OLD FASHIONED LEMON (CITRUS) BARLEY WATER
I love this drink so couldn't believe it when I saw it wasn't on Zaar. This is from the back of a packet of Pearl Barley. You can also experiment with a mixture of other citrus juices such as lime or grapefruit.

Steps:
- Rinse the barley well.
- Cover barley in a pot with cold water & bring to the boil, drain.
- Return barley to saucepan with the lemon rind & 10 cups water, cook slowly for 1 hour.
- Add the lemon juice & sugar and stir until sugar has dissolved.
- Strain and chill to serve.
- Discarded barley can be mixed with some dried fruit & nuts and warm milk and makes a great breakfast.

- Place the water and barley into a medium saucepan; cover, set over high heat and bring to a boil. Once the barley comes to a boil, decrease the heat to low and simmer for 30 minutes. While the liquid is cooking, peel the lemons, being careful not to cut into the white pith. Juice the lemons and place the juice along with the peel into a 3-quart pitcher and set aside.
- After 30 minutes, strain the barley water through a fine mesh strainer into the pitcher. Discard the barley. Add the honey and stir to combine. Refrigerate until chilled.
REFRESHING LEMON BARLEY WATER
Lemon Barley water is an old fashioned British tonic that was given to the weak as an alternative source of nourishment. Now most people just drink it because they like it! Some recipes use sugar in their recipes however honey gives it a more intense flavor. If you have any fresh ginger handy, finely grate about 1 tablespoon of it and boil it with the barley for a gingery kick. Found on the internet. Enjoy!

- Place the barley in a sieve and rinse under cold water until water runs clear.
- Place barley in a saucepan with lemon peel and 6 cups of water.
- Bring to the boil over medium heat. Once boiling, turn down and simmer for 15-30 minutes then strain mixture into a heatproof bowl. Discard the barley.
- Add honey to bowl and stir to dissolve. Stir in lemon juice and then let mixture cool to room temperature.
- Pour into bottles and refrigerate until chilled.
BARLEY WATER
From "To Set Before a Queen"--a cookbook written by a former cook for Princess Elizabeth's household (Queen Elizabeth before she was crowned, that is). It's an interesting cookbook, with some good recipes and some interesting anecdotes. She claims that the royal family were all "addicted" to this recipe. She also says that this is the recipe she was given to use at Clarence House. I've tried it and like it quite well myself. Posting here as it's an older cookbook and I don't want to lose the recipe. Since the rinds are used, it's best if you can find organic fruits without oils or waxes or chemicals on the rinds. Failing that, be sure to clean them very well--I soak them in vinegar water, then rinse them under very hot water. I can't recall the amount you get at the end, so I am estimating. Times don't include cooling time.

- Place barley in a large saucepan. Pour boiling water over and simmer over low heat, covered, for about 1 hour.
- Squeeze juice from fruit, reserving rinds.
- Strain water from cooking the barley into a large bowl. Add the rinds of 1 lemon and 3 oranges. Add sugar. Allow to sit until completely cooled.
- Strain liquid again to remove rinds. Add juices. Transfer to a jug or bottle and store in refrigerator.

- Place 4 1/2 cups water in a heavy pot with the barley and bring to a boil. Reduce the mixture by 50% over high heat. Strain the liquid into a clean glass container. Mix in the lemon or lime juice and honey, stirring well.
- Serve well chilled.
