3 tablespoons butter
3/4 cup finely chopped onion
3/4 cup finely chopped celery
4 cloves garlic, finely chopped
2 tablespoons salt-free seasoning blend
1/2 teaspoon ground red pepper (cayenne)
8 oz peeled cooked crawfish tails, chopped
1 package (8 oz) cream cheese, softened
Celery sticks, if desired

Steps:

  • In 8-inch skillet, melt butter over medium-high heat. Cook onion, celery and garlic in butter 5 minutes, stirring frequently, until tender. Add seasoning blend and red pepper; cook and stir 30 seconds longer.
  • In medium bowl, mix vegetables and crawfish tails. Add cream cheese; stir gently to combine. Serve with celery sticks.

1 package (8 ounces) cream cheese, cubed
4 tablespoons butter, divided
1 large onion, chopped
2 celery ribs, chopped
1 large green pepper, chopped
1 pound cooked medium shrimp, peeled and deveined
2 cans (6 ounces each) crabmeat, drained, flaked and cartilage removed
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
3/4 cup cooked rice
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 teaspoon garlic salt
3/4 teaspoon hot pepper sauce
1/2 teaspoon cayenne pepper
3/4 cup shredded cheddar cheese
1/2 cup crushed butter-flavored crackers (about 12 crackers)

Steps:

  • Preheat oven to 350°. In a small saucepan, cook and stir cream cheese and 2 tablespoons butter over low heat until melted and smooth. , In a large cast-iron or other ovenproof skillet, saute onion, celery and green pepper in remaining butter until tender. Stir in shrimp, crab, soup, rice, mushrooms, garlic salt, pepper sauce, cayenne and cream cheese mixture., Combine cheddar cheese and cracker crumbs; sprinkle over top. Bake, uncovered, until bubbly, 25-30 minutes.

Nonstick cooking spray
4 (7 to 9-ounce) fresh Pacific cod fillets (ling, rock, true cod)
Salt and freshly ground pepper
1 tablespoon butter
1/3 cup chopped green onions
1 teaspoon chopped garlic
1 tablespoon Creole seasoning
3/4 cup heavy cream
3/4 cup crawfish, cooked (can substitute cooked shrimp)
Chopped fresh parsley leaves, for garnish

Steps:

  • Preheat a grill or grill pan and spray with cooking spray. Season fish with salt and pepper and place fish on grill; cook for 5 to 6 minutes on each side or until flakey.
  • Meanwhile, make sauce: melt butter in a large skillet over medium-high heat. Stir in green onions, garlic, and Creole seasoning. Add cream and lower heat to medium. Stir until mixture is reduced by half, about 5 minutes. Add crawfish and stir for about 30 seconds or until just heated through. Season with salt and pepper, to taste.
  • To serve, plate fish and spoon Crawfish Bayou Sauce over center of fish. Garnish with parsley.

1 lb peeled louisiana crawfish tails or shrimp or crab meat
1 large loaf french bread
1/2 stick butter
1/2 c onions, finely diced
1/4 c red bell pepper, finely diced
1 bunch green onions, thinly sliced
1 Tbsp garlic, minced
1/2 - 1 tsp cajun seasoning (tony chachere's)
1/3 c mozzarella or colby jack cheese,shredded
1/3 c cheddar cheese, shredded

Steps:

  • 1. Slice French bread in half lengthwise and scoop out the inside of the loaf. Set aside.
  • 2. In a large skillet, melt butter over medium-high heat. Sauté onions, bell peppers, green onions, and garlic until tender and translucent.
  • 3. Blend in cajun seasoning, add cheeses and crawfish / shrimp / crab meat and blend until melted. Taste and adjust seasoning as needed.
  • 4. Spread crawfish mixture inside the bread then put halves back together.
  • 5. Wrap it in foil and bake at 350°F for 20-30 minutes.
  • 6. Let the bread sit for 10-15 minutes then unwrap and cut the stuffed bread into 2 " slices and serve hot.
  • 7. *Notes: An equal amount of (71-80, 81-90 count) shrimp works great in this recipe, too. *Tip: to make individual breads use pastry dough and cut into circles. Stuff half of the dough with filling and fold over to make a half-circle. Seal edges well. Bake bread according to pastry dough directions or deep fry until golden.

6 cups sliced yellow squash
2 cups water
1 purple onion, peeled and chopped
1 green bell pepper, seeded and chopped
1 cup chopped celery
1 garlic clove, minced
1/2 cup unsalted butter
1 egg, beaten
1 cup seasoned dry bread crumb
1/3 cup grated parmesan cheese
1 teaspoon beau monde seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon dried crumbled thyme
1/8 teaspoon cayenne pepper
1/8 teaspoon hot sauce
2 cups peeled crawfish tails

Steps:

  • Preheat the oven to 350 degrees.
  • Lightly grease a 2-quart casserole dish and set aside.
  • In a Dutch oven over med-high heat, bring the squash and water to a boil.
  • Cook 10 minutes; drain and set aside.
  • Decrease heat to medium and add the onions, peppers, celery, garlic, and butter.
  • Saute 4 minutes.
  • Remove from the heat and add to the squash, stirring gently.
  • Add the egg, breadcrumbs, cheese, Beau Monde, salt, pepper, thyme, cayenne, hot sauce, and crawfish.
  • Stir to combine.
  • Spoon into the prepared baking pan and bake 30 minutes.

1/2 teaspoon garlic salt

  • Melt butter in skillet over medium-high heat. Add seasoning blend and crawfish; sauté 2-3 minutes while stirring. Add garlic salt and pepper.
