1 cup low-sodium soy sauce
1/2 cup extra-virgin olive oil
4 limes, juiced
1 red chile, halved
1 (1-inch) piece fresh ginger, halved
1/4 cup chopped fresh cilantro leaves
2 limes, halved
1/4 cup low-sodium soy sauce
2 red chiles, chopped
1 (2-inch) piece ginger, sliced thick
1/2 bunch fresh cilantro
1/2 bunch fresh mint
Kosher salt and freshly ground black pepper
1 (4-pound) whole salmon, cleaned and scaled
1 large banana leaf

Steps:

  • Make the dipping sauce: Combine all the ingredients in a bowl. Let it sit for the flavors to develop while the fish cooks.
  • Preheat the grill. Squeeze the lime juice into a large bowl and throw in the halves. Add the soy sauce, chiles, ginger, cilantro, and mint; season with salt and pepper and give it a good stir. Place the salmon in the center of the banana leaf and stuff it with the lime juice mixture. Fold the banana leaf over the fish to completely encase it and tie closed with kitchen string. Place onto a medium-hot grill. Cook until the fish is cooked through, about 35 to 40 minutes. Serve with the dipping sauce.

Garlic-Black Pepper Lobster with Lemon Grass Fried Rice image

3 (1 to 2 pound) lobsters, head off, claws cut in half, tail cut into 4 or 5 medallions (shell on)
20 garlic cloves, thinly sliced
2 cups sliced scallions (save 1/4 cup of sliced green scallions for garnish)
2 tablespoons ground black pepper, medium ground
2 cups white wine
2 cups chicken stock
1/4 cup fish sauce
4 tablespoons butter
Salt, to taste
Canola oil, to cook

1 finely diced yellow onion
1/2 tablespoon minced garlic
1/2 tablespoon minced ginger
3 stalks lemon grass, minced, white part only
4 cups cooked jasmine rice
1 lemon, juiced
Salt, to taste

Steps:

  • In a large, hot saute pan coated well with oil, saute the lobster. Add the garlic, scallions, and black pepper. Deglaze with wine and add chicken stock and fish sauce. Add butter and check for seasoning.
  • Lemon grass fried rice: In a saucepan on high heat coated with oil, sweat the onions, garlic, ginger and lemon grass. Season. Add the rice and saute the rice for 3 to 5 minutes until hot. Add lemon juice and check for seasoning.
  • PLATING On a large dinner plate, mold a mound of rice in the middle and top with lobster. Garnish with sliced scallions.
  • WINE: Fruity Alsatian Riesling, not bone dry like Trimbach, Hugel. We used Gunderloch, Riesling

1 cup apple cider vinegar
1/4 cup fine sugar
6 to 8 black peppercorns
Kosher salt
1 small beet, peeled and sliced
1 red onion, halved and thinly sliced into half-moons
2 oranges, zested and juiced
2 tablespoons extra-virgin olive oil
2 teaspoons ground achiote
1 teaspoon ground cumin
Four 6-ounce center-cut Chilean seabass filets
8 large banana leaves, thawed if frozen or soaked in water, cut into large, wide strips
Kosher salt and freshly ground black pepper
1/4 cup thinly sliced scallions
Cilantro, for serving
Spicy Grilled Corn Salsa, recipe follows
4 ears corn, husks removed
2 poblano peppers, seeded and stemmed
4 fresno chiles, seeded and stemmed
2 tablespoons olive oil, plus more for brushing
Kosher salt and freshly ground black pepper
3/4 cup finely diced red onion
1/4 cup thin, bias-sliced scallions
1 lime, zested and juiced
1 lime, zested and juiced
2 cloves garlic, minced
1 teaspoon agave

Steps:

