One sad overripe banana looking for a new lease of life and the remains of a carton of sour cream? That's how this recipe came together one morning. They're moist and flavoursome without the banana knocking your socks off. Enjoy!

Number Of Ingredients 11

3/4 cup flour
1/3 cup sugar
3/4 teaspoon baking powder
1/8 teaspoon salt
1/2 teaspoon cinnamon
1 large banana (mashed 1/2 cup)
1/2 teaspoon vanilla extract
1/2 large egg (lightly beaten)
1/4 cup butter (melted)
1/8 cup sour cream
1/4 cup semi-sweet chocolate chips (feel free to add more!)

Steps:

  • Preheat oven to Gas 4/180C350°F.
  • Prepare muffin tin with paper liners/spray with Pam.
  • Sift dry ingredients into a large bowl, whisk and set aside.
  • Melt butter in microwave.
  • Peel, chop and mash banana.
  • Lightly beat egg and add to banana, followed by sour cream, vanilla extract and finally melted butter. Whisk until smooth.
  • Add wet to dry mixture and gently combine ensuring not to overwork batter. Add chocolate chips.
  • Evenly distribute batter between six muffin cups, sprinkle with sugar.
  • Bake at Gas 4/350F/180C for 30 minutes until golden.

1 cup brown rice flour
1/2 cup potato starch
3 teaspoons baking powder (gluten-free)
1/2 teaspoon baking soda
1 teaspoon xanthan gum
2 teaspoons vegan egg replacer powder
1 teaspoon cinnamon
1/2 cup brown sugar
2 ripe bananas, mashed
1/2 cup canola oil
3/4 cup soymilk
1/4 cup silken tofu
1 teaspoon vanilla extract
1 cup chocolate chips (gluten and dairy-free)

Steps:

  • Sift brown rice flour, potato flour, baking powder, bi-carb, xanthan gum, egg replacer powder and cinnamon into a bowl. Add brown sugar. Using a whisk, mix well.
  • In a separate bowl beat together bananas, vegetable oil, soy milk, silken tofu and vanilla until smooth.
  • Add to dry ingredients. Mix until combined.
  • Stir in choc chips.
  • Spoon into greased muffin pans.
  • Bake for 30-35 minutes at 180ºC (350ºF).

I found this in a old issue of Delicious Mag, a great way to use up those crushed weetbix at the bottom of the box!

3 ripe bananas
4 Weet-Bix
185 ml milk
2 eggs
80 g margarine
225 g self-raising flour, sifted
2 tablespoons brown sugar
1 cup chocolate chips

Steps:

  • Preheat oven to 180°C.
  • Grease a 12-hole muffin pan. Mash bananas in a bowl, then crumble in Weet-Bix and stir in the milk.
  • Set aside for 10 minutes. Meanwhile, beat together the eggs and margarine, then add to the banana mixture. Combine flour and sugar in a large bowl and add wet ingredients and choc chips.
  • Stir until just combined, then spoon into muffin pan and bake for 25 minutes until a skewer inserted into the centre comes out clean.

60 g butter
2 cups self-raising flour
1/2 cup caster sugar
1/2 cup milk
2 eggs
2 ripe bananas, mashed
1 cup miniature chocolate chip

Steps:

  • Preheat oven to 200°C Line a medium muffin tray (12 sections) with paper cases. Melt butter in a small saucepan or heat-proof bowl in the microwave. Set aside to cool slightly.
  • Sift flour into a mixing bowl. Stir in sugar. Make a well in the centre of dry ingredients.
  • Using a whisk, lightly beat milk, eggs and butter in a jug. Add to dry ingredients, along with mashed banana. Using a wooden spoon, gently mix ingredients until just combined. Stir in choc bits. Don't beat the mixture or the muffins will be tough.
  • Spoon the mixture evenly into the muffin cases. Bake for 15-20 minutes or until firm on top when lightly touched. Leave in the tray for 3 minutes. Transfer the muffins to a rack to cool.
