GRILLED BBQ CHICKEN SANDWICHES

2 cups ketchup
1/2 cup apple cider vinegar
1/2 cup dark brown sugar
2 tablespoons Worcestershire sauce
1 teaspoon freshly ground black pepper
1 teaspoon garlic powder
1 teaspoon dry mustard
1 teaspoon onion powder
1 teaspoon hot sauce
Olive oil, for lightly coating the chicken
4 chicken cutlets, pounded to 1/2 inch thick
Kosher salt and freshly ground black pepper
8 potato buns
Mayonnaise, for spreading
1 medium red onion, sliced
16 bread-and-butter pickle slices

Steps:

  • For the barbecue sauce: In a medium saucepot over medium heat, add the ketchup, apple cider vinegar, dark brown sugar, Worcestershire sauce, black pepper, garlic powder, dry mustard, onion powder, hot sauce and 1 cup water and stir to combine. Bring the mixture to a simmer, then reduce the heat to low and cook until the sauce is thickened, about 1 1/2 hours.
  • For the chicken: Heat a grill pan over medium-high heat.
  • Lightly drizzle some olive oil onto the chicken to prevent the chicken from sticking to the grill pan. Season the chicken with salt and pepper. When the grill pan is hot, add the chicken and cook until char marks appear and the chicken is cooked through, 2 to 3 minutes per side.
  • Toss the chicken with the barbecue sauce. Let simmer on low until ready to serve, to infuse the chicken with the flavor of the sauce.
  • For the sandwich: Spread an even layer of mayonnaise on the top and bottom of a potato bun, add the chicken, a few red onion slices and 2 bread and butter pickles. Top with the other half of the potato bun.

3 cups sweet barbeque sauce
1 cup Italian salad dressing
4 (8 ounce) bone-in chicken legs with skin
hickory wood chips as needed

Steps:

  • Mix barbecue sauce and salad dressing together.
  • Put chicken legs in a large zip-top bag and pour sauce all over them. Squeeze out the excess air and seal the bag. Massage marinade into the chicken a bit, then refrigerate for 4 hours.
  • Remove chicken from the refrigerator; set bag on the counter and bring to room temperature, about 1 hour.
  • Preheat an outdoor grill for medium-low heat and lightly oil the grate. Load a smoker box with wood chips and set on the grate.
  • Remove chicken from the bag and transfer to the preheated grill. Cover and cook for 10 minutes, then flip, basting both sides with the remaining marinade.
  • Continue to cook (with the lid closed and listening for flare-ups) until chicken is no longer pink at the bone and the juices run clear, about 10 more minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
  • Remove chicken to a platter and tent with foil. Let rest for 5 minutes before serving.

These skewers of grilled chicken breast, squash, and potato are flavored with a fiery barbecue sauce. The potatoes need to be parboiled so they will be done at the same time as the chicken.

1 1/2 chicken breasts (3 halves), cut into 1-inch cubes
Spicy Barbecue Sauce, or 2 cups good-quality store-bought barbecue sauce
1 cup water
1 1/2 tablespoons coarse salt
1 1/4 pounds new or baby fingerling potatoes
3/4 pound green or yellow summer squash (about 2), cut into 1-inch pieces
2 tablespoons olive oil
1 teaspoon freshly ground pepper

Steps:

  • Place chicken in a large bowl. Add barbecue sauce; toss. Cover, and refrigerate for at least 30 minutes or overnight.
  • Place the water in a large saucepan. Add 1 tablespoon salt and potatoes. Bring to a boil over high heat. Reduce heat; simmer until potatoes are almost tender when pierced with a knife, about 10 minutes. Do not overcook. Drain; halve. Set aside.
  • Thread 4 cubes of chicken, alternating with potatoes and squash, on each of 8 skewers. Gently brush vegetables with a little olive oil. Season with remaining 1/2 tablespoon salt and the pepper.
  • Arrange skewers, off direct heat, on a medium-hot grill. Grill, rotating skewers and brushing with olive oil as necessary to prevent sticking, until cooked through, about 12 minutes depending on heat of grill. Vegetables should be soft and slightly charred. Serve with choice of condiments.
