1½ cups granulated white sugar
1/2 cup vegetable or canola oil
2 medium ripe bananas, (mashed)
2 large eggs
1/4 cup + 1 tablespoon buttermilk
1 teaspoon vanilla extract
1¾ cups all purpose flour
1 teaspoon baking soda
1 cup chopped walnuts, (optional)

Steps:

  • Preheat the oven to 325 degrees. Grease and flour one 9x5-inch loaf pan.
  • In a large bowl, combine the sugar, oil, bananas, eggs, buttermilk and vanilla; whisk together well. In a separate bowl, combine the flour, baking soda and nuts (if using). Stir into the wet mixture and pour into the prepared pan.
  • Bake for 1 hour and 15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

1 ½ cups all-purpose flour
Pinch of nutmeg
Pinch of cinnamon
1 teaspoon baking soda
¼ teaspoon salt
1 ½ cups mashed banana ((about 3 large or 4 medium very ripe bananas))
6 tablespoons salted butter, melted and slightly cooled
¾ cup sugar
1 egg
1 teaspoon vanilla extract
1 cup chopped walnuts

Steps:

  • Preheat oven to 350°F. Grease an 8½ x 4½-inch loaf pan and set aside.
  • In a medium bowl, sift or whisk together flour, nutmeg, cinnamon, baking soda and salt. Set aside.
  • In a separate large bowl, whisk together mashed banana, melted butter, sugar, egg and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Fold in the walnuts.
  • Pour batter into prepared loaf pan. Bake until the bread is golden brown and a toothpick inserted in the center comes out clean, about 50-60 minutes. Do not overbake.
  • Remove from the oven, unmold from the pan, and cool completely on a wire rack before slicing and serving.

1 stick butter, at room temperature, plus more for loaf pan
1 1/2 cups all-purpose flour, plus more for pan
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
3 large very ripe bananas*
1 cup granulated sugar
2 large eggs
1/2 cup sour cream
1 teaspoon vanilla extract
3/4 cup chopped pecans
Honey Butter, for serving, recipe follows
1 stick salted butter, softened
2 tablespoons honey

Steps:

  • Preheat the oven to 350 degrees F and put a rack on the middle shelf. Butter and flour a 9 by 5 by 3-inch loaf pan.
  • In a large bowl, whisk together the flour, baking soda, baking powder and salt.
  • In a separate small bowl, mash the bananas with a wooden spoon, leaving a bit of texture.
  • In another large bowl, use a hand electric mixer or stand mixer to cream the 1/2 cup of butter and sugar together until light and fluffy. Add the eggs, 1 at a time. Stir in the mashed bananas, sour cream and vanilla and beat until just combined. Add the dry ingredients and gently stir in pecans. Pour the batter into the pan and put on a sheet tray.
  • Bake for 1 hour and 10 minutes. Let cool for 5 minutes in the pan then turn out onto a wire rack to finish cooling. Slice and serve with Honey Butter.
  • Mix the butter and the honey together in a small bowl with a wooden spoon. Serve with the banana bread.

HEALTH WARNINGS: EBNB may be habit forming. A very flexible recipe that will accommodate changes based on what you have on hand. Use any type of fat in place of the butter, such as shortening or oil. It works with either brown or white sugar too.

2 cups white sugar
2 cups mashed overripe bananas
4 eggs, beaten

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9x5 inch loaf pans.

My mom has been making banana nut bread as far back as I can remember. She told me she worked with a woman that gave her the recipe. She followed the recipe to a "T" but it never came out the same. It was either too soggy, or too sticky. Finally she tweaked the recipe until it came out just right. The original recipe called for 8 very ripe bananas, and too much shortening. I've been making this recipe since I was 18, and have never had a bad loaf. The order in how the ingredients are put together is very important for some reason. I have tried mixing everything in one bowl and it does change it quite drastically. I guessed on the servings as it depends on how thick or thin you cut the slices.

1 cup sugar
1/2 teaspoon baking soda
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2 cups flour
1/2 cup shortening (you can also substutite with oil and will not harm the loaf.)
2 eggs
1 1/2 cups milk
1/2 cup nuts (Walnut is our favorite but use what you have or like)
1 banana (Mashed)

Steps:

  • In a large bowl mix together all dry ingredients well.
  • In a seperate bowl mix eggs, shortening (or the oil) and banana until well combined.
  • Add the wet mixture to the dry mixture until well combined with a hand mixer.
  • Add the nuts and mix on low to medium speed for about a minute or until the nuts are evenly mixed into the batter.
  • Spray or grease a 9X5X3 loaf pan and bake in a pre-heated oven at 350 for about an hour --
  • We have always set the kitchen timer to 45 minutes and have checked the loaf with a clean butter knife in the center of the loaf. If it comes out clean it's done. You do not want the loaf to burn, at this point you will check the loaf every 5 minutes after that. It should have a nice golden brown color on the top and the house should smell wonderful. When it comes out of the oven give it about 20 minutes or so to cool and very carefully slide a butter knife or spatula down all of the sides of the loaf pan, turn upside down and it should fall out smoothly. Slice immediately -- we like to spread softened butter and enjoy with a cold glass of milk.

I got this recipe when I was 12 and have used it for the past 33 years and haven't found one better! My son used it when he was 12 at the California State Fair and won a first place ribbon with it. It is just simply delicious & moist. I either make a loaf or put it into muffin cups & make muffins for my kids to grab in the morning on their way to school. Using margarine makes the muffins come out in a better form, but the butter has a better flavor, so I usually use 1/2 of each to get the best of both worlds.

1 teaspoon vanilla
2 eggs (beaten)

Steps:

  • Cream butter & sugar. Add vanilla & eggs. Combine dry ingredients, add alternately with bananas & milk. Add nuts if desired. Grease & flour 1 bread pan (2-3 smaller pans) or pour into muffin cups. For loaf bake at 350 for 45-60 minute Muffins 350 for 20-25min. Enjoy!
  • *Note- I usually use a smaller bread pan to make the 2 loaves, or use a larger one and just make 1 big loaf, but it will need to bake longer. I adjusted the time because people had been saying it was over baking, now people are saying it's under baked. I would use the old fashion test of a tooth pick at 45 min, then at 1 hour -- up to 1 hour & 30 min if needed. Hope that helps!

1 c sugar
2 eggs
1 tsp baking soda
3 bananas, very ripe
1 c flour
1/4 tsp salt
1/2 c walnuts, chopped (optional)

Steps:

  • 1. Preheat oven to 350 degrees; grease and flour bread pan.
  • 2. In small bowl combine flour, salt, and baking soda and set aside.
  • 3. In medium bowl; cream together the margarine and sugar; add eggs, mix in 3 ripe bananas. Slowly add the flour mixture until blended; add walnuts and hand stir until mixed through.
  • 4. Pour mixture into prepared bread pan and bake for 1 hour or until toothpick inserted in middle comes out clean. Cool and enjoy!
