1/2 cup yellow cornmeal
1/2 tablespoon flour
3/4 cup skim milk
1 medium banana, chopped

Steps:

  • Bring salted water to a boil.
  • Combine cornmeal and flour together in a bowl.
  • Add milk slowly to make a smooth paste.

2 small bananas , sliced
seeds from 2 cardamom pods, crushed
1 tbsp toasted sesame seeds

  • Mix the tahini with 1 tbsp milk and 1 tbsp water. Put the oats, 1 sliced banana, cardamom, 100ml milk and 300ml water in a pan with a pinch of salt. Cook over a medium heat for 5 mins, stirring, until creamy and hot.

4 tsp cocoa powder
1 tsp vanilla extract
4 bananas , 2 chopped
2 x 150ml pots bio yogurt
milk , to serve (optional)

Steps:

  • Put the oats, cocoa and vanilla in a large bowl and pour over 800ml - 1 litre cold water (depending how thick you like your porridge). Cover the bowl and leave to soak overnight.
  • The next morning, tip the contents into a saucepan with the chopped banana. Cook over a medium heat for 15 mins, stirring frequently, until the oats are cooked.
  • Put half of the mixture in the fridge for the next day. Spoon the rest into two bowls, swirl in 1 pot yogurt and slice over a banana (save the other pot and banana for the next morning). Warm through with a splash of milk to reheat.

1 teaspoon nutmeg

Steps:

  • Boil and salt water in a large soup pot and fill at least half of the pot.
  • Wash, peel bananas and boil for 20-30 minutes.
  • Chop the bananas into small pieces and place them into an electric blender. Add ½ cup water and blend until smooth.

160g Quaker Rolled Oats
1.2l unsweetened almond milk
2 tbsp sultanas or raisins
¼ tsp cinnamon (optional)
2 bananas , sliced
4 tsp almond butter , stirred

Steps:

  • Heat the almonds in a saucepan over a medium heat for 2-3 mins until smelling toasted, shaking the pan frequently. Remove from the pan to a plate.
  • Put the Quaker Rolled Oats, milk, sultanas and cinnamon, if using, into the saucepan with a pinch of salt. Cook over a medium heat for 5-6 mins until smooth and thick, stirring frequently. Add a splash more water if you prefer a thinner porridge.

75 g rolled oats (30z)
100 ml soymilk (3 1/2 fl oz)
75 ml water (3 fl oz)
1 tablespoon brown sugar
1 banana (large ripe 125g/4oz)
soymilk (extra to serve)
2 teaspoons pumpkin seeds (divided)

Steps:

  • Peel and finely slice banana.
  • Place the oats, soya milk, water, sugar and banana in a heavy based saucepan.
  • Bring to the boil, stirring steadily.
  • Reduce the heat and simmer, stirring occasionally for about 5 to 10 minutes, or until the desired consistency is reached.
  • Divide mix between 2 bowls, pour over a little more soy milk and scatter the pumpkin seeds over the porridge.

How to make Jamaican Green Banana Porridge Recipe

5 to 6 Green Bananas
2 cups Milk
1 cup Water
1 tsp Cinnamon or 1 large Cinnamon Stick
1/2 tsp Nutmeg
1/4 tsp Allspice
1 tsp Salt or to taste
1 tsp Vanilla flavouring
1 cup Sweetened Condensed Milk or to taste

Steps:

  • Peel green bananas, cut in 3 or 4 pieces each and place in a bowl of water mixed with 1 tsp of lemon juice, which will prevent them from turning brown
  • Combine 1 cup of milk with 1 cup of water
  • Blend the bananas with the milk/water liquid, adding one piece of banana at a time.
  • Pour the banana mixture into a pot on Medium-High heat. Using a non-stick pot will save clean up time later
  • Stir in cinnamon, nutmeg, allspice and salt and continue stirring until blended
  • Continue stirring on Low heat until the porridge thickens, about 15 minutes. If needed, heat remaining 1 cup of milk and add slowly to pot until you reach your desired consistency
  • Add vanilla, and sweeten with sweetened condensed milk to taste
  • Makes 4 servings
