It's a winning combo and leaves the outside of these bananas perfectly golden and crisp.

1 cup roasted (salted peanuts)
1 1/2 cup granulated sugar
2 teaspoons ground cinnamon
8 ounces semi-sweet chocolate (chopped (use dark or vegan chocolate for vegan version))
1/2 cup full-fat canned coconut milk
1/2 teaspoon ancho chili powder (may leave out if desired)
1/4 teaspoon cinnamon
1 teaspoon vanilla extract
1 cup flour (use your favorite gluten flour if needed)
1/3 cup rice flour (can sub with regular flour)
2 teaspoons baking powder
1/2 cup canned coconut milk
1 cup Mexican beer
6 firm (but ripe bananas)
zest of 2 limes + more for serving (optional)
canola oil (for frying)

Steps:

  • Add the peanuts and 1/2 cup sugar to a food processor or blender. Blend until finely ground and the peanut become powder like. Be careful not to blend the peanuts into peanut butter. Stir (meaning do not blend, just use a spoon) in the remaining cup of sugar and the cinnamon. Transfer to a jar. The sugar can be kept at room temperature for up to 1 week.
  • Add the coconut milk to a small sauce pan and bring to a low boil. Remove from heat and stir in the chocolate until melted and smooth. Stir in the ancho chili powder, cinnamon and vanilla. To rewarm the sauce before serving, just place over low heat for about minutes. Just be careful not to burn it.
  • In shallow, but wide bowl, combine the flour, rice flour and baking powder. Stir in the coconut milk and beer. If the batter seems thick, just add more beer to thin. It should be thick, but pourable.
  • Heat a large pot of oil over medium heat. Stick a bamboo skewer through the middle of each banana. Dip the bananas one at a time through the batter until evenly coated, then carefully lower into the hot oil. Fry for 2-3 minutes on each side, until golden crisp. Using a slotted spoon, remove the fritters and drain on to paper towels. Repeat with the remaining bananas and then sprinkle the fritters with lime zest if desired.
  • When ready to serve, dust the fritters with peanut sugar and serve with warm chocolate sauce and lime wedges.

½ cup milk
2 bananas, mashed
2 cups all-purpose flour
½ teaspoon salt
3 teaspoons baking powder
2 eggs, beaten
1 tablespoon margarine, melted
1 quart vegetable oil for frying
½ cup confectioners' sugar

Steps:

  • In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
  • Heat the oil in a large skillet to 365 degrees F (180 degrees C).
  • Carefully place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with confectioners' sugar and serve while warm.

Elvis goes to the county fair, when his favorite flavor combination is deep-fried and served on a stick.

Vegetable oil, for frying
8 slices bacon (not thick-cut)
1/3 cup creamy peanut butter
4 bananas, peeled and halved crosswise
1 1/4 cups cake flour, plus more for dredging
2 tablespoons confectioners' sugar
Pinch kosher salt
1 cup very cold seltzer
Honey, for drizzling

Steps:

  • Heat 2 inches vegetable oil to 370 degrees F in a Dutch oven over medium-high heat.
  • Meanwhile, cook the bacon in a skillet over medium-high heat until the fat is rendered but the bacon is still pliable (don't get it too crisp), 4 to 5 minutes. Drain on paper towels. Let cool.
  • Spread one side of each bacon slice with peanut butter. Wrap each slice around a banana piece, peanut butter-side facing the banana, pressing to adhere.
  • Spread some cake flour in a shallow bowl for dredging. Whisk the cake flour, confectioners' sugar and salt in a medium bowl. Whisk in the seltzer, taking care not to overmix (a few small lumps are fine).
  • Dredge half of the bananas in the flour, then dip in the batter and carefully add to the hot oil. Fry in 2 batches until crisp and golden brown, flipping halfway through, 3 to 4 minutes. Drain on paper towels and repeat with the remaining bananas. Insert skewers into the bananas. Drizzle with honey and serve immediately.

Soon after I made these fritters for the first time, my husband began requesting them on a regular basis. I also like to serve them to overnight guests as a sweet breakfast treat.

2 eggs
1/2 cup milk
1 teaspoon canola oil
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
4 large firm bananas
Additonal oil for deep-fat frying
Confectioners' sugar, optional

Steps:

  • In a bowl, beat eggs, milk and oil. Combine flour, baking powder and salt; stir into egg mixture until smooth. Cut bananas into quarters (about 2 in. long). Dip each banana piece into batter to coat. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry banana pieces, two to three at a time, until golden brown. , Drain on paper towels. Dust with confectioners' sugar if desired.
