BARBEQUE CHICKEN GRILLED PIZZA

Quick and easy for those summer cookouts. I often make as an appetizer while the ribs are cooking. Use whatever toppings you normally like on regular pizza, but the barbeque chicken is always a crowd pleaser! The dough never makes a perfect rectangle, but we have fun guessing what it looks like ('That looks like America!'). For the chicken, I use the grilled chicken pre-cooked at the store.

1 cup chopped cooked chicken
½ cup barbeque sauce, divided
1 (13.8 ounce) package refrigerated pizza dough
2 tablespoons olive oil, or as needed
1 cup shredded Colby-Monterey Jack cheese
1 cup diced tomatoes, or to taste

Steps:

  • Preheat grill for medium heat and lightly oil the grate.
  • Mix chicken and 2 tablespoons barbeque sauce together in a bowl until evenly coated.
  • Roll dough onto a work surface and cut in half to form 2 rectangles. Brush the top of each rectangle with olive oil.
  • Place dough, oil-side down, onto the grill; cook until bottom of dough is browned and top is bubbling up, about 5 minutes. Brush the tops of each dough with oil and flip.
  • Spread the remaining barbeque sauce over each crust; top with chicken, Colby-Monterey Jack cheese, and tomatoes.
  • Close the lid of the grill and cook pizza until cheese is melted, 2 to 3 minutes. Remove pizza from grill and cool before slicing, 2 to 3 minutes.

Number Of Ingredients 11

1/2 cup apple cider vinegar
1/2 cup canola oil
1/4 cup plus 2 teaspoons molasses
Kosher salt and freshly ground black pepper
One 15.5-ounce black beans, drained and rinsed
One 15.5-ounce pinto beans, drained and rinsed
2 stalks celery with leaves, thinly sliced, stalks and leaves separated
2 small red onions, 1 finely diced (1/2 cup) and 1 roughly chopped (1/3 cup)
4 cloves garlic, minced
1 1/2 cups prepared cocktail sauce
4 whole chicken legs (about 2 1/2 pounds)

Steps:

  • Whisk together 5 tablespoons of the vinegar, 3 tablespoons of the canola oil, 2 teaspoons of the molasses and a pinch of salt and pepper in a large mixing bowl. Add the beans, celery stalks and diced onion. Gently stir to combine. Season with additional salt and pepper if needed. Cover with plastic wrap and refrigerate until ready to serve.
  • Heat 3 more tablespoons of the canola oil in a large saucepan over medium-high heat. Add the chopped onion and cook until softened and lightly browned, about 5 minutes, stirring occasionally. Add the garlic and cook until softened, about 2 minutes, stirring constantly. Stir in the cocktail sauce and the remaining molasses and vinegar. Bring to a boil, and then reduce to a simmer. Simmer, uncovered, until slightly thickened, about 5 minutes. Turn off the heat and pour half of the barbeque sauce into a small bowl for basting. Keep the remaining barbeque sauce warm until ready to serve.
  • Heat an outdoor grill or large cast-iron grill pan over medium heat. Brush the chicken with the remaining oil and sprinkle liberally with salt and pepper. Grill the chicken until charred on both sides but not cooked all the way through, 15 to 20 minutes. Baste the chicken liberally with the reserved barbeque sauce and continue cooking until the internal temperature is 160 degrees F, about 5 more minutes. Transfer the chicken to a large plate and allow to rest at least 5 minutes before serving.
  • Serve the grilled chicken legs with the remaining warm barbeque sauce and chilled bean salad. Garnish the bean salad with the sliced celery leaves.

1 tablespoon brown sugar
1 1/2 tablespoons paprika
1 tablespoon garlic powder
1 1/2 tablespoons chili powder
1/4 teaspoon cayenne pepper
1 tablespoon salt
2 teaspoons freshly ground black pepper
3 pounds bone-in chicken thighs
1/2 cup barbeque sauce
1 teaspoon freshly chopped garlic
1 tablespoon spicy brown mustard
1 tablespoon apple cider vinegar
1 tablespoon lemon juice
1 tablespoon hot sauce
1 teaspoon chili powder
1 tablespoon Worcestershire sauce
4 yellow squash, sliced lengthwise in 1/2
2 tablespoons canola oil
1/2 teaspoon salt
1/4 teaspoon freshly cracked black pepper

Steps:

  • In a small bowl add all of the spice rub ingredients. Stir together with a fork until well blended. Reserve 3 tablespoons of the rub for the Grilled Brisket recipe. Sprinkle the remaining spice rub over the chicken parts until well coated.
  • Preheat a grill pan over medium-high heat. Add the chicken and cook for 8 to 10 minutes per side. If using an outdoor grill, heat the grill on low. Arrange the chicken on the grill, cover and grill over indirect heat until cooked through about 10 to 15 minutes per side.
  • While the chicken is grilling add all the barbeque sauce ingredients to a small pan and stir well to combine. Bring to a simmer over low heat and let cook for 5 minutes.
  • Brush the chicken with the barbeque sauce. Cook for 3 minutes, flip and brush the other side of the chicken with remaining sauce and cook and additional 3 minutes. Let rest for 5 minutes before serving. Arrange the chicken on a serving platter and keep warm.
  • Brush the squash with the canola oil and sprinkle with salt and pepper. Put on the grill and cook for 3 to 4 minutes per side over direct heat. Remove from the grill to a cutting board and cut into 1/2-inch thick slices. Transfer to a serving bowl and serve with the chicken.

1 white onion
4 garlic cloves
3/4 cup grape jelly
1 1/2 tablespoons mesquite liquid smoke
1 3/4 cups ketchup
1/2 cup Worcestershire sauce
1/2 cup white vinegar
1 cup brown sugar
2 teaspoons chili powder

Steps:

  • Cook Onion with olive oil on medium heat until translucent and then add garlic and cook until flavors are mixed together. This should take about 30 seconds.
  • Add remaining ingredients and stir until the sugar and chili powder are thoroughly incorporated. Turn heat to low and simmer for 30 minutes.

BARBEQUE GRILLED CHICKEN

- 12 oz. can dr. pepper
- 1 cup ketchup
- 1/4 cup firmly packed brown sugar
- 2 tablespoons prepared yellow mustard
- 1 tablespoon worcestershire sauce
- 1 tablespoon lemon juice
- 1 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1 clove garlic, minced
- 4 pounds split chicken breasts

Steps:

  • In a medium saucepan, combine Dr. Pepper and next 8 ingredients. Bring to a boil, reduce heat and simmer, 30 minutes, stirring occasionally. Let cool.
  • Place chicken in a shallow dish. Pour 1/2 of sauce over chicken, and marinate 30 minutes, turning occasionally. Grill chicken, covered with grill lid, over medium coals about 35 minutes, or until meat thermometer inserted in thickest part registers 180, turning occasionally. Brush chicken with remaining sauce while cooking.
