BANANA - OAT - CHOCOLATE CHIP COOKIES
I've been on an Oatmeal kick lately...makes everything chewy and yummy...these soft cookies remind me of a banana muffin...so yummy... a great way to use up ripe banana's...enjoy!

Steps:
- 1. Preheat oven to 375 degree F. Cream shortening and sugar until light and fluffy. Beat in egg and vanilla.
- 2. Combine the flour, salt, baking soda, cinnamon and nutmeg.
- 3. Add to creamed mixture and mix well. Stir in bananas, oats and chocolate chips.
- 4. Drop tablespoon size portions onto greased cookie sheet and bake for 10 - 12 minutes.
- 5. Remove immediately to wire racks to cool.

Steps:
- Preheat the oven to 350°F.
- Cream butter, brown sugar and banana.
- Beat in the egg, vanilla and apple cider vinegar.
- In a separate bowl, combine oats, oat flour, flax seed meal, baking soda, cinnamon, nutmeg and salt.
- Add dry ingredients to wet ingredients until just combined. Do not overmix.
- Fold in chocolate chips.
- Drop batter by heaping tablespoonfuls 2 inches apart onto a baking sheet lined with parchment or a silicone baking mat.
- Bake for 10-12 minutes, until browned around the edges.
- Cool the cookies on the baking tray.
