Barbeque beef, southern-style, made in the slow cooker. Serve on Kaiser rolls with a side of cole slaw.

½ cup beef broth
1 teaspoon liquid smoke flavoring
1 tablespoon olive oil
1 (4 pound) boneless beef chuck roast
3 tablespoons barbeque seasoning (such as Grill Mates® Smokehouse Maple)
2 tablespoons Worcestershire sauce
2 cups barbeque sauce
8 Kaiser rolls, split

Steps:

  • Spray the inside of a 6-quart oval slow cooker crock with cooking spray.
  • Mix beef broth and liquid smoke in a small bowl; pour into prepared crock.
  • Drizzle olive oil over the beef chuck roast. Rub barbeque seasoning over the roast and lie gently into the liquid in the slow cooker. Drizzle Worcestershire sauce over the roast.
  • Cook on Low until the meat pulls apart easily, 7 to 8 hours. Remove roast to a cutting board and shred into strands with a pair of forks.
  • Drain liquid from the slow cooker crock, reserving 1/2 cup and discarding remainder. Stir reserved liquid with barbeque sauce in a bowl.
  • Return shredded beef to the slow cooker. Drizzle barbeque sauce mixture over the meat and stir.
  • Cook on High until the liquid is bubbling, about 30 minutes. Spoon beef onto split Kaiser rolls.

1 boneless beef chuck roast (about 4 pounds)
3 tablespoons canola oil, divided
2 large onions, chopped
1 cup ketchup
1 cup beef broth
2/3 cup chili sauce
1/4 cup cider vinegar
1/4 cup packed brown sugar
3 tablespoons Worcestershire sauce
2 tablespoons prepared mustard
2 tablespoons molasses
2 tablespoons lemon juice
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/8 teaspoon pepper
1 tablespoon Liquid Smoke, optional
12 to 16 kaiser rolls or hamburger buns

Steps:

  • In a Dutch oven, brown roast on all sides in 1 tablespoon oil. Meanwhile, in a large saucepan, saute onions in remaining oil until tender. Add remaining ingredients except rolls; bring to a boil. Reduce heat; simmer, uncovered,for 15 minutes, stirring occasionally. Pour over roast. Cover and bake at 325° for 2 hours; turn the roast and bake for 2 more hours or until meat is very tender. Remove roast; shred with a fork and return to sauce. Serve on rolls.

1-1/2 cups ketchup
1/4 cup packed brown sugar
1/4 cup barbecue sauce
2 tablespoons Worcestershire sauce

1/2 teaspoon salt
1/4 teaspoon garlic powder

¼ cup red wine vinegar
2 tablespoons prepared Dijon-style mustard

2 (12 fluid ounce) cans or bottles beer
6 teaspoons Worcestershire sauce
2 teaspoons liquid smoke flavoring
2 teaspoons garlic powder
2 teaspoons ground black pepper
salt to taste
1 (18 ounce) bottle barbecue sauce
2 cups water

Steps:

  • Preheat oven to 275 degrees (135 degrees C).
  • Place roast in a large roasting pan and scatter chopped onions over.
  • In a large bowl, combine Worcestershire sauce, liquid smoke, garlic powder, salt and pepper. Pour in beer, stir and add to roasting pan. Add water to the top of beef.

1 boneless sirloin tip roast, thawed
3 cups barbecue sauce (hickory smoke)
0.5 (8 ounce) bottle beer (optional)
1 large Spanish onion, chopped
2 tablespoons red wine vinegar
2 tablespoons Worcestershire sauce
1 teaspoon fresh ground coarse sea salt
1 teaspoon fresh ground pepper
1 teaspoon cayenne pepper
1 teaspoon garlic powder

Steps:

  • Completely thaw roast; Trim excess fat if desired (mine was trimmed already); Place in crock pot.
  • In large measuring cup/medium bowl: Mix together barbecue sauce; beer; vinegar; Worcestershire sauce and mixed spices.
  • Cover roast with onions; Pour barbecue sauce mixture over roast.
  • Cover and cook on high 4-6 hours (longer for larger roasts) until tender, falling apart.
  • Remove roast from crock pot and shred.
  • Return meat to crock pot and coat meat evenly with sauce.
