A wonderful and easy way to cook salmon fillets. Serve with lemon slices if desired.

3 (6 ounce) salmon fillets
¼ cup lemon juice
cooking spray
¼ cup brown sugar
2 tablespoons chili powder
4 teaspoons lemon zest
1 tablespoon vegetable oil
1 ½ teaspoons ground cumin
1 ¼ teaspoons ground cinnamon
1 teaspoon salt

Steps:

  • Place salmon in a resealable bag and add lemon juice; marinate in the refrigerator for at least 1 hour.
  • Preheat oven to 400 degrees F (200 degrees C). Line a baking dish with aluminum foil and spray foil with cooking spray.
  • Blend brown sugar, chili powder, lemon zest, oil, cumin, cinnamon, and salt together in a blender until brown sugar mixture is smooth.
  • Remove salmon from bag and discard bag and lemon juice. Spread brown sugar mixture over salmon and place in the prepared baking dish.
  • Bake in the preheated oven until fish flakes easily with a fork, 12 to 15 minutes.

1/4 cup pineapple juice
2 tbsp fresh lemon juice
4 (6 oz) salmon fillets
2 tbsp brown sugar
4 tsp chili powder
2 tsp grated lemon rind
3/4 teaspoon ground cumin
1/2 tsp salt
1/4 teaspoon ground cinnamon
Cooking spray
Lemon slices (optional)

Steps:

  • 1. Combine first three ingredients in a zip-top plastic bag; seal and marinade in refrigator 1 hour, turning occasionally. 2. Preheat oven to 400. 3. Remove fish from bag; discard marinade. Combine sugar and next 5 ingredients (sugar thru cinnamon) in a bowl. Rub over fish; place in an 11 x 17 baking dish coated with cooking spray. Bake at 400 for 12 minutes or until fish flakes easily when tested with a fork. Serve with lemon slices, if desired.
