BBQ Meatball Sliders with Bacon image

Bacon lovers unite! This recipe is a bacon lover's dream, with bacon 2 ways! Due to the BBQ sauce being sweet, I recommend using a spicy cheese (like habanero Jack).

7 slices bacon
8 ounces 93% lean ground beef
½ cup panko bread crumbs
¾ cup barbeque sauce (such as Sweet Baby Ray's®), divided
1 tablespoon steak sauce
10 slices pepper Jack cheese
10 slider buns
10 slices cooked bacon
¼ cup slivered onion
¼ cup roasted red pepper, cut into strips

Steps:

  • Attach the meat grinder attachment to an electric stand mixer (such as KitchenAid®). Run enough bacon through the meat grinder to make 8 ounces ground bacon.
  • Combine ground bacon, beef, bread crumbs, 1/4 cup barbeque sauce, and steak sauce in a bowl. Mix until well combined and shape into 2-inch round balls. Set meatballs on a baking sheet.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Bake meatballs until an instant-read thermometer inserted into the center reads 160 degrees F (71 degrees C), about 25 minutes.
  • Place a slice of cheese on top each meatball. Toast slider buns if desired. Place a meatball between each slider bun. Top with cooked bacon slices, onion, remaining barbeque sauce, and roasted red bell peppers.

These easy to make sliders are perfect for appetizers or a backyard party. The ground beef is mixed with mustard and balsamic vinegar, resulting in patties that are savory, moist, and tender.

1 pound bacon, roughly chopped
1.25 pounds 80/20 ground beef
1 tablespoon Dijon mustard
1 teaspoon kosher salt
.25 cup plus 1 Tbsp. balsamic vinegar, divided
1 teaspoon black pepper, divided
1 cup finely chopped red onion (from 1 medium onion)
.25 cup granulated sugar
1 tablespoon chopped fresh thyme
1 (12-oz.) pkg. savory butter rolls (such as King's Hawaiian)
6 extra-sharp Cheddar cheese slices
3 small round tomatoes, cut into 12 slices total
Hamburger dill chips

Steps:

  • Preheat oven to 350˚F. Cook bacon in a large saucepan over medium, stirring often, until mostly crisp, 8 to 10 minutes. Remove bacon from pan using a slotted spoon, and transfer to a plate lined with paper towels; set aside. Reserve 1 tablespoon drippings in pan.
  • While bacon cooks, place beef, mustard, salt, 1 tablespoon of the vinegar, and ¾ teaspoon of the pepper in an 11- x 7-inch baking dish. Mix using your hands until well combined. Press mixture into an even layer. Bake in preheated oven until browned (meat will not be fully cooked), 10 to 12 minutes. Remove from oven; let stand 5 minutes. (Keep oven on.)
  • Meanwhile, add onion to reserved drippings in pan; cook over medium, stirring occasionally, until tender, about 5 minutes. Remove pan from heat. Transfer bacon to a cutting board; finely chop.
  • Using a long spatula, transfer beef patty from baking dish to a baking sheet lined with paper towels to drain. Wipe dish clean; coat with cooking spray.
  • Add bacon, sugar, and remaining ¼ cup vinegar to onion in pan. Bring to a boil over high, stirring constantly. Reduce heat to low. Simmer, stirring often, until almost completely reduced, about 5 minutes. Stir in thyme and remaining ¼ teaspoon pepper. Remove from heat; set aside.
  • Without separating individual rolls, cut roll loaf in half horizontally, creating 1 top and 1 bottom. Place roll bottom in prepared baking dish. Cover with cooked beef patty; spread patty with bacon jam. Add cheese and tomato slices; cover with roll top. Bake at 350˚F until cheese is melted and rolls are golden, about 8 minutes. Slice into sliders before serving with pickles.

2 cups shredded Cheddar cheese, divided
1 pound ground beef
1 small onion, chopped
½ (14 ounce) can diced tomatoes with garlic and onion
1 ½ teaspoons Dijon mustard
1 ½ teaspoons Worcestershire sauce
¼ teaspoon salt
¼ teaspoon ground black pepper
12 bacon strips, cooked and crumbled
½ cup butter
2 tablespoons brown sugar
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
1 tablespoon sesame seeds

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Place rolls, without separating them, on a flat work surface. Cut in half horizontally. Arrange bottom half in the prepared pan. Sprinkle 1 cup Cheddar cheese on top.
  • Bake in the preheated oven until cheese is melted, 3 to 5 minutes.
  • Cook and stir beef and onion in a skillet until beef is browned, 5 to 8 minutes. Drain grease. Stir in tomatoes, 1 1/2 teaspoons Dijon mustard, 1 1/2 teaspoons Worcestershire sauce, salt, and pepper. Cook until fully combined, 1 to 2 minutes.
  • Spoon beef mixture over rolls. Sprinkle remaining 1 cup Cheddar cheese and bacon on top. Cover with top half of rolls.
  • Combine butter, brown sugar, 1 tablespoon Dijon mustard, and 2 teaspoons Worcestershire sauce in a microwave-safe bowl. Cover and microwave on high until butter is melted, about 1 minute. Stir until blended and pour over rolls. Sprinkle sesame seeds on top.
