EASY CHEESY BROCCOLI BAKE
Fresh broccoli and cheese baked casserole side dish with a creamy homemade cheese sauce topped with butter crackers

Steps:
- Preheat oven to 350°F.
- Heat a large skillet over medium heat.
- Add two tablespoons of butter and the vegetable oil to the skillet, then add the broccoli and onion. Saute for ten minutes. Stir occasionally.
- Transfer the cooked vegetables to a rectangle baking dish.
- Return the skillet to the burner to make the cheese sauce.
- Make a roux by adding ½ a stick of butter to the skillet then mix in the flour. Cook the flour mixture for about 3 minutes.
- Next, add the milk to the flour mixture and combine.
- Stir constantly and simmer until the mixture thickens to make a white sauce.
- Season with salt, pepper and garlic powder.
- Add the grated cheese and stir to combine. Simmer until the cheese has melted and the sauce is smooth.
- Pour the cheese sauce over the vegetables in the baking dish.
- Melt two tablespoons of butter in the microwave.
- Crumble butter crackers in a small bowl then pour the melted butter over the crackers and stir to combine.
- Top the casserole with the buttery cracker crumbs.
- Bake 25-30 minutes.

CHEESY CHEDDAR BROCCOLI CASSEROLE

- Preheat oven to 325°. In a large saucepan, combine soup, sour cream, 1 cup cheese and 1-1/4 cups onions; heat through over medium heat, stirring until blended, 4-5 minutes. Stir in broccoli. Transfer to a greased 2-qt. baking dish., Bake, uncovered, until bubbly, 25-30 minutes. Sprinkle with the remaining cheese and onions. Bake until cheese is melted, 10-15 minutes.

BARB'S CHEESY BROCCOLI
From a Campbell's Soup recipe pamphlet. May substitute fiesta nacho cheese soup for the cheddar cheese soup to mix it up.

- 1. Mix soup and milk in a 2-qt microwave-safe casserole. Add broccoli florets. Cover.
- 2. Microwave on high 8 minutes or until broccoli is tender-crisp, stirring once.
- 3. Season with salt and pepper, to taste.
BARB'S CHEESY BROCCOLI BAKE
This is a recipe I got from a co-worker almost 20 years ago. I checked and saw many that were similar, but didn't have exactly this recipe. I love it so much and so does my family. Enjoy! P.S. I will add pictures soon.

- 1. Preheat oven to 350. Start cooking rice until done and set aside.
- 2. Cook broccoli until barely tender. I usually just microwave. Then drain well and set aside.
- 3. Stir soup and sourcream together in larger bowel.
- 4. Add remaining ingredients to soup and sour cream mixture (rice, broccolli, chunk chicken).
- 5. Spoon mixture into a 1 1/2 qt. casserole. Sprinkle with buttered breadcrumbs.
- 6. For buttered breadcrumbs I have used a toaster oven or microwave. Added slices of butter to top of bread crumbs and toast or microwave until slightly melted, then use fork to mix together. The amount of butter and breadcrumbs is to taste. I like a lot of buttered breadcrumbs for my topping.
- 7. Bake 30-35 minutes uncovered.
BROCCOLI CHEESE BAKE
This is a great casserole that I threw together one day when a friend requested Broccoli au Gratin for her birthday dinner. This is a great idea for those who aren't big fans of bread crumbs. Also, the eggs can be taken out for a great sauce and using skim milk and fat-free cheese works well, too. It's basically a great recipe that can be easily altered according to taste. Enjoy!

- Preheat oven to 325 degrees F (165 degrees C).
- Place broccoli in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain.
- Melt butter in a medium saucepan over medium heat and add flour; cook until bubbly. Stir in onion and gradually add milk, stirring well. Bring to a boil and cook for 1 minute. Remove from heat and season with salt and pepper. Stir in cheese and eggs; mix well. Combine mixture with broccoli and transfer to a 9 x 13 inch casserole dish.
- Bake in preheated oven for 30 minutes.

AWESOME BROCCOLI-CHEESE CASSEROLE
My mom used to make this easy recipe every Thanksgiving when I was little. We kids could never get enough! It was our very favorite Thanksgiving vegetable. If you have children, or have some coming to visit you as guests this Thanksgiving, I guarantee that they will eat (and enjoy) this veggie dish! Even though I rarely cook with canned condensed soups, I still make this yummy broccoli casserole during the holiday season. It's fabulous with a Christmas ham and potatoes au gratin too. Mmmmmmm!

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13 inch baking dish.
- In a medium mixing bowl, whisk together condensed soup, mayonnaise, egg and onions.
- Place frozen broccoli into a very large mixing bowl. (I like to use my large stainless steel bowl to mix this recipe thoroughly.) Break up the frozen broccoli. Using a rubber spatula, scrape soup-mayonnaise mixture on top of broccoli, and mix well. Sprinkle on cheese, and mix well. Spread mixture into prepared baking dish, and smooth top of casserole. Season with salt, pepper and paprika.
- Bake for 45 minutes to 1 hour.
