BARBIE'S TUNA SALAD
This is a really great tuna salad recipe I got from a friend who used it in her catering service business many years ago. The secret ingredients are the curry and Parmesan cheese! Odd combinations but this makes a terrific tuna sandwich! She used it for an appetizer with gourmet crackers and people always wanted her recipe. I have never tasted another tuna salad quite like this one, and it has been my favorite recipe for tuna salad for many, many years.

- In a medium bowl, stir together the tuna, mayonnaise, relish, Parmesan cheese, and onion flakes. Season with parsley, dill, curry powder, and garlic powder. Mix well and serve with crackers or on a sandwich.

MERMAID BARBIE - TUNA TARTARE

- To make the tortilla disks, take a round pastry cutter and cut out small 2-inch disks from the flour tortillas. Heat a large skillet over medium heat, add the canola oil. When the oil is hot, add the tortilla disks, turning quickly until golden brown. Remove to paper towels and allow to cool.
- To make the tuna tartar: In a medium bowl, mix all the other ingredients together, except the cilantro, and allow to marinate 5 minutes before you serve. Place in the refrigerator until ready to serve.
- To finish, strain the excess liquid from the tuna mixture. Place a little of the tuna mixture on top of each tortilla disk, garnish with cilantro leaves and serve on a platter.

THE BEST TUNA SANDWICH
Years ago, there was a deli in the town I worked and everyday faithfully, I would stop there for the Tuna sandwich (which was the best ever!) I became friends with the older lady that always worked the deli and she gave me the recipe. I will never forget what she told me.."The more colors in your Tuna, the better the flavor" sadly, the deli went out of business, but I never forgot her recipe. This tuna has lots of veggies in it, but if you dice them very small, it's so good! Remember, Tuna is a finicky meal.. too much mayo makes it watery and too little makes it dry and fishy.. be sure to use your best judgement and liking. (This recipe makes a lot) you can lessen it

Steps:
- Drain tuna very well and add to large bowl
- dice all of the above very small as indicated and add to tuna.
- I add about 3 -4 heaping kitchen sized tablespoons of Mayo into the tuna you may have to add a little more or a little less based on your preference
- add a few shakes of black pepper and salt (opt).
- Chill in airtight container in fridge. The longer you let it chill, the better the flavor. This can be served on pretty much any kind of bread. My personal favorite, onion rolls or seedless rye!
