What to do with one lone banana that is too ripe to eat? Easy--banana muffins using only one banana! They have a surprising amount of banana flavor--so tasty you think there are three or more bananas in them. Try them!

Steps:
- 1. In a large bowl, mix all ingredients together with electric mixer on slow to medium speed. Mix until lumps are mostly gone, but do not overmix.
- 2. Spray a 12-compartment muffin tin with cooking spray. Fill cups 2/3 full with batter.
- 3. Bake in a preheated 350-degree oven for 15-18 minutes, or until toothpick inserted in center of muffin comes out clean.
- 4. Can also be baked in regular bread pans for 55 minutes. The baked bread or muffins can be wrapped in foil and frozen. When ready to use, defrost, unwrap and reheat in paper towel in the microwave.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Coat muffin pans with non-stick spray, or use paper liners. Sift together the flour, baking powder, baking soda, and salt; set aside.
- Combine bananas, sugar, egg, and melted butter in a large bowl. Fold in flour mixture, and mix until smooth. Scoop into muffin pans.
- Bake in preheated oven. Bake mini muffins for 10 to 15 minutes, and large muffins for 25 to 30 minutes. Muffins will spring back when lightly tapped.

- Preheat oven to 350 degrees F (175 degrees C). Grease a muffin tin.
- Sift flour, baking powder, baking soda, cinnamon, salt, and nutmeg together in a small bowl.
- Mash bananas in a large bowl. Mix in white sugar, melted butter, brown sugar, egg, and vanilla extract. Fold in flour mixture until just combined. Fold walnuts into the batter.
- Divide batter evenly among the muffin cups.

- Preheat oven to 350°. Prep. muffin tin, with butter/spray or liners.
- Melt Butter in Microwave for 30 seconds. Meanwhile, in a meduim mixing bowl, mash your banana.
- Then in the same bowl add; sugar, brown sugar,milk, melted butter, egg. Then cream together.
- Once creamed, add Baking Soda, Salt, and flour. Mix well.
- Then fill the muffin tins 3/4 up, and place in the middle of the rack.
- Let them bake for 17 minutes, or until middle comes out clean with a knife.
