1 cup sugar
4 eggs
1 egg white
1 cup water
1 can (14 oz) sweetened condensed milk
1 cup mashed ripe bananas
1 teaspoon vanilla
1/8 teaspoon salt
Fresh banana slices, if desired

Steps:

  • Heat oven to 350°F. In 10-inch skillet, cook sugar over medium-high heat, stirring frequently, until melted and light caramel in color. Pour into 10 (6-oz) custard cups. Place on cooling rack to cool.
  • Meanwhile, in medium bowl, beat eggs and egg white with electric mixer on medium speed or whisk until well blended. Stir in water, condensed milk, bananas, vanilla and salt. Pour over sugar mixture in custard cups. Place in two 13x9-inch pans. Carefully pour very hot water into each pan until about halfway up sides of custard cups.
  • Bake 50 to 60 minutes or until knife inserted in center comes out clean. Carefully remove cups from water. Cool 30 minutes. Cover and refrigerate. Chill 3 to 8 hours. To unmold, run knife around edge of custard to loosen; turn upside down onto serving plate. Garnish with remaining ingredients.

3 whole eggs
3 egg yolks
1/4 cup sugar
1 teaspoon freshly squeezed lemon juice
1/2 cup heavy cream
1/2 cup sweetened condensed milk
1 cup milk
2 medium-size ripe bananas, peeled and sliced
1 tablespoon white rum
1 tablespoon banana liqueur (optional)
1 teaspoon vanilla extract
Oil for greasing custard cups
1 10-ounce package frozen raspberries in light syrup, thawed
3 tablespoons sugar
2 tablespoons dry white wine or water
12 fresh raspberries
4 mint leaves

Steps:

  • Preheat the oven to 350 degrees.
  • In a large bowl, beat the whole eggs, egg yolk and sugar together with a wire whisk. Add the lemon juice, heavy cream and sweetened condensed milk and combine well.
  • Put the bananas and milk into the container of a food processor fitted with a steel blade, or into a blender, and puree. Add this to the egg-and-sugar mixture in the bowl. Then add the rum, banana liqueur (if used) and the vanilla extract. Mix thoroughly.
  • Lightly grease each of four 10-ounce custard cups. Pour the flan mixture in equal amounts into the cups.
  • Put the cups into a baking pan with three-inch sides. Pour warm water into the pan until it reaches halfway up the side of the cups.
  • Cook in the oven for about 30 minutes, or until the custard is set. (The custard is done when the thin blade of a knife comes out clean after being inserted into the center of the flan.)
  • Meanwhile, prepare the raspberry puree. In a food processor or blender, puree the thawed raspberries with their syrup. Strain through a fine sieve and mix in the sugar and wine. Set aside.
  • When the flans are cooked, remove them from the water and let rest for five minutes.
  • To serve the flan warm, invert each custard cup onto a dessert plate and shake once to release. Spoon equal amounts of the raspberry sauce around each flan. Garnish the top of each with three raspberries and a mint leaf. To serve the flans cold, let them cool for 30 minutes, cover and refrigerate for several hours. Cover the raspberry sauce and chill as well. At serving time, assemble the dish as described above.

Banana Chocolate Wrap With Easy Raspberry Sauce - Toasted image

Decadent enough for dessert, but surprisingly low in calories and easy to make with a raspberry jam sauce! This wrap is warm and gooey and features reduced-fat cream cheese (Neufchatel). Totally customizable based on your tastes - sometimes I make this with banana, Nutella and peanut butter, or you can use a different flavor of jam. This recipe makes one wrap - make one per person if using as a dessert or side, or (my preference) eat two for a full breakfast or lunch. If you use thin tortillas, these are reminiscent of filled crepes.

1 flour tortilla, 6 to 8 inches (I use whole wheat)
1 1/2 teaspoons chocolate hazelnut spread (Nutella, may substitute with chocolate chips)
1/2 ounce reduced-fat cream cheese (Neufchatel)
1/4 banana, medium size
1 tablespoon raspberry jam, seedless
1/4 tablespoon butter or 1/4 tablespoon margarine

Steps:

  • Leaving about 1 1/2 inches uncovered around the edges, spread cream cheese thickly in the center of the tortilla. Top with Nutella and banana slices.
  • Roll tortilla burrito-style, folding in the sides and then rolling up.
  • Melt butter or margarine in a small frying pan over medium-high heat. Place wrap in pan, seam side down, and reduce heat to low.
  • Check wrap often to make sure it doesn't burn. When it is golden brown on each side, turn it. I brown mine on four sides.
  • When wrap is done, remove from heat and cover the pan while you prepare the sauce - this will help the cream cheese continue to melt.
  • Heat jam in a small, microwave-safe bowl in the microwave on half power for 30-45 seconds or until hot and melted. Be careful not to burn yourself when handling it!
  • To serve, place wrap on a plate and pour sauce over it. You can garnish with a dollop of whipped cream and/or fresh raspberries to make it extra special.

