One-Ingredient Banana Ice Cream image

This outrageously easy "ice cream" is just the sort of dessert to please everyone at the table - the vegans, the lactose-intolerant, the paleo enthusiasts, the picky children. Just toss four frozen bananas into a blender and give it a good whirl. If you like soft-serve consistency, eat it right away (and adding a few tablespoons of milk to the blender wouldn't hurt, but it's not necessary). For more traditional scoops, freeze it in an airtight container, and dole out as you would the Ben & Jerry's. Consider adding a spoonful of peanut butter, Nutella or honey; a handful of chocolate chips or almonds; or a 1/2 teaspoon of powdered ginger, cardamom or cinnamon.

Steps:

  • Peel the bananas, cut them in 2- to 3-inch chunks and place them in a freezer bag in the freezer for at least 6 hours. Remove and blend in a blender until smooth. Serve immediately, or freeze in an airtight container for at least 2 hours. Scoop and serve.

4 teaspoons fresh lemon juice
1/4 teaspoon salt
1 cup sugar
1 1/2 cups fresh orange juice
1/4 cup confectioners' sugar
3 cups heavy cream, lightly whipped

Steps:

  • Peel and mash bananas.
  • Combine with lemon juice, salt, sugar and fresh orange juice.
  • Fold confectioners' sugar into lightly whipped heavy cream.
  • Add to banana mixture.
  • Churn-freeze.

3 tablespoons unsalted butter
4 bananas, peeled and sliced into 1-inch pieces
1/3 cup sugar
2 tablespoons white rum
1/4 cup orange juice (preferably freshly squeezed from 1 orange)
2 oranges, peeled and segmented
2 pints vanilla ice cream
Mint sprigs, for garnish

Steps:

  • Melt 2 tablespoons of butter in a large nonstick skillet over medium-high heat. Place the bananas in the butter, cut side down. Pour the sugar around the bananas and let it cook until it starts to caramelize, moving the bananas around a bit to ensure even browning.
  • Remove the skillet from heat; add in the rum, and orange juice. Return the skillet to heat and let reduce for a minute. Turn the bananas and let the juices reduce for another minute.
  • Remove the skillet from heat and swirl in the remaining tablespoon of butter.
  • Serve the bananas in shallow bowls drizzled with the caramel pan sauce. Top with orange segments and a scoop of vanilla ice cream. Garnish with a sprig of mint.

3 tablespoons brown sugar
1 tablespoon orange juice
1/4 teaspoon ground cinnamon

2 tablespoons chopped pecans, toasted
1/2 teaspoon rum extract
3 cups reduced-fat vanilla ice cream

Steps:

  • In an 8- or 9-in. cast-iron or other ovenproof skillet, melt butter over medium-low heat. Stir in brown sugar, orange juice, cinnamon and nutmeg until blended. Add bananas and pecans; cook until bananas are glazed and slightly softened, 2-3 minutes, stirring gently., Remove from heat; stir in extract. Serve with ice cream.

4 cups half-and-half cream
2-1/2 cups sugar
Dash salt
4 eggs, lightly beaten
4 cups heavy whipping cream
1 can (5 ounces) evaporated milk
3 teaspoons vanilla extract
2 cups mashed ripe bananas (4 to 5 medium)

Steps:

  • In a large heavy saucepan, heat half-and-half to 175°; stir in sugar and salt until dissolved. Whisk a small amount of hot mixture into eggs. Return all to the pan, whisking constantly. Cook and stir over low heat until mixture reaches 160° and coats the back of a metal spoon. , Remove from the heat. Cool quickly by placing pan in a bowl of ice water; stir for 2 minutes. Stir in the whipping cream, milk and vanilla. Press plastic wrap onto surface of custard. Refrigerate for several hours or overnight., Stir in bananas. Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. Refrigerate remaining mixture until ready to freeze. When ice cream is frozen, transfer to a freezer container; freeze for 2-4 hours before serving.