  • For the pickled red onions: In a medium saucepan over high heat, add the vinegar, sugar, peppercorns and 2 tablespoons salt. Mix well and add the beets and onions. Once it comes to a boil, stir to dissolve the sugar and salt then remove from the heat. Allow to cool then cover and refrigerate at least 1 hour and up to overnight.
  • For the grouper: In a small bowl, add the orange zest, juice, olive oil, ground achiote and cumin. Mix well to combine, then pour the marinade into a large resealable plastic bag. Add the grouper filets and seal the bag tightly, squeezing out any excess air from the bag. Gently mix around so the marinade coats the fish well. Refrigerate for 45 minutes.
  • Clean the grill grates and preheat a grill to medium-high heat.
  • Arrange 2 banana leaves to form a cross. Remove one piece of grouper from the marinade and place in the center of the leaves. Season with 4 to 5 turns freshly ground black pepper and 1 teaspoon salt. Wrap the fish up tightly in the banana leaves by folding over one flap at a time, alternating each side so they overlap. Secure the last folds of the leaves together with toothpicks to hold in place. Place the banana leaf-wrapped grouper on the grill, and cook until the leaves turn bright green and begin to char around the edges, 5 to 6 minutes per side. Remove from the grill and set aside.
  • To serve, cut open the banana leaves to expose the fish, add a large spoonful of Spicy Grilled Corn Salsa and garnish with the pickled red onions, chopped scallions and cilantro.
  • Preheat a grill to medium-high heat.
  • Place the corn on the grill and cook until well charred all over, 5 to 6 minutes per side. Drizzle the poblanos and fresnos with olive oil and season with 5 to 6 turns freshly ground black pepper and 1 teaspoon salt. Place the chilies on the grill and cook until lightly charred on all sides, 3 to 4 minutes. Place the chiles into a bowl, cover tightly with plastic wrap and allow to steam for 3 to 4 minutes.
  • Hold a corn cob upright in a large mixing bowl. Using a chef's knife, cut off the kernels and let them fall into the bowl. Repeat with the remaining corn. Set aside the kernels. Discard the cobs.
  • Remove the skins from the chiles. Mince the fresnos, dice the poblanos and add them to the bowl with the corn kernels. Add the red onions, scallions, lime zest, juice, garlic, agave and 2 tablespoons olive oil. Stir to combine and season with salt and pepper. Refrigerate until ready to serve.

3 Pea Fried Rice image

1 tablespoon minced garlic
1 tablespoon minced ginger
4 cups cooked long grain rice, usually day old
3 eggs scrambled
2 tablespoons chive batons
1 cup blanched English peas
Salt and pepper to taste
1 cup blanched snow peas
1 cup blanched snap peas
Citrus Vinaigrette (recipe follows)
Juice of 1 lemon
Juice of 1 lime
Juice of 1 orange
1/4 cup extra virgin olive oil
Salt and black pepper to taste

Steps:

  • In a wok, coat with canola oil and add garlic and ginger. Cook until soft and add rice. Mix well then add eggs, chives and English peas. Heat thoroughly. Check for seasoning. Toss snow and snap peas with vinaigrette. Check for seasoning.
  • Mix all ingredients well.

SCALLION-GINGER FRIED RICE

3 bunches scallions
2 1/2 cups fresh bean sprouts
For seasoning liquid
3 tablespoons chicken broth
1 tablespoon soy sauce
1 1/2 teaspoons Asian sesame oil
1 1/4 teaspoons salt, or to taste
1/4 teaspoon freshly ground black pepper
5 cups chilledChinese-style white rice
2 tablespoons corn or safflower oil
3 tablespoons minced peeled fresh gingerroot
1/3 cup Chinese rice wine or sake

Steps:

  • Finely chop enough scallions to measure about 3 cups. Rinse bean sprouts and trim stringy root ends if desired.
  • Make seasoning liquid:
  • In a small bowl stir together seasoning liquid ingredients.
  • Spread rice in a shallow baking pan and separate grains with a fork.
  • In a deep 12-inch heavy non-stick skillet heat corn or safflower oil over moderately high heat until hot but not smoking and stir-fry scallions and gingerroot until fragrant, about 20 seconds. Add bean sprouts and rice wine or sake and stir-fry until sprouts begin to soften, about 1 minute. Add rice and cook, stirring frequently, 2 to 3 minutes, or until heated through. Stir seasoning liquid and add to fried rice, tossing to coat evenly.
