1 cup butter, softened
1 cup sugar
1 medium banana, cut into 1/4-inch slices
1 teaspoon vanilla extract
2-1/3 cups all-purpose flour
1/4 teaspoon salt
1/2 cup chopped salted peanuts
FROSTING:
3 cups confectioners' sugar
3 tablespoons creamy peanut butter
2 tablespoons butter, softened
1 teaspoon vanilla extract
3 to 4 tablespoons 2% milk

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in banana and vanilla. In another bowl, whisk flour and salt; gradually beat into creamed mixture. Stir in peanuts. Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 30 minutes or until firm enough to roll., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 2-in. round cookie cutter. Place 1 in. apart on ungreased baking sheets. Bake 10-12 minutes or until edges are light brown. Remove from pans to wire racks to cool completely., In a small bowl, beat confectioners' sugar, peanut butter, butter, vanilla and enough milk to reach spreading consistency. Drop a heaping teaspoon in the center of half of the cookies; press remaining cookies on top to spread frosting., To Make Ahead: Dough can be made 2 days in advance. Wrap in plastic and place in a resealable bag. Store in the refrigerator., Freeze option: Freeze plain cookies in freezer containers. To use, thaw in covered containers and prepare as directed.

1 pound chocolate chip cookie dough (recommended: Nestle Toll House)
1 1/2 cups semisweet chocolate chips
1 teaspoon peanut or vegetable oil
2 (1 1/2 ounces) chocolate-toffee candy bars, chopped into 1/4-inch pieces (recommended: Skor)
2 medium bananas, peeled and sliced into 1/4-inch rounds
1 pint vanilla or banana ice cream, softened

Steps:

  • Place an oven rack in the center of the oven. Preheat the oven to 325 degrees F.
  • Form the cookie dough into 12 equal-sized balls and place on an ungreased baking sheet. Bake for 16 to 18 minutes until lightly browned around the edges. Cool for 10 minutes. Transfer the cookies to a wire rack to cool completely, about 20 minutes.
  • In a small bowl, toss together the chocolate chips and oil. Place the bowl over a pan of simmering water and stir until the chocolate has melted and the mixture is smooth, about 3 to 5 minutes.
  • Spread the melted chocolate on top of 6 of the cooled cookies. Place on a parchment or waxed paper-lined baking sheet. Sprinkle the chocolate-toffee candy pieces on top of the melted chocolate. Place the remaining cookies, flat-side-up, on the same baking sheet. Arrange the banana slices in a single layer on the flat side of the remaining cookies. Freeze all the cookies for 45 to 60 minutes until the chocolate has set and the banana slices are frozen.
  • Using an ice cream scoop, scoop about 1/3 cup softened ice cream on top of the frozen bananas. Place a chocolate covered cookie on top and gently press to form a sandwich. Repeat with the remaining ice cream and cookies. Freeze for 3 to 4 hours until firm.

3/4 cup all-purpose flour
1/2 cup granulated sugar
1/4 cup Dutch-process cocoa powder
1/4 teaspoon baking soda
4 tablespoons unsalted butter, melted
2 tablespoons milk
1 large egg yolk
4 tablespoons unsalted butter, at room temperature
2 tablespoons vegetable shortening
3/4 cup confectioners' sugar
1/2 teaspoon banana extract
1/4 teaspoon pure vanilla extract
1 firm but ripe banana
1 pound bittersweet chocolate chips
3 teaspoons vegetable shortening

Steps:

  • For the cookies: Sift the flour, granulated sugar, cocoa powder and baking soda together in a medium mixing bowl and set aside. Whisk the butter, milk and egg yolk together in a separate bowl until uniform in color and texture. Add the butter mixture to the flour mixture and stir until it forms a dough. Divide the dough in half and place each half onto a sheet of plastic wrap or parchment paper. Form into two logs about 1 to 1 1/2 inches in diameter. Refrigerate for at least 4 hours to overnight.
  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • Remove one dough log at a time from the refrigerator. Slice into 1/4-inch-thick slices and place onto the baking sheets. Bake until firm and set, 8 to 10 minutes. Set aside on a rack to cool. Repeat with the second log.
  • For the banana filling: Add the butter and shortening to a small bowl and beat with an electric mixer on medium speed until combined, about 1 1/2 minutes. Reduce the speed to low and add the confectioners' sugar in two batches. Add the extracts and mix until combined; set aside.
  • Slice the banana into 3 dozen 1/8-inch-thick slices.
  • To assemble the cookies: Place a heaping 1/2 teaspoon filling on each cookie. Place a banana slice on the filling, making sure it does not overlap the edge, and then cover with another cookie and press down gently.
  • For the bittersweet ganache: Pour a couple inches of water into the saucepan and heat over medium-low heat to just below a simmer. Put the chocolate and shortening in a metal bowl and place over the hot water to melt, stirring often. If the water starts to steam too much, remove the bowl from the pan to avoid scorching the chocolate. When fully melted, remove from the heat, leaving the bowl of chocolate over the water. Using two forks, dip the sandwich cookies into the melted chocolate, turning gently to coat, and remove to wax paper. Allow to sit at room temperature until the chocolate is completely set, at least 2 hours.