1/2 cup water
6 eggs
6 egg yolks
2 tablespoons vanilla
2 cups whipping cream
2 1/2 cups milk

Steps:

  • Preheat oven to 325°F.
  • In a saucepan over low heat combine 2 cups sugar and 1/2 cup water, stirring until sugar dissolves. Increase heat to high and boil without stirring until sugar caramelizes, swirling pan occasionally. Immediately pour into 2 (9-inch) pie dishes. Turn dishes, so bottom and sides are coated. Set aside.
  • In a large bowl whisk together eggs, egg yolks and vanilla.
  • Stir in whipping cream, milk and 1 1/2 cups sugar.
  • Divide mixture among pie dishes.
  • Place pie pans in a heavy baking pan, adding enough hot water to come up halfway up sides of pie dishes.
  • Bake for 50-60 minutes or until knife inserted in center comes clean. Remove custards from water and cool. Refrigerate overnight (*can be prepared up to 2 days ahead.).
  • Invert custards on platters; sprinkle with raspberries to serve.

This flan has a cake-like texture & can be eaten warm or cold & dressed up with cream, ice cream & additional fresh berries. Can use berries other than raspberries, or a combination of berries is also good. HAPPY BAKING & EATING!

half c sour cream
12 oz butter golden or madeira cake mix
11 oz frozen raspberries

Steps:

  • 1. Lightly grease an 8 inch flan dish.
  • 2. Beat cake mix, sour cream & eggs together till thick & creamy. Mixture will be quite thick.
  • 3. Fold in frozen raspberries. Do NOT defrost before adding.
  • 4. Spoon into flan dish & bake @ 350 degrees for 30-40 minutes, until set & golden on top.

3/4 cup sugar
Custard

2 3/4 cups liquid nondairy creamer
6 large egg yolks
1 tablespoon grated lemon peel
1 teaspoon fresh lemon juice
6 tablespoons (3/4 stick) unsalted pareve margarine, diced
Cake
3 tablespoons frozen orange juice concentrate, thawed
1 tablespoon fresh lemon juice
1 tablespoon grated orange peel
1 tablespoon grated lemon peel
1/2 cup matzo cake meal
1/2 cup potato starch
8 large eggs, separated
1 1/2 cups sugar
1/2 teaspoon coarse salt
6 ripe bananas, peeled, thinly sliced
Fresh mint sprigs (optional)
Lemon twists (optional)
Additional banana slices (optional)

Steps:

  • For sauce:
  • Combine raspberries and their juices and sugar in blender. Puree until sugar dissolves. Strain sauce into bowl. Cover and refrigerate.
  • For custard:
  • Combine sugar and potato starch in heavy large saucepan; whisk to blend. Gradually add nondairy creamer, whisking until well blended. Whisk in egg yolks, lemon peel and lemon juice. Add margarine. Whisk over medium-high heat until custard is thick and smooth and just begins to bubble, about 9 minutes. Transfer to bowl. Refrigerate uncovered until cold, about 4 hours; then cover and keep chilled.
  • For cake:
  • Preheat oven to 350°F. Combine orange juice concentrate, lemon juice and both peels in small bowl; whisk to blend. Combine cake meal and potato starch in medium bowl; whisk to blend.
  • Using handheld electric mixer, beat egg yolks and 3/4 cup sugar in large bowl until thick about 1 minute. Beat in orange concentrate mixture, then dry ingredients. Using clean dry beaters, beat whites and salt in another large bowl until soft peaks form. Gradually add remaining 3/4 cup sugar, beating until stiff but not dry. Fold whites into yolk mixture in 3 additions.
  • Transfer batter to ungreased 10-inch-diameter angel food cake pan with 4-inch-high sides. Bake cake until golden brown and tester inserted near center comes out clean, about 40 minutes. Immediately invert center tube of cake pan onto narrow-neck bottle. Cool cake completely. (Sauce, custard and cake can be made 1 day ahead. Keep sauce and custard chilled. Cover cake in pan; store at room temperature.)
  • Cut cake from pan. Cut cake into twelve 1-inch-thick slices (reserve remaining for another use.) Trim crusts. Cut each slice into 6 squares. Place 3 banana slices in each of twelve 1- to 1 1/4-cup stemmed glasses. Spoon 1 tablespoon sauce over. Top with 3 cake pieces, 2 tablespoons custard, 4 banana slices and 1 1/2 tablespoons sauce. Repeat layering with cake, custard, banana and sauce. Garnish with mint, lemon and additional banana slices, if desired. Chill up to 6 hours.

