Number Of Ingredients 11

4 cups all-purpose flour
3 cups sugar
2 teaspoons baking powder
1-1/2 teaspoons salt
1 teaspoon baking soda
4 large eggs, room temperature
1-1/2 cups canola oil
1 teaspoon each coconut, rum and vanilla extracts
3 cups shredded zucchini
1 cup canned crushed pineapple, drained
1/2 cup chopped walnuts or chopped pecans

Steps:

  • Line the bottoms of 3 greased and floured 8x4-in. loaf pans with waxed paper and grease the paper; set pans aside. Preheat oven to 350°., In a large bowl, combine the flour, sugar, baking powder, salt and baking soda. In another bowl, whisk the eggs, oil and extracts. Stir into dry ingredients until just moistened. Fold in the zucchini, pineapple and walnuts. , Transfer to prepared pans. Bake for 45-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Gently remove waxed paper.

Number Of Ingredients 12

2 cups sugar
1 cup butter
4 eggs
8 ounces pina colada yogurt
1/2 cup milk
1/4 cup Kahlua or 1/4 cup milk
2 teaspoons vanilla extract
2 teaspoons lemon juice
2 cups bananas, mashed
3 1/2 cups flour, self-rising
1 teaspoon baking powder
1 cup walnuts, chopped (optional)

Steps:

  • Preheat oven to 350°.
  • Grease and flour two loaf pans.
  • In a large bowl, using an electric mixer, cream together sugar and butter.
  • while mixing, add eggs, one at a time.
  • blend in the yogurt, milk, Kahlua, vanilla and lemon juice.
  • From here on only use a spoon to-- add the mashed bananas.
  • fold in the flour and baking powder, stir.
  • sprinkle in the nuts and stir. If you leave out the nuts, also reduce the milk to 1/4 cup.
  • Pour the mixture into two prepared pans.
  • Bake at 350° for 50 to 60 minutes.
  • Tip: In choosing your backing pan, keep in mind that glass cooks more quickly than metal, dark metal cooks more quickly than light metal.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

3 ounces coconut rum or dark rum
1 cup canned cream of coconut (available in the international aisle)
1 lime, halved
1/4 cup shredded coconut, toasted, for garnish (optional)

  • Place the bananas and pineapple in a blender; puree until smooth. Add the rum, cream of coconut, 2 cups ice cubes and the juice of half the lime; blend until smooth and frothy. 3 cups flour

3 cups cold milk
1 (4.6 ounce) package instant coconut cream pudding mix
1 (8 ounce) container sour cream
1 (16 ounce) container non-dairy whipped topping, divided
1 cup crushed pineapple with juice
½ cup shredded coconut
1 teaspoon rum flavoring
1 teaspoon coconut flavoring
1 (11 ounce) box vanilla wafer cookies
2 medium bananas, sliced, or more to taste
¼ cup toasted shredded coconut

Steps:

  • Whisk cold milk and pudding mix together in a large mixing bowl for 2 minutes. Allow to sit for 5 minutes until soft-set.
  • Mix sour cream and 1/2 of the whipped topping into the pudding; mix well. Stir in pineapple with juice, 1/2 cup shredded coconut, rum flavoring, and coconut flavoring.
  • Place a layer of wafer cookies in the bottom of a trifle dish. Add a layer of sliced bananas and a layer of the pudding mixture. Repeat layers until all ingredients have been used, reserving a few cookies for garnish.
  • Top with remaining whipped topping and garnish with remaining cookies and toasted coconut. Chill for 1 hour before serving.
