.
  • Remove from the oven, add the turkey meat to the top of the bean mixture, drizzle the 1/2 cup of BBQ sauce over the meat and place back in the oven.
  • Bake for an additional 15 minutes, uncovered.
  • Serve with coleslaw and rolls.

I have an excellent source for turkey recipes, since many of our neighbors are poultry farmers! These satisfying sandwiches, with their mildly tangy sauce, are a great way to use up leftover turkey from the holidays.

2 celery ribs, chopped
1/2 cup chopped onion
1/4 cup chopped green pepper
2/3 cup butter, softened and divided
1/2 cup ketchup
1/4 cup packed brown sugar
3 tablespoons Worcestershire sauce
1-1/2 teaspoons chili powder
1 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon hot pepper sauce
4 cups shredded cooked turkey
8 hamburger buns, split and toasted

Steps:

  • In a saucepan, saute the celery, onion and green pepper in 1/3 cup butter until tender. Add the next seven ingredients. , Bring to a boil. Reduce heat; cover and simmer for 5 minutes. Add turkey; heat through. Spread the cut side of each hamburger bun with 1 teaspoon remaining butter. Serve turkey mixture on buns.
