BARLEY SIDE DISH

One of our family favorites. Goes great with Steak and is a great alternative to potatoes.

Number Of Ingredients 7

1 cup pearl barley
1 tablespoon butter
1 small onion, minced
2 cans beef broth
1 4-oz can mushrooms, plus liquid
1/4 teaspoon nutmeg
salt to taste

Steps:

  • 1. Melt butter in a frying pan. Add the onion and barley and cook until onion is tender and barley is lightly browned.
  • 2. Add the beef broth, canned mushrooms with liquid and nutmeg. Put all ingredients in a large baking dish.
  • 3. Bake, uncovered in a 350 degree oven for 60 plus minutes, or until all liquid is absorbed. In my oven, it takes at least 75 minutes. This is a great alternative to potatoes.

1/4 cup olive oil
1 lb fresh mushrooms, sliced
1 cup onion, chopped
1 tablespoon garlic, chopped
2 cups quick-cooking barley
4 cups water
1 tablespoon chicken bouillon

Steps:

  • Saute mushrooms, onions, and garlic in olive oil. When tender, add barley, water and boullion. Bring to a boil, then simmer for 10-15 minutes until barley is softened.
