Give your favorite steaks a Mexican twist with this marinade of fresh lime juice, brown sugar, Worcestershire and garlic at your next barbecue.

Yield Makes enough for 1 to 1 1/2 pounds meat

Number Of Ingredients 5

1/4 cup fresh lime juice
2 tablespoons vegetable oil
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
3 teaspoons minced garlic

Steps:

  • Combine all ingredients in small bowl. Place beef steak(s) and marinade in food-safe plastic bag; turn steak(s) to coat. Close bag securely and marinate in refrigerator 15 minutes to 2 hours for tender steaks; 6 hours or as long as overnight for less tender steaks, turning occasionally.
  • Remove steak(s) from bag; discard marinade. Place steak(s) on grid over medium, ash-covered coals or over medium heat on preheated gas grill. Grill according to the chart for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Visit our Marinades page for more information.

3/4 cup brown sugar
1/2 cup butter
2 eggs, lightly beaten
3 mashed bananas
3 tablespoons plain yogurt
1 tablespoon fresh lime juice
1/2 teaspoon salt
1/2 teaspoon ginger
3/4 cup grated coconut, toasted
2 cups flour
1 teaspoon baking powder
1/4 cup brown sugar
1 tablespoon butter
1 tablespoon rum
3 tablespoons fresh lime juice
1/4 cup grated coconut, toasted

Steps:

  • Preheat oven to 350. Grease a loaf pan.
  • Cream together butter and sugar. Stir in eggs, banana, yogurt and lime juice. Add salt, ginger and coconut. Mix well.
  • In a separate bowl, sift together dry ingredients. Add to the wet mixture and mix until smooth. Pour into loaf pan.
  • Bake 1 hour or until done. Cool for 10 minute.
  • Meanwhile, make the glaze. Combine the brown sugar, butter, rum and lime juice in a small saucepan over low heat, stirring constantly for about 5 minutes or until it becomes a thin syrup.
  • Pour over the cooled loaf and sprinkle with toasted coconut.

2 tablespoons (1/4 stick) unsalted butter
2 tablespoons honey
2 tablespoons golden brown sugar
1 tablespoon fresh lime juice
1/2 vanilla bean, split lengthwise
5 1/2-inch-thick rounds peeled cored pineapple
2 medium bananas, peeled

Steps:

  • Place butter, honey, brown sugar, and lime juice in small saucepan. Scrape in seeds from vanilla bean; add bean. Bring to simmer over medium heat, whisking until smooth. DO AHEAD Can be made 2 days ahead. Cover and refrigerate. Remove vanilla bean and rewarm sauce before using.
  • Prepare barbecue (medium-high heat). Brush both sides of pineapple with some sauce. Grill 1 minute per side. Transfer to plate; cut into 1/2-inch cubes and place in large bowl, leaving juices behind. Mix remaining sauce into pineapple. Cut bananas into 1/2-inch chunks; fold into pineapple mixture.

1 whole head garlic, separated into individual unpeeled cloves
2 tablespoons (30ml) lard or vegetable oil
1/4 cup achiote (annatto) seeds (1 1/2 ounces; 40g)
2 tablespoons (about 6g) Mexican oregano
3 whole cloves
1 (3-inch) Ceylon cinnamon stick, or a 1.5-inch piece of cassia cinnamon (see note)
2 tablespoons (about 8g) whole black peppercorns
1 tablespoon (about 4g) whole cumin seed
1 tablespoon (about 4g) whole allspice berries
3/4 cup (175ml) bitter (Seville) orange juice, or 1/4 cup (60ml) each lime, orange, and grapefruit juice
1/4 cup (60ml) white vinegar
1 tablespoon (15ml) soy sauce
Kosher salt
For the Pork:
4 pounds (1.8kg) boneless pork shoulder or 6 pounds (2.7kg) bone-in pork shoulder, cut into 2-inch-thick slabs
6 to 8 banana leaves (see note)
2 Roma tomatoes, sliced
1 red or green bell pepper, sliced
1 white onion, sliced
12 bay leaves

Steps:

  • Light 3/4 chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange coals on one side of charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Alternatively, set half the burners on a gas grill to medium-high, cover, and preheat for 10 minutes.
  • Remove pork from grill and transfer parcels to a deep platter or shallow bowl. Unwrap banana leaves, shred pork with two forks, stir it into drippings, stuff it into tortillas with pickled red onions and salsa, and serve immediately.

2 tablespoons mayonnaise
1/2 cup plain yogurt
1 tablespoon Dijon mustard
4 tablespoons lime juice
2 dashes Tabasco sauce, to taste
1 teaspoon chopped green onion
1 clove garlic, minced
salt
pepper
1 tablespoon honey, to taste

Steps:

  • Make sure your bananas are ripe for this marinade.
  • Green bananas won't work well at all.
  • Peel bananas and put into the food processor, puree until smooth.
  • Add the mayonnaise, yogurt, mustard, lime juice, tabasco, garlic, and green onion, and continue blending until thoroughly mixed.
  • Transfer to a small bowl add honey, salt and pepper to taste and refrigerate until ready to use as marinade.
  • You can make this up to eight hours in advance.
  • Keep it tightly covered in the refrigerator.
  • Good as a marinade for grilled shrimp, fish, and chicken!

1/2 teaspoon coarse salt (kosher or sea), or to taste
4 strips of lemon zest
3 cloves garlic, crushed with the side of a cleaver or minced
1/4 cup coarsely chopped fresh parsley
1/4 cup coarsely chopped fresh basil, cilantro, dill, oregano, or a mix of all four
1/2 cup extra virgin olive oil

Steps:

  • Combine the lemon juice, hot pepper flakes, cracked pepper, and salt in a nonreactive (glass, ceramic, or stainless steel) bowl and whisk until the salt crystals are dissolved. Add the lemon zest, garlic, parsley and basil. Stir or whisk in the olive oil. The virtue of this marinade is its freshness: Use it within 1 to 2 hours of making. Stir again before using.
