This is one of my "hamburger helper" type meals. Its fast and you can make it on that night you forgot to take something out. I always keep these ingredients in the cabinet anyway. I now make my black beans Recipe HERE and I usually use frozen corn. You can adjust it how you want. I usually start the rice and sausage at the same time and dinner is done in 20 minutes. An easy one skillet meal so little to clean up!

1 (14 ounce) package kielbasa
1 large onion, chopped
1 tablespoon olive oil
1 (10 ounce) can black beans with juice
1 (10 ounce) can diced tomatoes
1 (10 ounce) can corn, drained
1 (10 ounce) package yellow rice, cooked according to directions
1/2 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt and pepper

Steps:

  • Heat oil on high, add the kielbasa and onion. Cook until the onion is tender.
  • Add black beans, not drained, tomatoes, not drained, corn, drained, and seasonings.
  • Cook to a boil, reduce heat and cook for 5 minutes.
  • Add rice and serve!

1 medium onion, halved and thinly sliced
1 tablespoon butter
1 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
1 cup ketchup
1/3 to 1/2 cup packed brown sugar
2 tablespoons Worcestershire sauce
Hot cooked rice, optional

Steps:

  • In a large skillet, saute onion in butter until tender. Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 3 minutes or until sauce is slightly thickened, stirring occasionally. If desired, serve over rice.

2 pounds smoked kielbasa or Polish sausage, halved lengthwise and cut into 1/4-inch slices
1/4 cup finely chopped onion
3 bacon strips, finely chopped
3/4 cup honey barbecue sauce
1/4 cup packed brown sugar
1 tablespoon prepared horseradish
2 teaspoons water
2 teaspoons minced garlic
1/2 teaspoon crushed red pepper flakes
Hot cooked rice

Steps:

  • In a Dutch oven, saute the kielbasa, onion and bacon until onion is tender; drain. Add the barbecue sauce, brown sugar, horseradish, water, garlic and pepper flakes. Bring to a boil; cook and stir for 2-3 minutes or until sauce is thickened. Serve with rice. Freeze option: Place cooled individual portions in freezer containers without rice. Freeze up to 3 months. To use, thaw in refrigerator overnight. Place in a saucepan; heat through, gently stirring and adding a water if necessary. Serve with rice.

I made this for dinner last night and we really enjoyed it, so I thought I would share. It was done in no time at all. So easy to fix. I called my husband to the table and he couldn't believe I had already cooked it.

1 Tbsp canola oil
1 pkg kielbasa, cut into one inch slices
3 c cooked rice
1 can(s) ranch style beans
3/4 c good barbeque sauce
1 c mexican blend shredded cheese

Steps:

  • 1. In a large skillet, add the tablespoon of oil. When hot, add the kielbasa and brown well on both sides. Add the cooked rice in the with kielbasa and stir well. Add in your ranch style beans (if you can't find them use Pinto beans) and barbeque sauce. Stir all together and heat through. When hot, turn off the heat and spread top with shredded cheese. Place lid on top so cheese will melt.

This is one of my families favorite dinners. I wanted something different and had the kielbasa in the refrigerator. I have a husband who hates rice, but he really loves this one. When I served it to a married son he just couldn't stop eating it.

2 c dry rice
4 c water
1 beef kielbasa
1/3 c brown sugar, lightly packed
1 can(s) peas or green beans
1 can(s) cream of onion soup, undiluted
1 can(s) cream of mushroom soup, undiluted

Steps:

  • 1. Put 2 Cups Rice and 4 Cups water into a 3 quart microwaveable bowl. Do NOT cover. Cook for about 13 minutes on high power, stir and cook for another 4-5 minutes.
  • 2. Slice Kielbasa into 1/4 inch slices, cut on diagonal. Place in heated pan and add brown sugar. Stir while cooking to caramelize the kielbasa. Make sure the kielbasa is cooked thoroughly. When rice is done, add Cream of Onion and Cream of Mushroom soup, can of peas or green beans and kielbasa with brown sugar sauce. This can be served immediately. It heats up well as leftovers.

1/2 pound smoked kielbasa or Polish sausage, cut into 1/2-inch slices
4 small red potatoes, halved
1 medium onion, halved and sliced
1 medium sweet red pepper, cut into 1-inch pieces
2 tablespoons olive oil
1/8 teaspoon salt
1/8 teaspoon pepper
1/4 cup heavy whipping cream
Minced fresh parsley

Steps:

  • In a small bowl, combine the sausage, potatoes, onion and red pepper. Drizzle with oil; sprinkle with salt and pepper. Toss to coat. Transfer to a greased 1-qt. baking dish. , Cover and bake at 375° for 45 minutes. Stir in cream; cover and bake 10-15 minutes longer or until vegetables are tender and the cream has thickened. Sprinkle with parsley.