1 c butter, softened
1/2` c sliced bananas
1 tsp pure vanilla extract
2 1/3 c all purpose flour
1/2 c chopped salted peanuts
granulated sugar
FILLING
4 c powdered sugar
1/3 c butter, softened
5 to 6 tablespoons milk
3 Tbsp unsweetened cocoa
1 tsp pure vanilla extract
1/4 tsp salt

Steps:

  • 1. Heat oven to 350 degrees In large mixing bowl, combine 1c sugar, butter, banana and vanilla. Beat at medium speed until light and fluffy. Add flour Beat at low speed until soft dough forms. Stir in peanuts
  • 2. Shape dough into 1 inch balls. Place balls 2 inches apart on ungreased cookie sheet. Flatten balls to 2 inches diameter circles using the bottom of a drinking glass, dipping glass in sugar to prevent sticking.
  • 3. Bake for 12 to 15 minutes or until golden brown. Cool completely.
  • 4. In medium mixing bowl, combine filling ingredients Beat at low speed until smooth. Spread about 2 teaspoons filling on bottom of half the cookies. Gently press the bottoms of remaining cookies against filling to form sandwiches.

Here's what you need: large bananas, vanilla, maple syrup, brownie mix, oil, water, graham crackers

3 large bananas
1 teaspoon vanilla
1 tablespoon maple syrup
1 box brownie mix
½ cup oil
1 cup water
6 graham crackers

Steps:

  • In a medium mixing bowl combine the brownie mix, oil and water. Mix well.
  • On a baking sheet, lay down a sheet of wax paper. Spoon on half the mixture, and spread out to be about ½ inch (1 cm) thick.
  • Press 6 gram crackers into the mixture. Cover with remaining brownie batter.
  • Bake at 350˚F (180˚C) for 15-20 minutes until a toothpick inserted comes out clean.
  • Let it cool before slicing out the graham crackers. (There will be leftover bits of brownie in between the slices to enjoy now! Mmmm. )
  • Freeze the rectangular slices for one hour.
  • Peel and slice 3 bananas before freezing.
  • In a blender, combine the bananas, vanilla, and maple syrup. Blend on high until creamy.
  • Use a bag to squeeze the filling onto the crust. Top with another crust.
  • Enjoy!

1 16.5-ounce log refrigerated chocolate chip cookie dough or two 16-ounce tubs pre-portioned chocolate chip cookie dough rounds
2 pints premium banana ice cream, slightly softened
2 ripe bananas, cut into very thin slices
1 11.5-ounce package bittersweet chocolate chips
1/4 cup vegetable oil
1 1/2 cups loose granola or English toffee bits (optional)

Steps:

  • Preheat oven to 350°F. If using dough log, cut into 20 equal-size rounds. Arrange sliced dough rounds (or 20 pre-portioned rounds) on 2 baking sheets, spacing evenly. Using fingertips, press each into 2 1/2-inch round. Bake cookies until golden, about 11 minutes for sliced rounds and 15 minutes for pre-portioned dough. Transfer to rack; cool.
  • Line baking sheet with foil; place in freezer. Place 1 cookie, flat side up, on work surface. Top with 1/3 cup ice cream; spread almost to edge. Top with single layer of bananas. Sandwich with another cookie; press gently to compact. Place on baking sheet in freezer. Repeat with remaining cookies, ice cream, and bananas. Freeze 2 hours. Using knife, smooth sides of ice cream sandwiches. Freeze 1 hour.
  • Place chocolate chips and oil in small glass bowl; microwave on medium-high until chocolate is melted, stopping occasionally to stir, about 1 1/2 minutes. Let stand just until cool, about 10 minutes.
  • Place granola or toffee (if using) on plate. Dip 1 ice cream sandwich halfway into melted chocolate; lift and quickly shake excess chocolate back into bowl. If desired, roll dipped edge in granola or toffee; return to baking sheet in freezer. Repeat with remaining sandwiches, chocolate, and granola or toffee. Freeze until firm, about 2 hours. DO AHEAD: Can be made 2 days ahead. Wrap each sandwich in foil; keep frozen.
