This chicken and broccoli linguine with lemon butter basil sauce recipe is creamy without any milk or cream. Full of bright, fresh flavor and packed with good for you broccoli.

8 oz. linguine
4 cups broccoli florets
2 tablespoons butter (divided)
1 tablespoon extra-virgin olive oil
1 lb. boneless skinless chicken breasts (cut into 1" cubes (or thighs))
kosher salt (to taste)
black pepper (to taste)
juice and zest of one lemon
2 cloves garlic (minced or finely chopped)
1/2 cup dry white wine (such as pinot grigio or sauvignon blanc)
1 cup chicken stock/broth
1/4 cup Pecorino Romano cheese (finely grated, or parmesan)
2 tablespoons fresh basil (cut chiffonade or chopped)
1/4 cup slivered almonds (or sliced)
extra salt and pepper, lemon zest, Romano cheese, and fresh basil (for serving (optional))

Steps:

  • Cook the pasta according to directions in a large pot of heavily salted water. 3 minutes before it's al dente, remove 1/2 cup pasta water and reserve for later. Add the broccoli florets to the water and boil with the pasta. Drain the pasta and broccoli until it's almost cooked, just before al dente.
  • Meanwhile, season cubed chicken breasts liberally with salt and pepper, as well as the zest from the lemon.
  • Sauté the chicken in a large skillet over medium high heat in 1 tablespoon butter and 1 tablespoon olive oil, until browned and fully cooked. Don't worry about it sticking to the bottom of the pan- you'll deglaze it in a moment.
  • Remove the chicken and set aside on a plate. Add the minced garlic (2 cloves) to the pan and sauté until fragrant (about 30 seconds).
  • Add the white wine (1/2 cup) to the pan to deglaze it, using a wooden spoon to scrape up any browned bits from cooking the chicken and garlic. Turn heat to medium and simmer until almost all of the liquid from the wine is gone.
  • Add the chicken stock (1/2 cup) and stir.
  • Add the drained linguine and broccoli, as well as the 1/4 cup reserved pasta water. Continue cooking over medium heat until sauce thickens and pasta cooks all the way through- about 2 minutes. Add the cooked chicken back in.
  • Remove from heat and stir in lemon juice, remaining 1 tablespoon butter, fresh basil (2 tablespoons), Pecorino Romano cheese (1/4 cup), and slivered almonds (1/4 cup). Stir until cheese has fully melted.
  • Serve immediately with extra cheese, lemon zest, fresh basil, and/or salt and pepper, if desired.

This is easy and my kids love it. I've also made it with cubed pork from cheap pork chops. You can spice this dish up with crushed red pepper flakes. Serve over rice. Don't substitute dried basil, though! It has to be fresh! And though it sounds like a lot of basil, that makes the dish.

1 tablespoon soy sauce
2 tablespoons water
1 tablespoon white sugar
2 pounds skinless, boneless chicken breast halves, cut into small pieces
1 tablespoon vegetable oil
5 green onions, sliced
3 cloves garlic, chopped
3 tablespoons vegetable oil
2 (6 ounce) bags fresh baby spinach leaves
1 cup thinly sliced fresh basil

Steps:

  • Combine soy sauce, water, and sugar in a bowl.
  • Marinate chicken in soy sauce mixture for 30 minutes.
  • Heat 1 tablespoon oil in a large skillet or wok over medium heat.
  • Cook and stir green onions in oil for 1 minute. Add garlic and cook and stir for 1 minute. Transfer to a small bowl.
  • Pour 3 tablespoons oil into the skillet. Cook and stir chicken and marinade until chicken is no longer pink in the center and juices run clear, about 5 minutes.
  • Add spinach leaves to chicken. Cover for 4 minutes stirring occasionally.
  • Stir green onion mixture into chicken and spinach; cook to reheat onions, 1 to 2 minutes.
  • Stir in basil and cook until heated, 1 to 2 minutes. Serve!

1/2 cup diced plum tomatoes
2 tablespoons diced red onion
1/4 cup sliced, drained sweet pimientos
1/4 cup snipped fresh basil leaves
1/2 teaspoon balsamic vinegar

3/4 pound boneless, skinless chicken breasts
Olive oil spray
Toasted Almond Broccoli, recipe follows
4 tablespoons sliced almonds
1/2 pound broccoli florets (4 cups)
2 teaspoons olive oil

Steps:

  • A fresh tomato-basil relish tops this simple chicken dish. The broccoli takes only minutes to cook in a microwave oven. It's topped with toasted almonds.
  • Mix tomatoes, onions, sweet pimientos, and basil together in a small bowl. Add vinegar and toss to mix. Add salt and pepper, to taste. Set aside.
  • Place chicken between 2 pieces of waxed paper or aluminum foil and flatten with a meat mallet or the bottom of a heavy skillet to 1/2-inch thick.
  • Heat a large nonstick skillet on medium-high heat and spray with olive oil spray. Add chicken and saute 3 minutes per side. Sprinkle salt and pepper, to taste, on the cooked sides. Divide between 2 dinner plates and spoon the tomato relish on top.
  • Heat a nonstick skillet on medium heat and add almonds. (This can be done in the same skillet used for the chicken.) Saute 1 minute or until almonds are golden, not brown. Remove and set aside.
  • Steam the broccoli in a collapsible steamer, set up in a pot filled with 1 inch of water. Alternatively, place broccoli in a microwave-safe bowl and microwave on high for 4 minutes. Remove and add oil and salt and pepper, to taste. Toss well. Sprinkle almonds on top.

