In my opinion, this is the absolute best banana bread out there. I got it through a mail order recipe club called "Grandma's Kitchen". It is so easy to make, and it seems like everyone always has some ripening bananas that they're trying to get rid of!

Number Of Ingredients 13

5 tablespoons butter
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
1 large egg
2 egg whites
1 teaspoon vanilla extract
2 ripe mashed bananas
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup heavy cream
1/2 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees, and spray bottom of a 9 inch round pan with non-stick cooking spray.
  • Beat butter in a large bowl with an electric mixer until light and fluffy.
  • Add granulated Sugar and brown sugar; Beat until well blended.
  • Add egg, egg whites and vanilla; blend.
  • Mix in the mashed bananas, and beat the mixture on high speed for 30 seconds.
  • In a separate bowl, combine flour, baking soda, salt and baking powder.
  • Add flour mixture to butter mixture alternately with the cream, ending with the flour mixture.
  • Mix in the walnuts.
  • Pour batter evenly into prepared 9 inch round pan (or loaf pan).
  • Bake until golden brown, and toothpick inserted near the center comes out clean (About one hour).

Seeing all the recipes for zucchini posted lately reminded me of a Christmas and Thanksgiving favorite in my home. Nana made it when i was little and later when i had my own family I carried on the tradition. The smaller loaves are so moist and the flavor is unbelieveable. Noone would ever guess there was zucchini in the batter....

3 eggs
2 c mashed ripe bananas
1 c vegetable oil
2 c finely shredded zucchini
2 c sugar
3 c flour
2 tsp baking soda
1 tsp salt
2 tsp vanilla
1 Tbsp cinnamon
1 c chopped walnuts (you can also use pecans)
GLAZE DRIZZLE
powdered sugar
milk
banana extract (optional)
additional ground nuts for topping

Steps:

  • 1. Put bananas, zucchini, eggs, sugar,vanilla and oil in a large bowl. Mix well to blend all ingredients.
  • 2. In separate bowl mix together flour, soda, salt, cinnamon and ground nuts. Add this to the large bowl and mix just until blended.
  • 3. Pour mix into 5 to 7 mini loaf pans that have been sprayed with no stick cooking spray.
  • 4. Bake in oven preheated to 350 degrees for about 30 to 35 minutes or until toothpick inserted in centers comes out clean. (You can also do this in large loaf pan and cook for 55 minutes to 1 hour. The smaller loaves tend to come out more moist)
  • 5. Allow to cool for 10 to 15 minutes and then remove from pans.
  • 6. Glaze: Mix milk and powdered sugar in small bowl till desired consistency (I like mine thick but pourable) add in enough vanilla or banana extract (optional) to taste. Drizzle over loafs. Sprinkle with additional ground nuts.
  • 7. Keep one (or two or three) for yourself and share the rest with your family and friends. (I wrap mine in pretty colored cellophane and tie with ribbons for thanksgiving treats for co-workers and friends.)

  • Preheat oven 350. Grease bottom only of 9x5x3 inch loaf pan.
  • Beat butter in large bowl with a mixer on medium speed until light and fluffy. Add brown and granulated sugar beat well. Add egg, egg whites and vanilla; beat until well blended. Add mashed bananas, and beat on high speed.
  • combine flour, baking soda and powder,and salt in a medium bowl. Add flour mixture to butter mixture. Alternately with heavy cream and flour mixture ending with flour.
  • Add walnuts to batter mix well.
  • Pour batter into loaf pan (evenly) Bake until brown and toothpick comes out clean.
  • Cook time is about 1 hour 10 minutes.
  • Cool in pan for about 10 minutes then remove from pan and cool completely on wire rack.

Okay I know that I am prejudiced but this is my mother's recipe for banana bread and I think it is the best banana bread in the world. It uses instant milk powder, something I have never seen in any other banana bread recipes. I am adding this to the large group of recipes on Zaar to keep this safe and in the family.

2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
3 tablespoons instant milk
1/2 teaspoon baking soda
1/3 cup shortening (I always used butter but I think she used Crisco)
2/3 cup sugar
1 egg
1/3 cup water
1 teaspoon vinegar
1 cup mashed banana

Steps:

  • Mix shortening, sugar and egg together.
  • Blend 1/3 cup water, vinegar and mashed banana and add to mixture.
  • Mix in 1/2 cup nuts if desired.
  • Sift together salt, milk, baking soda, baking powder and flour.
  • Add to wet mixture.
  • Bake at 350F for 1 hour.
  • Always made with extra love at Nana's house.

3 bananas, Mashed with a fork
2 eggs
2 cups all-purpose flour
1/2 teaspoon salt
1 cup sugar
1/2 cup vegetable oil
1 teaspoon baking soda

Steps:

  • Preheat oven to 350 degrees. Mash bananas in a large bowl. Add sugar, eggs and oil. Mix well. Add dry ingrdients.
  • ** Pick and choose your pan**.
  • (1) Pour mix into 5" x 9" leaf pan. Bake 50 - 60 minutes.
  • (2) Pour into 3 mini Loaf pans and bake 35-45 minutes each.
  • Breads are done when a wooden skewer/toothpick is inserted in the middle and comes out clean.

2 1/4 cups flour
1 (16 ounce) package white chocolate, vanilla candiquik
3 ripe bananas
1/2 cup butter
1 teaspoon baking soda
1/4 teaspoon salt
2 eggs
1/2 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a 9×5" loaf pan.
  • In a large bowl mix flour, baking soda, and salt together.
  • In another bowl mix melted CANDIQUIK, butter, eggs, and mashed bananas.
  • Stir banana mixture into the flour mix - until moistened (add nuts if desired) and pour the batter into the loaf pan.
  • Bake for 50-60 minutes or until a toothpick inserted into the center of the loaf comes out clean....
  • Allow bread to cool...slightly, if you can wait!