A patient at the doctor's office where I work brought in this bread one morning while it was still warm. It was so good I made sure to get the recipe.

  • Preheat oven to 350°. In a large bowl, combine the flour, sugar, baking soda and salt. In another bowl, combine the eggs, bananas, oil and water. 1 (18.25 ounce) package spice cake mix
3 eggs
⅓ cup vegetable oil
⅓ cup water
1 cup mashed banana
½ teaspoon almond extract

1 (12 fluid ounce) can evaporated milk

½ cup milk
1 (8 ounce) package cream cheese, softened
1 teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 12-cup fluted tube pan (such as Bundt®) with cooking spray. Pour 11 ounces caramel topping into prepared pan. Spray a sheet of aluminum foil with cooking spray.
  • Beat cake mix, 3 eggs, oil, and water together in a bowl with an electric mixer on low speed for 30 seconds; increase speed to medium and beat for 2 minutes more, occasionally scraping down the sides of the bowl. Mix banana and 1/2 teaspoon almond extract into batter; pour batter into the prepared pan.
  • Beat sweetened condensed milk, evaporated milk, 5 eggs, milk, cream cheese, and 1 teaspoon almond extract together in a bowl using an electric mixer until smooth; pour over cake batter. Cover fluted tube pan tightly with prepared aluminum foil, sprayed-side down. Set fluted tube pan into a large baking dish and fill baking dish with about 2 inches of water, creating a water bath.
  • Bake in the preheated oven for 2 hours. Remove fluted tube pan from water and allow to cool for 15 minutes. Remove aluminum foil and invert cake onto a serving dish. The caramel topping should flow down the sides of cake.

We thought this recipe was was worth the price of the set of books!EDIT:After the 1* review I eliminated some of the lemon juice. The original recipe called for 1 tsp. of lemon juice in the caramel and 3 tsp. in the flan. The banana gives this flan some texture.

1/2 cup sugar, plus
1/3 cup sugar
2 teaspoons fresh lemon juice
1 cup milk
2 eggs
1 tablespoon dark rum
1 teaspoon pure vanilla extract
1/4 teaspoon ground cardamom or 1/4 teaspoon cinnamon
2 -3 bananas, pureed to equal 1 cup
2 bananas, peeled and diagonally sliced (optional)

Steps:

  • Preheat the oven to 325°F.
  • Begin by caramelizing a 1-quart souffle dish or a 6-inch-diameter cake pan; In a small heavy-bottomed saucepan, combine 1/2 cup of the sugar, and 3 tablespoons of water. Cook the mixture over medium-high heat until the sugar caramelizes-it will have a rich golden-brown hue. Immediately remove the saucepan from the heat. Working quickly, pour the caramel into the souffle dish or cake pan. Using potholders to protect your hands, tilt the dish in all directions to coat the bottom and about one inch of the adjacent sides. Continue tilting the dish until the caramel has hardened, then set the dish aside.
  • To prepare the custard, put the milk into a heavy-bottomed saucepan over medium heat. As soon as the milk reaches a boil, remove the pan from the heat and set it aside. In a bowl, whisk together the eggs and the remaining 1/3 cup sugar, then stir in the rum, vanilla, cardamom or cinnamon, banana puree, and the remaining 2 teaspoons of lemon juice. Stirring constantly to avoid curdling the eggs, pour the hot milk into the banana mixture. Transfer the custard to the caramelized dish.
  • Set the custard dish in a small roasting pan and pour enough hot tap water into the pan to come 1 inch up the sides of the custard dish. Bake the flan until a knife inserted in the center comes out clean-20 to 30 minutes. (Take care not to insert the knife so deep that it pierces the caramel coating.) Remove the flan from the hot-water bath and let it cool to room temperature. Put the flan into the refrigerator until it is chilled- about 3 hours.
  • To unmold the chilled flan, invert a serving plate over the top of the dish, then turn both over together. The dish should lift away easily; if it does not, turn the dish right side up again and run a small sharp knife around the top of the custard to loosen it. If you like garnish the flan with a ring of banana slices. Cut the flan into wedges and spoon some of the caramel sauce over each one before serving.