1 chicken (about 2 1/2 to 3 lb.)
2 tablespoons unsalted butter, softened
1/4 cup chopped fresh basil
1/4 cup chopped fresh parsley
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 cup fresh basil leaf (or other fresh herbs)
30 cloves garlic, unpeeled
1/4 cup lemon juice
2 cups chicken stock or 2 cups low sodium chicken broth
salt & freshly ground black pepper
fresh basil leaf (to garnish)

Steps:

  • Preheat the oven to 350 degrees.
  • Remove the fat, neck, liver and gizzards from the body cavity, then rinse and pat the chicken dry.
  • Gently separate the skin from the flesh, running your fingers from the front to the back of the chicken and along the leg and thigh, being careful not to rip the skin or detach it from the bird.
  • Mix the butter, chopped basil, parsley, salt and pepper together in a small bowl.
  • Rub half of the butter mixture under the loosened skin and then tuck 1/2 of the whole basil leaves under the skin; be sure to get it under the skin around the leg and thigh.
  • Put 4 of the garlic cloves into the body cavity of the chicken and scatter the rest in the roasting pan.
  • Add the lemon juice and stock.
  • Place the chicken, breast-side up, on top of the garlic and stock.
  • Roast in the oven, basting occasionally with the pan juices for 1 hour, or until the juices run clear when the thickest part of the thigh is pierced.
  • Transfer the chicken to a heated platter and tent with foil to keep warm.
  • Pour the juices with the garlic cloves into a blender and puree the mixture.
  • (The garlic skins will remain whole.) Strain the puree through a sieve into a medium-sized saucepan, pressing on the garlic skins with the back of a spoon.
  • Bring the liquid to a simmer over medium heat, stirring occasionally, about 3 minutes, and add salt and pepper to taste.
  • Carve the chicken and serve drizzled with the sauce and garnished with fresh basil leaves.

CREAMY PASTA WITH CHICKEN, BROCCOLI AND BASIL - LOW FAT VERSION



Creamy Pasta With Chicken, Broccoli and Basil - Low Fat Version image

This comes from a Pam Anderson recipe. I love creamy pastas like alfredos, etc... but don't like all the fat. This recipe is a great solution. By using 2 percent evaporated milk, instead of heavy cream, the fat content is cut considerably. The flavor and consistency is still wonderful, in my opinion. I love this recipe because: it's lower in fat; you can use left-over chicken (or cooked rotisserie chicken); cooking the broccoli in the same pot as the pasta saves an extra pot to wash, it's an easy one-dish meal! There are many variations you could try with this recipe, too. Notes: 1.this recipe calls for diced tomatoes - if you'd prefer a more traditional alfredo-type sauce, I think you could probably omit the tomatoes and it would be just fine. 2. Also, if you like your pasta spicier you could add more red pepper flakes than the amount called for. 3. I find it very helpful to have all my ingredients prepped/chopped and ready before I start cooking - especially for this recipe. 4. Make sure you reserve about a cup of the pasta cooking water - it helps to thin out the finished product, if necessary. Have fun and enjoy!

1 lb dry pasta (I prefer fettucine or spaghetti noodles)
1 tablespoon salt
3 cups broccoli florets
1 cup chicken broth
1 cup 2% evaporated milk
2 large garlic cloves, minced
1 1/2 tablespoons butter (I use unsalted)
3 tablespoons all-purpose flour
1/4 cup parmesan cheese, grated, plus extra for sprinkling
2 cups shredded cooked chicken breasts (I usually add even more)
1/2 cup drained petite diced tomato
1/4 cup chopped fresh basil
1/2 teaspoon hot red pepper flakes (or to taste)

Steps:

  • Bring about 2 quarts of water to a boil - add a tablespoon of salt to the boiling water.
  • Add pasta and use the cooking time given on the package to cook your pasta al dente. Stir frequently at first to prevent pasta from sticking.
  • Add the broccoli to the boiling pasta water during the last 5 minutes of cooking.
  • Meanwhile, microwave broth, milk and garlic in a microwave-safe bowl until steamy hot (approx. 3 to 4 minutes). Then let it stand for a few minutes.
  • Put butter in a saucepan over low heat.
  • After butter melts, whisk in flour, then hot milk mixture. Whisk constantly over medium-low to medium heat until sauce thickens. This should take about 1 to 2 minutes. You judge as to when the sauce thickens up.
  • Stir in parmesan, cooked chicken, tomatoes, basil and red pepper flakes.
  • Salt and pepper to taste and let simmer for about 5 minutes to blend flavors.
  • Drain pasta and broccoli, *reserving 1 cup pasta cooking liquid* and return to pasta pot.
  • Pour cream sauce over pasta, adding enough reserved cooking liquid to moisten.
  • Toss and serve immediately with a light sprinkling of parmesan.
  • Enjoy!

2 cups broccoli, chopped to bite size

  • Fry garlic until fragrant.
  • Add onions and chicken.
