Don't judge a book by it's cover - this Butternut Squash and Turkey Casserole may not look like much, but it's packed with flavor and a delicious way to use up turkey leftovers.

Number Of Ingredients 10

1 medium butternut squash (2 to 2 1/2 lbs)
2 tablespoons butter
1 cup diced onion
2 cups seasoned salad croutons
1/2 teaspoon salt
1/2 teaspoon poultry seasoning
1/2 teaspoon pepper
3 cups cubed, cooked turkey
1 cup chicken broth
1 cup shredded cheddar cheese

Steps:

  • Preheat the oven to 350ºF. Cut the butternut squash in half lengthwise and scoop out all of the seeds. Place it in a baking dish, cut side down. Fill the dish with about 1/2" of hot water. Bake, uncovered, for 45 minutes.
  • Drain the water from the dish and turn the squash cut side up. Return to the oven and continue to bake until soft, 10-15 minutes. Remove from the oven and allow to cool slightly. Scoop the flesh out of the squash and place in a bowl. Mash, and then set aside.
  • Melt the butter in a sauté pan. Add the onion and cook until soft. Stir in the croutons, salt, poultry seasoning and pepper. Stir and cook for 2-3 minutes. Stir in the turkey, chicken broth, and reserved squash and cook until heated through.
  • Grease a 1 1/2 to 2 quart baking dish. Transfer the squash mixture to the dish and bake uncovered for 20 minutes. Sprinkle the top with the cheese, then return to the oven to bake until the edges are bubbling and the cheese is melted, 5 to 10 more minutes.

1 tablespoon olive oil
1 pound lean ground turkey
2 cups cubed butternut squash
1 onion, chopped
1 cup 1% milk
1 cup shredded mozzarella cheese
¼ cup butter, melted
2 eggs
½ teaspoon salt
¼ teaspoon ground black pepper
1 cup crushed buttery round crackers (such as Ritz®)

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch square baking dish.
  • Heat olive oil in a skillet over medium heat; cook and stir ground turkey until crumbly and browned, 5 to 10 minutes. Add butternut squash and onion to ground turkey; cook and stir until squash is slightly tender, 5 to 10 minutes. Drain any excess grease from skillet.
  • Whisk milk, mozzarella cheese, butter, eggs, salt, and pepper together in a bowl; stir into turkey mixture. Transfer squash-turkey mixture to the prepared baking dish. Sprinkle crackers over squash-turkey mixture.
  • Bake in the preheated oven until cooked through and bubbling, 25 to 30 minutes.

2 teaspoons olive oil
1 medium green pepper (seeded and diced)
1/2 medium onion
1/2 cup pearl barley, rinsed and drained
1 teaspoon dried sage
fresh ground pepper
1 (15 ounce) can reduced-sodium fat-free chicken broth
1 cup cubed cooked turkey breast (1/2 pound) or 1 cup leftover turkey breast (1/2 pound)
2 medium butternut squash (about 1 1/2 pounds halved lengthwise 2 medium butternut squash (about 1 1/2 pounds peeled 2 medium b)
1/2 cup crumbed feta cheese

Steps:

  • Coat a 4-quart baking dish with canola oil spray.
  • In a large saucepan, hear the olive oil over medium-high heat. Add the bell pepper and onion. Sauté for 2 minutes. Add the barley, sage, and black pepper and stir to combined well. Add the broth and bring to boil. Reduced the heat to low and simmer, covered, for 45 minutes. Add the turkey and squash and continue to simmer for 15 minutes more or until all the broth is absorbed and the squash is tender. If the mixture seems too dry, add an additional 1/4 cup of broth or water.
  • Preheat oven to 350°F.
  • Transfer the mixture to the prepared baking dish and top with cheese. Bake, uncovered, for about 30 minutes, until the cheese is golden.
  • Make 4 servings.

This stuffed butternut squash is a great tasting fall dish I've been making for years. It's pretty easy to make and makes for a very filling meal.

2 (1 1/2) pounds butternut squash, halved and seeded
2 teaspoons olive oil
½ pound smoked turkey, diced
½ cup minced yellow onion
1 green bell pepper, diced
1 teaspoon dried sage
¼ teaspoon ground black pepper
2 cups chicken broth
¾ cup quick-cooking barley
⅓ cup sweetened dried cranberries
4 tablespoons crumbled feta cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Bring a large pot of water to a rapid boil. Boil squash halves in the water for 15 minutes. Drain and let cool, about 10 minutes.
  • Scoop flesh from each half, leaving about 1/2 inch flesh with skin. Chop scooped flesh into a small dice and set aside. Place squash halves scooped-sides up onto the prepared baking sheet.
  • Heat oil in a large saucepan over medium heat. Add turkey, onion, bell pepper, and squash cubes. Saute for 3 minutes. Add sage and black pepper; stir to coat. Pour in broth and bring to a boil. Add barley and return to the boil. Reduce heat to low. Cover and cook until barley is tender and liquid is absorbed, about 10 minutes. Stir in cranberries. Spoon barley mixture into squash halves on the baking sheet. Top with feta cheese.
  • Bake in the preheated oven until cheese is golden, about 30 minutes.

Swap rice for barley to make this easy squash 'risotto' with spinach and sage. It's healthy and low in calories and fat - perfect for a quick supper

2 tsp olive oil
1 large shallot or small onion, finely chopped
300g squash or pumpkin, cut into 1cm cubes
2 garlic cloves, crushed
small handful of sage leaves, finely chopped
½ tsp ground mace or a good grating of nutmeg
160g spinach leaves
2 x 400g cans barley in water, drained
300ml hot vegetable stock
40g parmesan or vegetarian alternative, finely grated

Steps:

  • Heat the oil in a deep frying pan over a medium heat, and fry the shallot with a pinch of salt for 5 mins until soft. Add the squash, garlic, sage and mace, and fry, stirring continually, for another 6-8 mins until the squash is starting to soften and the garlic is fragrant.
  • Tip in the spinach and barley with some seasoning and the stock. Bring to a simmer and cook for 4-5 mins until the spinach has wilted. Add a splash more stock or water, if you like. When the 'risotto' is thick and creamy, taste to see if it needs a little more mace or nutmeg and seasoning. Stir in most of the parmesan, then top with the remaining parmesan and grind over some black pepper to serve.
